Yellow Cake Mix to Chocolate cake mix

Confessions of a Baking Queen

1 - 15.25oz Box of Yellow Cake Mix (I didnt have chocolate)
1-3.9oz Box of Dry Vanilla Pudding Mix (I didnt have chocolate)
1/2 c Cocoa Powder
4 Large Eggs, at room temperature
6oz (¾ Cup) Vegetable Oil
6oz (¾ Cup) Sour Cream (or mayo or plain yogurt)
4oz (½ Cup) Buttermilk
1 Teaspoon Vanilla
4oz (½ Cup) Hot Coffee (I didnt have it)
85 grams (½ Cups) Mini Chocolate Chips, optional

  1. Preheat your oven to 350F/180C and spray two 8-inch or 9-inch round cake pans with non-stick baking spray, my preferences are Bakers Joy or Pam for Baking. Set the pans aside.
  2. In a large bowl mix together everything except the hot coffee and mini chocolate chips. Mix until fully combined, you want to make sure you mix well enough that there are no traces of egg left behind but you don't want to overmix the batter. Then mix in the hot coffee, it will thin the batter out then fold in the chocolate chips.
  3. Pour the cake batter evenly between the two prepared pans and bake. For 8-inch cakes I found they baked in the 25-30 minute mark as opposed to the longer times the cake box suggested.  Let the cake pans cool on a wire rack for 15 minutes before inverting the cake out directly onto a wire rack to cool completely. Then frost with your favorite frosting.

Logan Birthday

 Cinnamon and Coconut

Copycat Arctic Circle Lime Rickey
2 liter bottle of Sprite or 7UP
1-2 limes, cut into wedges
ice cubes
grape snow cone syrup (see recipe below)

Grape Snow Cone Syrup
2 cups white sugar
1 cup water
1 (0.14 oz.) package grape Kool-Aid flavored drink mix
(one person said just go buy Frozen grape juice and its so much better)

If you make the Snow cone Syrup-
1. In a saucepan, stir together the sugar and water. Bring to a boil and boil for about 1 minute. Remove from heat and stir in the drink mix. Allow to cool completely and store in a container for pouring.
2. Once the syrup has cooled, fill a glass with Sprite and add as much ice as desired. Pour 2-4 Tbsp. of grape syrup into the glass. Add more or less, depending on how much grape flavor you want. Squeeze a fresh lime wedge or two into the drink and throw the squeezed wedge into the drink for good measure.

Dad's Lyrics to Moana's "you're welcome"

 I see what's happening yeah.

You're face to face with daddy and it's strange.

You don't really know how to feel—it's adorable!

Well it's nice to see that children never change.

Turn off your iPod, let's begin,

Yes, it's really me, it's Daddy, breath it in!

I know it's a lot, you're amazed, you're awed!

When you're staring at all this Dad-bod.

What can I say except “You're welcome!”

For your house and all the food that I buy.

Hey it's okay, it's okay, you're welcome!

Please don't date any sleezy guys.

What has two thumbs and can tell when you lie

ever since you were waddling yay-high? This guy!

When the nights get cold who pays for the furnace

and shovels snow? You're looking at him, yo!

Oh! Also I put diapers on your bum—You're welcome—

Because you stunk. It wasn't fun.

Also I chased away those bees—you're welcome

and cleaned my shirt when you threw up pees

What can I say, except you're welcome.

For helping you climb that tree.

Hey it's okay it's okay, you're welcome,

for pulling over every five minutes so you can go pee

You're welcome, you're welcome!

Well, come to think of it...

Kids, honestly I could go on and on

all the times you barge in while I'm on the john

The taxes, the cleaning, tooting sounds

Oh, that was daddy just messing around .

I kiss your owies, bangage your cuts

don't get mad when you hit me in the nuts

What's the lesson, what is the takeaway?

I love you even when you make me go to ballet.

And these gray hairs and wrinkles on my skin,

come from 10 years of not sleeping in

Sometimes I wonder if you'll ever stop yappin

Or leave me alone when I'm on the couch nappin

What can I say except you're welcome!

And I don't mean to gloat

Hey it's okay it's okay, you're welcome

I love you  so much it makes me float

You're welcome! You're welcome!

And Thank you!

6T      3 tablespoons brown sugar
8         4 large eggs

  • This is a simple and quick dish to make- two pots- one for rice and one for chicken stock soup recipe.

  •  Rinse the rice in 3 to 4 changes of water until the rinse water is almost clear, and drain off the rinse water. Bring the rice and 4 cups of water to a boil in a saucepan over high heat. Reduce heat to medium-low, cover, and simmer until the rice is tender and the liquid has been absorbed, 20 to 25 minutes.

  • Place the chicken in a nonstick skillet with a lid, and cook and stir over medium heat until the chicken is no longer pink inside and beginning to brown, about 5 minutes. Stir in the onion, and cook and stir until the onion is soft, about 5 more minutes. Pour in the stock, and whisk in soy sauce, mirin, and brown sugar, stirring to dissolve the sugar. Bring the mixture to a boil, and let simmer until slightly reduced, about 10 minutes.
  • Whisk the eggs in a bowl until well-beaten, and pour over the chicken and stock. Cover the skillet, reduce heat, and allow to steam for about 5 minutes, until the egg is cooked. Remove from heat.

Logan Chili

1lb black beans rehydrated
1lb garbonzo beans (freeze half of the garbonzo beans for other uses)
1lb kidney beans
1 can corn
2 cans of crushed tomatoes (or 15 chopped tomatoes)
1-2 chopped sauteed onions
3T garlic
1T Chili powder
1 t cayenne powder
salt and pepper

Pressure cook the one pound beans one at a time.  They soften at different time frames.

I soaked the black beans so they went smooshy faster than I expected when I cooked them.  The Kidney beans weren't soaked and they cooked with in 5-7minutes, I was suprised how quick they cooked, I thought the kidneys would need more time b/c they are bigger beans.  The garbonzo beans weren't soaked either and they cooked for about 10 minutes.

Let everything cook for a couple hours.

I made alot so I could freeze some for future dinners.
