Today I made these dishes.  But didn't serve them together in all in one day:

Meatballs
Spinach Dip
Funeral Potatoes

I sauteed two onions- one for meatballs and one for funeral potatoes
I just thought I'm already getting the kitchen dirty/messy I might as well make more dishes and get more done. I thought what else could I prepare in one day that would help the rest of the week go smoother???

Spinach Dip

1 T oil
1 small onion chopped
2 garlic cloves
2-3 cups chopped spinach
1/2c milk
6 oz cream cheese
1/2c mozzarella
2 dashes Worcestershire
salt and pepper

preheat oven 425 degrees
Saute onion till soft add garlic for a minute. Add cream cheese and let it slowly melt, add Worcestershire, milk stir with a whisk. When the cream cheese is melted and every thing is mixed well add: spinach, mozzarella and salt and pepper to taste.
Could be heated up in a crockpot over 3-4 hours.

Bake in oven for 20-25 minutes. serve with olive oil glazed toasted french bread


Funeral Potatoes

Doubled- freeze half  in 8x11 pan and 5x5 pan cook half

1 chopped sauteed onion
2-3 cloves of garlic
salt and pepper
1c plain yogurt
white sauce or 1 can of cream of chicken soup (1)
1/4c mayo
1 lb shredded cheese
6 baked potatoes- chopped small
3 c frozen chopped potatoes
corn flakes with drizzled melted butter to go on top



Saute onions till soft, add garlic.  then add white sauce, yogurt, mayo and salt and pepper to pan to warm it up and mix well.
Add potatoes, sauce, and cheese. Separate into different greased pans, add corn flakes and butter to top. freeze one and cook one
350 degrees 45-60 minutes


(1) (TO make white sauce- saute onions and celery, melt butter, add flour and salt and pepper)
