Ultimate Dinner Rolls


Tasty

 for 16 servings

  • 1 cup whole milk
  • ½ cup warm water
  • ¼ cup unsalted butter, melted
  • ¼ cup sugar
  • 2 ¼ teaspoons active dry yeast, 1 packet
  • 4 cups all-purpose flour, plus more for dusting
  • 1 ½ teaspoons kosher salt
  • 2 large eggs, room temperature
  • neutral oil, for greasing
  • sea salt, for sprinkling
  1. In a liquid measuring cup or small bowl, combine the warm milk, warm water, melted butter, and sugar.
  2. Sprinkle the yeast evenly over the wet ingredients, stir to combine, and let stand for 5 minutes, until foamy
  3. In a large bowl, combine the flour and salt, and stir to combine. Beat 1 egg, then add to the bloomed yeast mixture. Pour the wet ingredients into the flour and use a knife to stir until the mixture just comes together and forms a dough. Turn the dough out onto a lightly floured surface and knead for 5-10 minutes, or until the dough becomes smooth. Add more flour as needed to keep the dough from sticking. To test if it’s done, tear off a small piece of dough and stretch into a thin layer. If the dough doesn’t rip, it’s ready. Or, press a finger into the dough to see if it bounces back.
  4. Lightly grease a large glass bowl with oil. Add the dough, cover with plastic wrap, and let rest for 1 hour, or until doubled in size.
  5. Punch down the dough, then turn out onto a floured surface. Knead for a few more minutes, just until the dough is smooth, about 2 minutes.
  6. Divide the dough into 16 equal balls, roughly the size of tangerines.
  7. Knead the balls, gathering the edges of the dough toward the center to make a taut, round ball with a smooth top.
  8. Place the rolls on a parchment paper-lined baking sheet. Cover with plastic wrap and let rise for 30 minutes.
  9. Preheat the oven to 375˚F (190˚C).
  10. Beat the remaining egg in a small bowl. Uncover the rolls and brush with the egg wash. Lightly sprinkle the rolls with sea salt.
  11. Bake for 25-30 minutes, or until the rolls have lightly browned and doubled in size.

Egg Noodles

 Taste Better From Scratch


        Dbl       Single (serves 6), Dbl serves 12 ish

  • 4          2 large eggs
  • 2 t       3/4 teaspoon salt
  • 4T        2 Tablespoons milk
  • 3c        1 1/2- 2 cups all-purpose flour

I doubled the recipe, so I could save some noodles for a future soup.


  • Mix eggs, milk, and salt together until smooth.  Stir in one cup of flour until smooth. Add additional flour, just a small spoonful at a time, until the dough comes together in a ball, but is still slightly sticky.
  • Dump dough out onto a floured surface. Use well floured hands to knead the dough with your hands, until it's no longer sticky, about 3-5 minutes. Allow dough to rest for 10 minutes.
  • Roll out onto a lightly floured counter until it’s very thin — less than 1/4” thick or paper thin.
  • Use a sharp knife or pizza cutting wheel to cut the noodles into long strips, however narrow or wide you like. I like to roughly gather them with my fingers into a pile to make them more shapely, and not so flat. You could even twist some with your fingers to make them prettier.
  • To cook them immediately, add them to a pot of boiling water and cook until tender to the bite, about 2-3 minutes. Drain and serve in your favorite recipe requiring egg noodles like Easy Beef Stroganoff or Swedish Meatballs.
  • Or cook them in a pot of boiling soup, like my favorite homemade chicken noodle soup. Or, enjoy them plain with butter and a sprinkle of parmesan cheese.

Creamy chicken noodle soup

  • 6 cups chicken brothw used low sodium
  • 5 cups water
  • Salt to taste
  • 3-4 chicken thighsskinless (bone-in or boneless)
  • 2 Tbsp olive oil
  • 1 medium onionfinely chopped
  • 3 medium carrots2 carrots grated, 1 carrot sliced into thin rings or half circles
  • 2 medium celery stalksfinely chopped or thinly sliced if you prefer
  • 2 cups pasta such as rotiniegg noodles, or your favorite kind or could make dumplings
  • 1 cup cornfrom 15 oz can, or preferably 1 cooked cob
  • 4 Tbsp unsalted butter
  • 1/3 cup all-purpose flour
  • 1/2 cup heavy cream
  • 3 Tbsp fresh or frozen dill
  • 1 tsp Mrs. Dashor your favorite salt-free seasoning

