Coconut overnight oatmeal

From Plant Based Budget serves 6 people


2 cans of coconut milk (13 oz each)
3 c water or milk
1 t salt
1/4-1/2c sugar or honey
3 c old fashioned oats



I boiled the coconut milk, salt, honey, milk/water and then added the oats. Let sit overnight (8-10 hours) in the saucepan on the stove.

Reheat in the morning

Butter Chicken

3/4 cup unsalted butter (1/2 stick + 1 stick), divided
 1 large sweet Vidalia or yellow onion, diced small
 1.50 pounds boneless skinless chicken breast, diced into bite-sized pieces
 4 cloves garlic, finely minced or pressed
 2 tablespoons Curry powder
 1/2 tablespoon cumin
 2 tablespoon turmeric
 1 tablespoon ground ginger or 1+ tablespoon fresh ginger, finely chopped
 1 teaspoon kosher salt, or to taste
 1 teaspoon freshly ground black pepper, or to taste
 1/4 teaspoon cayenne pepper, or to taste
1 15oz coconut milk
 one 8-ounce salsa or tomato sauce
 basmati rice (or your favorite rice), for serving
Mayo and cream cheese
 1/3 cup fresh cilantro leaves, or to taste for garnishing
Because I didn't have the heavy cream I substituted and added at the last 5 minutes of cooking- 1/4 c mayo and 4 oz of cream cheese

2/5/20 When I made this it was so bitter and nasty, I thought, "Ohhhh no, all these ingredients are gona go in the garbage, how can I save this???" Then I added the mayo and cream cheese, all was not lost, I just needed to add heaps of FAT!!! Then it was of course yummy!!!

  1. Begin cooking the rice
  2. To a large skillet add 1/4 cup butter (1/2 stick), onion, and sauté over medium-high heat until the onions begins to soften and caramelize about 5 minutes; stir intermittently. It does not have to be fully caramelized before moving on.
  3. Add the chicken and cook for about 5 minutes, or until chicken is done; flip and stir often to ensure even cooking. Or pound the chicken thin and cook it without cutting it, sometimes if you cook a pounded flattened chicken, it is more tender than cutting it before you cook it.  Either way, whatever makes you happy.
  4. Add the garlic, stir to combine, and cook for about 1 minute, or until fragrant; stir frequently.
  5. Add the garam masala, cumin, turmeric, ginger, salt, pepper, cayenne pepper (does not make it spicy but adds depth of flavor), and stir to combine.
  6. Add the remaining 1/2 cup (1 stick) butter and heat until it has melted; stir frequently to encourage melting.
  7. Add the heavy cream, tomato sauce, stir to combine, and allow mixture to simmer for about 10 minutes, or until sauce has thickened and reduced slightly. Taste and if desired, add additional salt, pepper, cayenne pepper, etc.
  8. Add rice to the serving plates and top with chicken and as much sauce as desired.
  9. Evenly garnish with cilantro and serve immediately. Dish is best warm and fresh but will keep airtight in the fridge for up to 5 days.

Crockpot Tikka Masala and Flatbread

Tikka Masala and Butter Chicken are super similar in the ingredients. Butter chicken is cut into small bite size pieces and tossed in the seasonings and marinaded over night. Tikka is raw chicken with the bone put in the crockpot.


1 – 1 1/2 lbs. chicken breast or thighs (boneless, skinless)
1 onion, diced
1 Tbsp coconut oil
34 cloves garlic, minced (I put 5)
1 Tbsp fresh ginger, minced
2 tsp fresh turmeric (or about 1 tsp dried)
2 tsp garam masala (I added curry powder b/c I didn't have garam)
1 tsp dried coriander
1 tsp cumin 
1 tsp chili powder
1/2 tsp chili flakes (didnt have)
1/2 tsp salt
pinch cloves
23 Tbsp tomato paste (didnt have)
1 (14oz) can coconut milk (I prefer full-fat)
1 cup broth or water
1/41/2 cup fresh cilantro, minced
OPTIONAL: IF YOU LIKE A THICKER SAUCE:
2 Tbsp arrowroot powder or 1 Tbsp cornstarch

