Yellow Cake Mix to Chocolate cake mix

 

Confessions of a Baking Queen

1 - 15.25oz Box of Yellow Cake Mix (I didnt have chocolate)
1-3.9oz Box of Dry Vanilla Pudding Mix (I didnt have chocolate)
1/2 c Cocoa Powder
4 Large Eggs, at room temperature
6oz (¾ Cup) Vegetable Oil
6oz (¾ Cup) Sour Cream (or mayo or plain yogurt)
4oz (½ Cup) Buttermilk
1 Teaspoon Vanilla
4oz (½ Cup) Hot Coffee (I didnt have it)
85 grams (½ Cups) Mini Chocolate Chips, optional


  1. Preheat your oven to 350F/180C and spray two 8-inch or 9-inch round cake pans with non-stick baking spray, my preferences are Bakers Joy or Pam for Baking. Set the pans aside.
  2. In a large bowl mix together everything except the hot coffee and mini chocolate chips. Mix until fully combined, you want to make sure you mix well enough that there are no traces of egg left behind but you don't want to overmix the batter. Then mix in the hot coffee, it will thin the batter out then fold in the chocolate chips.
  3. Pour the cake batter evenly between the two prepared pans and bake. For 8-inch cakes I found they baked in the 25-30 minute mark as opposed to the longer times the cake box suggested.  Let the cake pans cool on a wire rack for 15 minutes before inverting the cake out directly onto a wire rack to cool completely. Then frost with your favorite frosting.

He wanted cherry icing served on it with maraschino cherries on top for decoration

Logan Birthday

 Cinnamon and Coconut

Copycat Arctic Circle Lime Rickey
2 liter bottle of Sprite or 7UP
1-2 limes, cut into wedges
ice cubes
grape snow cone syrup (see recipe below)

Grape Snow Cone Syrup
2 cups white sugar
1 cup water
1 (0.14 oz.) package grape Kool-Aid flavored drink mix 
(one person said just go buy Frozen grape juice and its so much better)

If you make the Snow cone Syrup-
1. In a saucepan, stir together the sugar and water. Bring to a boil and boil for about 1 minute. Remove from heat and stir in the drink mix. Allow to cool completely and store in a container for pouring. 
2. Once the syrup has cooled, fill a glass with Sprite and add as much ice as desired. Pour 2-4 Tbsp. of grape syrup into the glass. Add more or less, depending on how much grape flavor you want. Squeeze a fresh lime wedge or two into the drink and throw the squeezed wedge into the drink for good measure.

Nutella Magic Cake

Jo cooks 

4 eggs (at room temperature, separated)
1 cup icing sugar
1 cup Nutella
1/2 cup butter (unsalted, melted but room temperature)
1 teaspoon vanilla extract
1/8 teaspoon salt
2 tablespoon cocoa powder
3/4 cup all-purpose flour (minus 2 tbsp )
2 cups milk (lukewarm)
icing sugar ( for dusting cake)

  • Preheat your oven to 325 F (160 C) degrees. Line a 8x8 inch baking dish with parchment paper.
  • Separate the eggs and add the egg whites to the bowl of your mixer. Mix until egg whites are stiff. Place the egg whites in a bowl and set aside.Add the egg yolks and icing sugar the the bowl of your mixer and mix together until mixture becomes like a cream and is light pale yellow in color.Add the Nutella, melted butter, vanilla extract, salt, cocoa powder and continue mixing for another minute until well incorporated.With the mixer on low, start adding flour to the mixer, one tablespoon at a time, until all the flour has been incorporated into the mixture.With the mixer still on low, slowly start adding the milk and beat until everything is well mixed together. The mixture should be very thin, almost like a crepe batter.Start gently folding in the egg whites, a third at a time using a spatula. Repeat until all the egg whites have been folded in. They do not have to be completely mixed in, it's OK to still see foamy bits floating around the top of the batter.Pour the batter into the prepared baking dish and bake for 40 to 70 minutes or until the top is browned. The cake should be firm to touch, and should not wiggle.Let cool completely, then place in the fridge for at least 2 hours.Sprinkle some icing sugar before slicing into it.

Dad chocolate chip cookies

350 degrees

2 eggs
1 1/2t vanilla
1/2 cube softened butter
1 c brown sugar
1/2c white sugar
Cream and whip with whisk for 2-5 minutes

Then add-
1/8 t salt
1 t baking powder and baking soda
2 1/4 c white flour

Now Just stir with wooden or plastic spoon, dont whip.
1/2 bag of chocolate chips

350 cook on oiled/greased cookie sheet, cook 10-11min
Dont check too earlier b/c it flattens the cookies

Crispy Chicken Parmesan

1 1/2 c. panko bread crumbs
1/2 c. grated Parmesan
3 tablespoons all-purpose flour
2 large eggs, beaten
2 tbsp. extra-virgin olive oil
2 tbsp. canola oil
4 oz. fresh mozzarella, thinly sliced
1 1/2 c. marinara sauce, store-bought or homemade
Pound out 6 chicken breasts till flat.
Salt and pepper both sides of chicken.  

Preheat the oven to 425 degrees F. Spray a 9 by 13-inch baking dish with cooking spray. 
Combine the bread crumbs and Parmesan on a sheet of waxed paper/plate/ziplock bag. Spread the flour on another sheet of waxed paper. Working with 1 piece of chicken at a time, dip both sides into the flour, shaking off excess. Dip each piece into the egg whites, shaking off excess, and then press both sides into the breading to coat. (for a crunchier breading- dip the chicken in an egg then flour mixture and egg mixture then panko and repeat.)

Heat the oil in a large nonstick skillet over medium-high heat. Add the chicken (in batches, if necessary) and cook until browned, 3 to 4 minutes. Transfer the chicken, in 1 layer, to the baking dish, cover each chicken breast with slice of mozzarella  Bake in oven 12-15min.  Pour warmed spaghetti sauce on top of chicken right before serving.

Serve with steamed broccoli, spaghetti sauce, salad, defrost frozen rolls in fridge the night b4 (Preheat oven to 350F. Bake rolls 15-20 minutes,),  and spaghetti noodles


2 different cakes mixes

1. Chocolate cupcakes, after cooked, cut the top and bottom of cupcake apart and fill with vanilla pudding, then top with choco frosting. (or who we really kidding, just buy the premade stuff)

2. Made a vanilla cake but wanted a choco swirl in it. So i then mixed part of vanilla cake with choco pudding mix and added 1/2c-1c milk. Put vanilla cake mix in greased 9x13pan, then put plops of choco pudding cake mix in the pan and swirl the mixes together.

3/24/16, thursday, pounded chicken flat and salt and pepper each piece, coat with the breading, saute both sides on stove top, then freeze, put wax paper between each chicken piece.  On sunday pull out chicken, put on cookie sheet, put slices of mozzarella on chicken and bake 425 15min

3/24/16, thursday, make cupcakes, can put in fridge or freezer till sunday. Then sat or sunday, make pudding mixture and fill inside of cupcakes and top with frosting

3/27/16 make the pudding let sit in bowl 30 min, then put into cupcakes, then make sauce pan fluffy frosting  (to make choco frosting- add cocoa powder  or melted choco chips to sauce pan)