instead of pasts make Dumplings

  1. In a large soup pot, combine 6 cups broth, 5 cups water and 1/2 Tbsp salt. Bring to a boil then add chicken thighs (no need to trim fat), and boil uncovered 20 min. Skim off impurities that rise to the top. While chicken is cooking, proceed with step 2.
  2. Place a large pan over medium heat and add 2 Tbsp olive oil. Add chopped onion and sauté until softened (5 min), then increase heat to med/high and add grated carrots, chopped celery and sauté 5-7 min, stirring often until soft and golden then transfer to soup pot.
  3. Remove chicken thighs from the pot and let rest until cool enough to handle, then use forks or hands to shred chicken, discarding any bones and fat (which should come off easily). Return shredded chicken to the pot (by the time it's cooled and shredded, this is usually after step 4).
  4. Add 2 cups pasta, sliced carrots and corn to the soup pot and continue cooking 15 min at a low boil until pasta is at desired softness. You can skim off any excess oil from the top at this point if you want the soup to be a little lighter.
  5. In a medium sauce pan over medium heat, melt 4 Tbsp butter, whisk in 1/3 cup flour and cook whisking constantly for 1 to 2 min or until just barely turning golden. Ladle 1 cup of hot broth from the soup pot into flour mixture, whisking continually until well blended then whisk in 1/2 cup heavy cream and transfer mixture to the soup pot, stirring until well blended.
  6. Season soup with 1 tsp Mrs. Dash (or your favorite salt free seasoning) and more salt to taste if needed. Add 3 Tbsp dill then return to a boil and turn off the heat. Enjoy!

Pico De Gallo and Refried Beans

I received this recipe from Mariana Lucena, She made these items on a camping trip in Oct at The Stake Cabin.

 Pico De Gallo
 9 roma Tomatoes diced
1/2 yellow onion chopped
1 bunch cilantro chopped 
olive oil
lemon juice
salt & pepper
pepper flakes



Refried beans
Soaked overnight, then rinsed and cooked in water for 16 min in the instapot, they were still tough (she had to cook for 16 more min to soften) or you can cook for in the slow cooker for 8 hours.

Then take out half of the water and start smashing the beans, add salt, pepper, and some broth

Lassi

 

  • Simply Recipes

  • 1 cup canned pineapple, including the pineapple juice, can use mango

  • 1 cup plain yogurt

  • 1/2 cup milk (i put pineapple juice instead)

  • 4 teaspoons honey or sugar, more or less to taste

  • 1t Vanilla
  • 7 Ice cubes or more

  • Put everything in the blender and chop. DRINK!

We drink this with spicy Indian Butter Chicken.
It is so easy and simply delicious, perfect with spicy dishes.

This would be great for hot summer days too.

Gingerbread Waffles

This was served at my friend Emily Goddard's daughter (Carrie) bridal shower. These were delicious and definitely a fun festive fall breakfast.

 1 c               1/2c             1/4 c butter
 2 c               1c                1/2c brown sugar
 2 c               1c                1/2c light molasses
 6                  4                  2 eggs
 4 c               2c                1 c milk
 6 c               4c                2 c flour
 6 t               3t                1 and 1/2t baking powder
 6 t               3t                1 and 1/2t cinnamon
 4 t                2t                1 t ginger
  1 t               1/2t             1/4t allspice
  2 t               1t                1/2t salt

Toppings-
4                  2 bananas
1c                1/2c whipping cream

In one bowl- Cream butter, sugar, molasses, eggs, and milk

In different bowl mix- flour, baking powder, ginger, allspice and salt. Add to the liquid mixture.

Bake on grease waffle iron. Top with whipped cream and bananas

Ivars Clam chowder

 2 (6.5oz) minced clam cans
1 bag (16oz) of frozen Newport Steamer clams in the shell (not necessary, but I happen to have them)
1 c finely chopped onion
1 c finely diced celery
2 c finely diced potatoes
4 garlic cloves
3/4c butter
3/4c flour
4c half/half
1 t salt
1 dash pepper
1/2t sugar

In medium saucepan, drain the juice. Set the clams aside. Combine clam juice with the onions, potatoes, celery and potatoes. Add enough water in barely cover and simmer, covered over medium heat until potatoes are tender, about 20 min.

In large saucepan, melt butter. Saute garlic for 3-4 min, add flour and stir. Slowly whish in the warm half and half. Cook and whisk till smooth and thick, about 5 min.