INSTRUCTIONS
Place the chicken in the crock of your slow cooker.
To make the sauce, heat coconut oil over medium heat. Add onion and cook 5-7 minutes, or until translucent.
Add ginger, garlic, turmeric, garam masala, coriander, cumin, chili powder, chili flakes, cloves and salt. Cook 1-2 minutes more, or until very fragrant.
Stir in tomato paste, coconut milk, and broth (or water) and stir to combine.
Pour sauce over the chicken.
Cook on HIGH about 3 hours or on low 5-6 hours.
(If you like a thicker sauce, mix arrowroot OR cornstarch with about 1 Tbsp water. Add to slow cooker in the last 3-5 minutes before serving.  Stir in cilantro right before serving.

8/28/19 Next time make a double batch of this sauce and freeze it for a future dinner. 


Simple Naan (no yeast or rising)  
1 3/4 cups all-purpose flour
2 tsp sugar
1 tsp salt
3/4 tsp baking powder
2 tsp oil (I used olive, you could use anything relatively mild)
1/2 cup* milk
butter + herbs for seasoning

Combine all dry ingredients, and whisk together.
Create a well in the middle of the dry ingredients, and add the oil and milk. Mix everything together until it forms a ball. Turn out on the counter and knead until very smooth and elastic — at least 5 minutes — adding more flour as necessary.
Let the dough rest for 10 minutes. Divide into 8-10 equal pieces.
Heat a skillet over medium-high heat. Roll one piece of dough until very thin (less than 1/8″). If the skillet isn’t non-stick, melt some butter before each piece. One at a time, cook the naan for about 90 seconds, or until parts are blackening, on each side. When they are done, you can brush them with butter and add seasonings (cilantro, garlic, etc.), if you want.

Creamy Sweet Potato and Veggie Soup

1 large onion, chopped
1/4 cup butter
3 medium sweet potatoes, peeled and chopped
3 medium zucchini, chopped
1 bunch broccoli, chopped
2 cartons (32 ounces each) chicken broth
2 medium potatoes, peeled and shredded
1 teaspoon celery seed
1 to 2 teaspoons ground cumin
2 teaspoons salt
1 teaspoon pepper
2 cups half-and-half cream (or canned coconut milk)


Directions
In a stockpot, saute onion in butter until transparent but not browned. Add the sweet potatoes, zucchini and broccoli; saute lightly for 5 minutes or until crisp-tender. Stir in broth; simmer for a few minutes. Add potatoes and seasonings; cook another 10 minutes or until vegetables are tender. Stir in cream and heat through.

1 cup: 137 calories, 6g fat (4g saturated fat), 25mg cholesterol, 839mg sodium, 16g carbohydrate (6g sugars, 3g fiber), 4g protein.

ISLAND COCONUT CHICKEN AND RICE

serves 4 people, double

8ppl     4ppl
2          1 tablespoon olive oil
2          1 onion , diced
2          1 teaspoon ginger , grated (fresh)
8          4 cloves garlic , minced
2          1 tablespoon curry powder
2          1 teaspoon turmeric
4          2 pounds chicken thighs (bone-in)
1          ½ teaspoon salt
1/2       ¼ teaspoon black pepper
2cans   13.5 ounce can coconut milk (regular or light)
1           ½ cup water
2          1½ cups jasmine rice (brown rice, preferably)
4           2 tablespoons cilantro , chopped (save and chop stems)
2          1 lime , half juiced, the other half cut into wedges

METHOD

Place the Instant Pot on "Saute" mode and heat oil. Add onion, ginger and garlic and cook until fragrant, about 2-3 minutes. Add spices, chicken, salt and pepper and cook on each side for a minute to lightly brown. Add coconut milk and water (1/4 cup for white rice and 1/2 cup for brown rice). Place lid on and cook on "Manual" high pressure for 13 minutes with a Quick Release. Transfer the chicken to a plate and leave liquid in the pot. Shred the chicken away from the bone and discard any bones and skin. Add rice, cilantro stems, and cook on "Manual" high pressure for 4 minutes for white rice (22 minutes for brown rice). Allow a Natural Release for 10 minutes then release the remainder of the pressure. Stir in lime juice and shredded chicken. Season with salt and pepper to taste. Serve with lime wedges and chopped cilantro.

