Delicious Chicken Legs

 Low Carb life


4 pounds chicken drumsticks
4 tablespoons avocado oil
2 teaspoon SMOKED paprika
2 teaspoon garlic powder
2 teaspoon onion powder
2 teaspoon chopped parsley
1 teaspoon salt
1 teaspoon cracked pepper


  • Preheat oven to 425 degrees. Spray a baking sheet with non-stick spray.
  • Add all of the ingredients to a large zip top bag and seal. Smush the chicken around in the bag to coat in the seasoning.
  • Arrange chicken on the baking sheet and bake for 40-45 minutes or until a thermometer reads 165 degrees.
  • Serve immediately.
  • Serve with a side of dipping sauce or Blue Cheese dressing

I cooked at 440 degrees for about 55 minutes. we all definitely really enjoyed these flavorful drumsticks. I would've liked them to be more crunchy and crispy on the outside. Not quite sure how to achieve that yet.

Beef Carnitas

 Lisa Morby's taco salad with Beef Carnitas

23 lbs beef chuck roast
2 tsp chili powder
1 tsp salt
1/2 tsp black pepper
1/2 tsp cumin
1/2 tsp smoked paprika
1/4 tsp garlic powder
1/4 tsp onion powder
1 onion, sliced (I like sweet onions)
1 green pepper, sliced
1 red pepper, sliced
1 (4oz) can diced green chiles (don’t drain)

FOR SERVING:
corn tortillas*
your favorite taco toppings: shredded lettuce, salsa, guacamole, cheese, sour cream, cilantro, etc.

INSTRUCTIONS
If desired, brown your beef roast in a pan or Dutch oven. Heat a small drizzle of oil over medium heat, add the beef roast and cook 5-7 minutes per side, or until it’s very browned and crisped.
Place roast in the slow cooker. In a small bowl, whisk together chili powder, salt, pepper, cumin, smoked paprika, garlic powder, and onion powder. Sprinkle spice mixture over the roast. Add onion, bell peppers, and green chiles over the roast as well.

Cook on HIGH 3-4 hours or LOW 7-8 hours, or until beef is pull-apart tender. (You should be able to easily shred it with a fork or a pair of tongs).

Baked Crispy Chicken Thighs/Drumsticks


Everyone liked this one. Thats always nice when dished are loved and liked, Phew!!!

African Bites

  • 2 1/2 - 3 pound chicken thighs (about 5-6)
  • 1 1/2- 2 teaspoons creole salt or just use salt (to salt chicken)
  • 2 teaspoon onion powder
  • 1/2 teaspoon dried  or oregano
  • 1 teaspoon garlic powder
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon white pepper
Instructions
  1. Wash chicken thighs, wipe with a paper towel. Salt chicken . Combine spices(onion powder, thyme, oregano, garlic powder, smoked paprika,  white and cayenne pepper bouillon powder  , mix well. 
  2. Sprinkle both sides with generous amount of the spice blend place them on a cookie sheet in a single layer, you can let them sit in the fridge overnight. Do not cover them; let the air-dry them or proceed with baking.
  3. When ready to bake, preheat oven to 475°.
  4. Bake chicken thighs in the preheated oven starting at 475 degrees for the first 20 minutes then drop to 400 degrees. Bake until skin is crispy, thighs are no longer pink at the bone, and the juices run clear, about 30 minutes. An instant-read thermometer inserted near the bone should read 165 degrees F (74 degrees C).