If you want a thinner chowder, add 1/2-3/4c water or clam broth. Add the veggies with the cooking liquid, clams, salt, pepper, and sugar. Stir well and adjust seasonings if necessary



Dayna said, "Ive tried the bacon type of clam chowder, it ends up tasting like loaded baked potato soup. The Ivars recipe is a washington state tradition and most everyone up there in the pacific northwest is accustomed to the clam chowder, so other soups that include bacon taste like good soup but not clam chowder. Once you add bacon to anything, it all becomes bacon. This recipe sticks to the clam base (sauteing the veggies in clam juice)."


10/26/22 RIDICULOUSLY amazing! Definitely a must do soup again.

I added the steamer clams to the recipe (it wasn't from the original recipe), I followed the directions on the package, put the whole bag in boiling water and wait for 4 min to have the clams pop open. Then take them off the stove and open the bag and pull out the  clams in the shell and put the clams in the big soup pot and stir.

RS Fireside Salad

 Strawberry Spinach Chicken Salad (Pampered Chef)

1. Chicken- season and cook


2. Dressing
1 lemon
2 T white wine vinegar
1/3c sugar
1 T vegetable oil
1 t poppy seeds

Zest lemon, needs 1/2 t zest. juice lemon measuring 2 T. 

Combine and whisk the following- the zest, lemon juice, vinegar, sugar, oil, poppy seeds. Cover and refrigerate until ready to use.

3. Salad-
1 C mixed greens
1 C Spinach
1/4 c sliced strawberries
1/4c sliced apples
1/8c raisins/craisins
1/8c feta cheese
1 T slivered almonds
2 T candied pecans

Mix all the salad ingredients together and then right before you serve add the dressing.

Breaded Chicken

6-8 chicken breasts (sliced is half and pounded)
3 eggs beaten

1 c flour

1t salt and pepper

2/3c of panko (or 2 sleeves of saltine cracker pureed in blender)

3 t garlic powder

1 t onion powder

1/2 t basil

2 T parsley

cooking spray


  • Preheat oven to 400°F.
  • Pound chicken breasts to ½ inch thick.
  • Beat eggs and set aside. Mix flour, salt and pepper in a shallow dish.
  • In another dish, combine Panko, bread crumbs, and seasonings.
  • Dip chicken in flour and shake off any excess.
  • Dip in the egg mixture and then into the bread crumbs. Gently press the crumbs to adhere.
  • Generously spray the chicken with cooking spray on each side and place on a rimmed baking sheet.
  • Bake for 25-28 min or until the chicken reaches 165°F.

I served with Megumi salad and spaghetti noodles.

Olive garden Breadsticks

The first ingredient at the top of the ingredient table is sugar

  

 In large bowl dissolve sugar and yeast, let sit for 10 min, until frothy.

Add Flour, salt, butter, yeast, mix til combined. Knead dough for a few minutes.

Spray cookie sheet. Pull off pieces of dough and roll out into strips. Cover dough with towel or plastic wrap and let sit for 45 min.

Preheat oven 400, Bake breadsticks 6-7min, Brush breadsticks with butter topping. Bake for 5-8 more minutes.  Remove from oven, brush more of the butter topping, ENJOY AND EAT!

2 t garlic powder

1 t salt

1 t italian seasonings of oregano and basil

Hair low lights

We used 5G "age beautful Zotos" 

the deveopler is "salon care" volume 10.

Split hair in the middle.

She took out her money pieces out first and then she braided them, to make sure none of it got dyed. 

We started on the back of the head (crown 3 foils) and worked our way up and split her hair into 3 sections.

But when we were halfway done with the top we almost ran out of the dye.

Mihyun Korean Delicious Specialties

 Beef Pepper Soup

One pot boil slice of beef, scoop out the floating impurities
1 hand size of any type of beef chunk (don't cut)
1T soy sauce
7 cloves of garlic
1/2T-1/4c fish sauce
3c of water
Pepper- lots and lots to taste
1-3 stallks of green onions (cut in bigger chunks)
rolling boil for 1/2hr, till meat tender, after meat is tender, slice beef and put back into soup


EAT!


Seaweed & Beef Soup

Soak the dehydrated seaweed for 1/2hr

Ingredients-
Handful of Dehydrated seaweed
Sesame oil
1 beef chunk
7 garlic cloves
1-3T Soy sauce
1-3T fish sauce
3 cups of water (or more)

Slice the raw beef thin
Cook the meat with sesame oil.
with the meat, saute 7 garlic cloves
Cut the seaweed (your choice how big, 1 inch chunks to 4 in chunks)
Stir fry seaweed in the sesame oil
Add 1T soy sauce, 1T or more Fish sauce, more sesame oil if needed, add water.