12/1/18 I made this is my stove top pressure cooker and the rice burned at the bottom, but it was still amazingly delicious
12/29/18 I made it again. I seasoned the chicken and browned both sides on the stove top first. Then added chicken to a greased 8x8 pan, milk, water, rice to a  to cook in the oven, still definitely delicious, 350 degrees

I seasoned the chicken and browned both sides on the stove top first. Spray 9x13 pan, arrange chicken and the rest of ingredients in pan and cook. I did  2 cups of rice b/c my 9x13 pan wouldnt be able to fit 3 c rice and chicken thighs.

4/7/20
did all things as 3/18/19 and used 2 c of sushi rice.  Cooked for 35 min, then 15 more min. Turned out perfect. So cook next time for 55 min in oven.

Simple Gluten-Free Apple Crisp

Apple filling
2 ¼ pounds Granny Smith apples (about 5 large or 7 small), cored and sliced into ¼” thick wedges, skins on
⅓ cup honey or maple syrup
¼ cup water, or bourbon or brandy, or apple cider or apple juice (I like 2 tablespoons bourbon and 2 tablespoons water)
1 tablespoon lemon juice
2 teaspoons arrowroot starch or 1 tablespoon cornstarch
½ teaspoon ground cinnamon
¼ teaspoon ground allspice or nutmeg


Oat, almond meal and pecan topping
1 cup old-fashioned oats (use certified gluten-free oats for a gluten-free crisp)
½ cup firmly packed almond meal or almond flour
½ cup chopped pecans or walnuts (optional but recommended)
⅓ cup lightly packed coconut sugar or brown sugar
¼ teaspoon fine sea salt
4 tablespoons unsalted butter, melted
¼ cup plain yogurt (Greek or regular)

Don’t forget vanilla ice cream or whipped coconut milk, for serving!

INSTRUCTIONS

  1. Preheat the oven to 350 degrees Fahrenheit.
  2. Place the sliced apples in a 9” square baking dish. In a liquid measuring cup, whisk together the honey and water until combined. Add the lemon juice, starch, cinnamon and allspice, and whisk to combine. Pour the mixture over the apples and toss to combine. Bake for 20 minutes.
  3. Meanwhile, in a medium mixing bowl, stir together the oats, almond meal, pecans, coconut sugar and salt. Mix in the melted butter and the yogurt. Stir until all of the flour is incorporated and the mixture is moistened throughout.
  4. Once the apples have baked for 20 minutes, give them a stir and redistribute them evenly in the baker. Dollop small spoonfuls of the oat mixture evenly over the filling (see photos, no need to pack it down). Return the baker to the oven and bake for 25 to 30 more minutes, until the filling is bubbling around the edges and the top is nice and golden.
  5. Let the crisp rest for 5 to 10 minutes before serving. Serve with vanilla ice cream, I insist. Leftovers keep well in the refrigerator, covered, for about 5 days.

baked pumpkin oatmeal

I  put in a greased 9x13 pan

For the dry ingredients:

4 cups rolled oats (sometimes called old-fashioned). – Use gluten free as needed!
1 tsp baking powder
1/2 tsp salt
1 tsp cinnamon, 1/4 tsp nutmeg, 1/4 tsp cardamom
Or 1&1/2t pumpkin pie spice
2 cup toasted pecans or almonds
protein powder optional

For the wet ingredients:

3 cups milk (I use unsweetened almond milk)
2 cups pumpkin or 15oz can
1/2 cup pure maple syrup or brown sugar (plus more, for drizzling)
3 eggs or 2 Tbsp chia seeds + 3 Tbsp water (or 1 egg, if not vegan)
2 tsp vanilla
Preheat the oven to 350 degrees F.

Can serve caramel chips or choco chips

  • 1/3 cup brown sugar, packed
  • 1/2 tsp ground cinnamon
  • 4 tbsp unsalted butter, melted
  • 2/3 cup plus 1 tbsp all-purpose flour

In a large bowl, whisk together the oats, baking powder, salt, cinnamon, nutmeg, and cardamom. Add 1/2-3/4 cup of the pecans (and save the rest for sprinkling on top).

In a medium bow, whisk together the wet ingredients–milk, pumpkin, syrup, chia egg/egg, and vanilla. Whisk until well combined.

