Thanksgiving and Christmas dinner duties

11/23/23-

This year the inside of the turkey was still frozen when  it was time to cook it. So for 2 hours (10am-12pm) I cooked the turkey in an oven bag at 450 degrees and then the last hour turned it down to 350 and the turkey was cooked through and still turned out delicious.

We ate at 3pm, it was nice b/c Logan and I went and played frisbee and then had enough time to get dinner started at 10am. At 10 am katie started rolls, lily started potatoes, I started the turkey, dad started cutting onions and celery and chloe/luke helped set the table. I borrowed a table from jim lancaster and 5 chairs from Kathy Buswell.

Also I very much enjoyed after thanksgiving. We played this silly easy going game called Happy Salmon, then Spoons, then Dayna recommended the Prize Game Bingo. I found some random prizes- bath bomb, lotion, Meyers soap, glow in the dark toys, little sticky balls for luke and jen brought more fun prizes like oreos, the game operation, connect 4, Surprisingly everyone wanted to play b/c there were prizes involved. It actually turned out so much more fun than I expected.

Pressure cooking food and beans

Put water and dried beans in pressure cooker. Water lever 2-3inches above beans.
Put on the pressure cooking lid but don't lock. Get the water boiling. Takes 10-15min. After water is boiling take off lid and stir the beans, then lock the lid back on and start timing when the pressure steam starts coming out.
 The pressure cooker will take 15 to 20 minutes to come to full pressure before cooking begins.

BEANS

1- 20 min Dried Unsoaked Black beans (1/17/18 turned out really well and evenly cooked)
 soaked black beans probably 5 min at high pressure
2- 12 to 18 minutes Soaked garbonzo beans (tried this)
3- 35 to 40 minutes Unsoaked garbonzo beans (tried this)
4- Anasazi beans cook 25-29 minutes (2/10/25 tried this and worked well)
5- split eye pea beans
6- Light red kidney beans 40-45 minutes (40 minutes for more firm, 45 for more tender
Allow 8 minutes for the Instant Pot to pressurize before cooking begins) (3/16/25 tried this, I cooked them for 40 min and it probably needed 50ish minutes, maybe 55 min)
for 15 minutes- allow to naturally release

Crockpot mashed potatoes

I scrubbed and sliced the potatoes, I didn't peel them.
Put cut potatoes in container with water and put in fridge over nite.


OPTION 1-
In morning oil or butter the inside of the crockpot then add, water and potatoes to crockpot and boil for 4 hours on high, till potatoes are tender.

OPTION 2-
5lb bag of potatoes cook potatoes on stove for 25min, drain water.
After cooked-
add salt,
pepper,
sour cream(didnt have one time),
1/4 c butter, and
1/4-1/2c milk.

Puree with hand mixer in pot, Coat the inside of crockpot  with oil/butter, then add the whipped potatoes. Keep in crockpot on low for 4 hours.

12/26/2015 I did option 2, it worked out perfect.

Oven Fried Chicken

Amy said- Even my hubby mentioned without knowing where I got the recipe said, this tastes like KFC, but healthier!!!  Next time I think I'd like to dip the chicken in an egg then flour mixture and repeat.  Id like a little thicker breading.  Still successful tho !!

Serves: 3-6 servings, depending on amount of chicken used
INGREDIENTS
  • 3 chicken breasts, cut in strips (I get about 3 strips out of one breast)
  • 4-5 tbsp butter
  • 1 cup flour
  • ½ tsp salt
  • 1 tbsp seasoning salt (I use Lawry's)
  • ½ tsp pepper
  • 2 tsp paprika
INSTRUCTIONS
  1. Preheat oven to 400 degrees F. Place butter on a large baking sheet and place in the oven to melt.
  2. Combine all ingredients besides chicken in a large paper or ziploc bag. Add the chicken and shake to coat.
  3. Take your baking sheet out of the oven once the butter has melted and place your chicken on it, leaving a space between each strip. Bake 10-12 minutes, flip gently with a pair of tongs, and bake another 10-12 minutes.
  4. Be sure to check to make sure your chicken is cooked, as the thickness can greatly affect baking time. You want it to be done but not overdone and dry. Bake another 5-10 minutes if needed.
  5. Remove to a plate lined with paper towel to soak up any excess grease. Serve immediately.

Serve with Mashed potatoes or baked , corn on cob, or roasted broccoli, and salad or caesar salad

Made with 8 chicken thighs and dipped in 2 eggs then in the flour mixture. Dipped each thigh two times in egg and flour.  Cover cookie sheet pan with aluminum foil and spray with non stick spray, and cook for 35 minutes



From the chicken cooked juices....
1. to make a delicious oil and vinegar salad dressing for salad
2. use the juices to make gravy and the bones to make soup.