Simmer 30-40min, till liquid is green and murky and seaweed is soft and chewable.

EAT!

Delicious Fish Tacos

 Spend With Pennies

Serves 4

  • 1 ½ pounds fillets of tilapia or cod/haddock
  • 1 tablespoon olive oil
  • 1 tablespoon chilli powder
  • ½ teaspoon cumin
  • ½ teaspoon garlic powder
  • 1 teaspoon paprika
  • ½ teaspoon salt
  • ½ teaspoon pepper
  • 1 teaspoon oregano
  • ½ teaspoon onion powder
TACOS-
8 6-inch corn or flour tortillas
       1 sliced avocado
  • 1 lime wedged
  • toppings to taste
  • fish taco sauce-

     tablespoons mayonnaise
  • 3 tablespoons sour cream
  • ½ lime juiced (lemon juice container)
  • ½ teaspoon garlic powder
  • ½ teaspoon cumin
  • ½ teaspoon sriracha or to taste

Directions-
  • Preheat oven to 400°F.
  • Combine all fish taco sauce ingredients in a small bowl and set aside.
  • Combine rub ingredients and rub into fish fillets. Place fish on a parchment lined pan and drizzle with olive oil.
  • Bake for 12-15 minutes or until flaky and cooked.
  • Heat tortillas according to package directions.
  • Break fish into large chunks and divide between tortillas. Top as desired and serve.

How to Make Cabbage Onion Slaw: 1 cup green cabbage, shredded 1 white onion, thinly sliced 2 tablespoons cilantro, chopped ⅓ cup sour cream 2 tablespoons fresh lime juice 1 jalapeño pepper seeded & chopped.
Nutritional information includes 2 fish tacos in corn tortillas and no toppings.

8/7/22 I made these and seasoned with a special seasoning called Pecan smoked salt, turned out just simply amazing!

Mexican Corn- Elote

Corn

Butter

Mayonnaise

Seasoned salt

garlic powder

Cotija cheese

paprika

cayenne

tahin

fresh lime

 


Husk corn but leave the green husk on, use for a handle

Grill for 15min, turning often

Put butter on the corn

Mix the mayonnaise spread, slather the mayo mix on the cooked corn

Then layer a generous amount of cojita cheese on top of the mayo spread

Sprinke paprika, cayenne, and tahin

Top it off with fresh lime

Love Scavenger Hunt – Cut out hearts from construction paper, choosing a different color of construction paper for each family member. On each heart write something you love about that family member.  Hide the hearts in the house for a fun scavenger hunt.

Family Love Jar – Starting at the beginning of February, place a jar and a stack of paper slips out. Encourage family members to write special things about your family on the slips of paper.  Read the notes together on Valentine’s Day.

Love Door –  Tape hearts with things you love about your child on his bedroom door while he sleeps the night before Valentine’s Day.

I Love You Meal – Make a Valentine’s Day theme meal as a family. Make heart-shaped pancakes or sandwiches and set the table with fancy dishes.

A Valentine’s Mail Station

We started this tradition a few years ago as my oldest son was learning to read and write and now my kids can’t wait for us to set it out each year. This tradition actually starts at the beginning of the month, but once it’s set up I don’t mess with again.

It’s just a simple invitation on a table in our dining room for everyone to make Valentine’s for each other. I never force it and just leave the materials available but I’m always blown away by how much my kids enjoy this even now, as they’re getting older. I’ve got a whole post on how to set up your own Valentine’s Mail Station with tips on sneaking in a little literacy practice as you go.

3. Pin the lips on the picture

A variation of ‘pin the tail on the donkey’, this one involves a drawn out poster of a face without lips. Then have some cut outs of lips with tape on the back of each one. Blindfold each person, spin them around and watch them as they try and put the lips where they belong! Everyone watching will have a great time too!

3. TOP SECRET VALENTINE TRADITION

Having a Top Secret Valentine is so fun with kids! A week before Valentine's Day, write all your family member's name one of these Top Secret Valentine's assignments.  Each person will get an envelope with their mission on it.  

The goal is to do as many nice things for your "Secret Valentine" as possible before Valentine's Day. On Valentine's Day, everyone reveals who they had.