Stir the wet ingredients into the dry oatmeal mixture. Stir to combine well. Pour into a greased 8×8 (or 2 quart) baking dish. Sprinkle with additional pecans if you like.

Bake at 350 degrees 25-30 minutes, or until the liquid has soaked in, the center is just set, and the edges are starting to turn golden.

Serve with a drizzle of milk and a little syrup if you like.

Oatmeal will keep 5-7 days in the refrigerator. To reheat, simply add a little extra milk and warm in the oven or microwave.

Can serve with whipped up coconut milk on top.

ROASTED RED PEPPER POTATO SOUP

Garden and table

2 medium yellow onions, chopped
3-4 garlic cloves
2 T EVOO
1 jar (7oz) roasted sweet peppers, undrained and chopped (roasted my own peppers)
1 can (4oz) chopped green chilies, drained
1 t  ground cumin (she recommended 2 T)
1 t salt
Didnt have 1 t ground coriander
3 C diced potatoes
2 c chopped tomatoes
3 C vegetable broth
2 T minced fresh cilantro
1 T lemon juice
Didnt have 1/2 C cream cheese ( or coconut milk)

method:
1. In your soup pot, saute onions in oil until tender. Stir in the roasted peppers, chilies, cumin, salt, and coriander. Cook and stir for 2 minutes. Stir in potatoes and broth, bring to a boil.
2. Reduce heat and cover. Simmer for 10-15 minutes until potatoes are tender. Pull off heat.
3. Pour half the soup into a blender and puree with cream cheese until smooth. Pour back into the soup pot with the other half of the soup. Heat through again on medium.  Stir in cilantro and lemon juice. Serve warm. 

10/4/18 I added too many potatoes so I poured half the soup in the blender and pureed it a bit, it turned out amazing

COCONUT LIME CHICKEN

A Saucy Kitchen

4 skinless boneless chicken breasts, about 1 1/2 pounds
1/4 teaspoon sea salt
1/4 teaspoon black pepper
1 tablespoon coconut oil
1/2 cup red onion it came out to 1/2 onion for me, chopped
1 whole red chili chopped optional
1 cup organic chicken stock*
2 tablespoons lime juice about 1 large lime
1 tablespoon chopped cilantro
1/2 teaspoon red chili flakes
1/2 cup full fat coconut milk from a can or coconut cream
pinch turmeric powder (optional for colour)
1 tablespoon arrow root starch for paleo/whole 30 or corn starch mixed into 1 tablespoons water 


INSTRUCTIONS

  1. Place the chicken breasts between two pieces of plastic cling wrap and pound them down to make them even in thickness. This will help the chicken cook evenly and make for more tender chicken. Sprinkle each side of the chicken with salt and pepper.
  2. Melt the coconut oil in a large skillet over a medium high heat on the stove. Add the chicken breasts and cook each side for 5-7 minutes or until browned on each side. Remove the chicken from a skillet and set aside on a plate. The chicken doesn't need to be fully cooked yet because you'll be returning it to the heat shortly.
  3. Add the chopped onion to the same skillet and sauté for a few minutes to soften. Add the chili pepper if you're using it. Sauté another couple of minutes. Add the chicken stock, lime juice, cilantro and chili flakes. Bring the mixture to a boil and then reduce down to a simmer. Let simmer for about 5 minutes to let reduce down. Add the coconut milk and the turmeric and bring to simmer again for another 5 minutes. Add the starch and water at this time if you're using it. You may need to raise the heat slightly higher to bring this to a boil to activate the starch. Once the sauce thickens reduce it back down to a simmer.
  4. Add the chicken back to the skillet, cover and let cook for another 5-10 minutes or until the chicken is cooked all the way through.
  5. Serve with rice or cauliflower rice with the sauce spooned over the top.
  6. Add an extra sprinkling of cilantro & chillies and enjoy!

Oatmeal Cake

My friend Jen made this delicious oatmeal cake that was so moist and wonderful, I had to get the recipe.


Combine 1/5 cups boiling water and 1 c of oats. Let stand for 10 min

 Mix into the oatmeal-
1c sugar
1c brown sugar
1/2c butter
1 t baking soda 
1.5 t cinnamon
1 t baking powder
1/5 c flour
1.5 t vanilla
1.5 t salt
Bake at 350 for 20min

Frosting-
3/4c sugar
1 t vanilla
1/3c evaporated milk
3/4 c chopped walnuts or almonds (toasted)
1/2 c melted butter
3/4 c coconut 

Pour over hot cake, (roast for 1-2 min, in oven to toast coconut)

Grilled Lime Salmon with Avocado-Mango Salsa and Coconut Rice

Ingredients

Lime Salmon

  • 4 (6 oz) skinless salmon fillets
  • 3 Tbsp olive oil , plus more for grill
  • 2 tsp lime zest
  • 3 Tbsp fresh lime juice
  • 3 cloves garlic , crushed
  • Salt and freshly ground black pepper , to taste

Coconut Rice

  • 1 1/2 cups Zico Coconut Water
  • 1 1/4 cups canned coconut milk
  • 1 1/2 cups jasmine rice , rinsed well and drained well
  • 1/2 tsp salt

Avocado-Mango Salsa

  • 1 large mango , peeled and diced
  • 3/4 cup chopped red bell pepper (1/2 large)
  • 1/4 cup chopped fresh cilantro
  • 1/3 cup chopped red onion , rinsed under water and drained
  • 1 large avocado , peeled and diced
  • 1 Tbsp fresh lime juice
  • 1 Tbsp olive oil
  • 1 Tbsp Zico Coconut Water
  • Salt and pepper , to taste

Instructions

For The Salmon

  1. In an 11x7-inch baking dish whisk together olive oil, lime zest, lime juice, garlic and season with salt and pepper to taste (a fair amount of each). 
  2. Place salmon in baking dish, cover and allow to marinate in refrigerator 15 - 30 minutes, then flip salmon to opposite side and allow to marinate 15 - 30 minutes longer. Preheat a grill over medium-high heat during last 10 minutes of marinating.
  3. Brush grill grates with oil. Place salmon on grill and grill about 3 minutes per side or until just cooked through (turn carefully as the salmon will be fragile).

For The Coconut Rice;

  1. While salmon is marinating prepare coconut rice. In a medium saucepan bring coconut water, coconut milk, rice and salt to a full boil. Cover and simmer until liquid has been absorbed (there may be just a little bit of excess liquid in center which you can drain off), about 20 minutes. Fluff with a fork, then let rest 5 minutes.

For The Avocado-Mango Salsa;

  1. While the salmon is grilling prepare salsa. In a medium bowl toss together mango, bell pepper, cilantro, red onion, avocado, lime juice, olive oil and coconut water. Season with salt and pepper to taste.
  2. Serve salmon warm with coconut rice top with avocado mango salsa.

RANCH DRESSING

This recipe uses mayo
  • 1 cup mayonnaise (see above or substitute your favorite recipe)
  • 1/4 cup coconut milk
  • 1 tsp apple cider vinegar
  • 1/2 tsp onion powder
  • 1/2 tsp garlic powder
  • 1 Tbsp fresh dill or 1 tsp dried dill
  • salt and pepper, to taste.
  1. For every 1 cup of mayonnaise (the recipe above will yield the right amount), add 3 Tbsp coconut milk, cider vinegar, onion and garlic powders, and dill. Stir to mix well. Add additional coconut milk as needed to thin the mixture (it will naturally thicken somewhat in the refrigerator). Taste and add salt and pepper as desired.
  2. Ranch dressing will keep 1 week covered in the refrigerator.
This one uses avocado oil and an egg
Ingredients
  • 1 cup avocado oil
  • 1 egg
  • 1/2 cup coconut milk, I use canned, full fat
  • 2 Tbsp red wine vinegar (or apple cider vinegar)
  • 1 Tbsp fresh squeezed lemon juice
  • 1 tsp sea salt
  • 1 tsp pepper
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • Large handful fresh herbs (my favorite is TON of fresh dill)
Instructions
  1. Add all of the ingredients to a glass jar (I like to use a wide-mouthed mason jar).
  2. Using an immersion blender, blend from the bottom of the jar and go up!
  3. Dressing will keep for 7 days in refrigerator.
