White Cake Mix to Pumpkin Cake

 Like Mother Like Daughter

Makes 24 cupcakes

  • 1 box yellow cake mix
  • 1/2 cup oil
  • 1/4 cup buttermilk, or milk, or sour cream
  • 4 large eggs
  • 15 oz  pumpkin pie filling
  • 1 tsp pumpkin pie spice
  • 3 tsp ground cinnamon
  • 1/2 t ginger
  • 2 t allspice
  • 1 t nutmeg

  • Preheat the oven to 350 degrees.
  • Mix together the cake mix, sugar, oil, water, eggs, pumpkin puree, pumpkin spice, and cinnamon.
  • Stir for 2 minutes until the batter is super smooth.
  • Pour the batter into a greased cake pan and bake until a toothpick comes out mostly clean.
  • For cupcakes 15-18min, a 9x13 pan, bake for 25-30 minutes, or10inch bundt cake, bake for 30-40 minutes
  • Allow the cake to cool for 10 minutes then remove from the pan to a cooling rack to cool completely.
  • Top with powdered sugar, vanilla icing, or cream cheese frosting.

A weekend with Rochelle Lunt

WILD RICE SOUP WITH CHICKEN 
3 c. cooked rice
1 c. chopped celery
1/2 c. chopped green pepper
1 c. minced carrot
1/2 c. chopped onion
Dash of garlic powder
Salt and pepper
1/4 c. butter
1 (8 oz.) can mushrooms
2 cans cream of chicken soup
2 cans cream of mushroom soup
1 1/4 c. chicken broth
4 c. chicken, cooked and cubed
1 (4 oz.) pkg. slivered almonds
Milk - for desired consistency

Prepare wild rice using "Basic Oven Method" (below) with water and bouillon. Meanwhile, stir together soups and add at least 1 cup chicken broth. Set aside.

Melt butter and saute celery, mushrooms and carrot; cook 1 minute more. Combine sauteed vegetables, soup mixture, chicken and wild rice. Add milk to reach desired consistency. Simmer 30 minutes. Do not boil! Garnish with slivered almonds. Serves 8 to 10.

WILD RICE BASIC OVEN METHOD:

1 c. raw wild rice
3 c. boiling water
2 tsp. butter
Dash pepper
3 tsp. chicken bouillon
1 tsp. salt, if not using bouillon

Rinse wild rice with cold water 3 times, discarding what floats. (I suggest soaking overnight before baking.) Put rice, water, bouillon or salt in a 2 quart covered baking dish. Cover and bake at 350 degrees for 1 1/2 hours. Check after 1 hour and if quite dry, add more water and fluff with a fork. Place reserve rice in a plastic bag and seal and freeze. A double recipe saves prep time and it freezes well.



        1 onion chopped and sauteed
         3-4 minced garlic cloves or 1\2t garlic powder
  • 24 ounces frozen shredded potatoes
  • salt and pepper
  • 12 eggs
  • 2 cups half and half
  • 1 teaspoon season salt
  • 1 1/2 cup cheddar cheese grated
  • 1 1/2 cup pepper jack cheese grated
  • 2 cup chopped ham (Or your preferred meat, sausage, bacon would also be great)
  • (lily said to add green chilies when we make it)


Instructions
 

  • Grease a 9x13 inch pan. Add the frozen shredded potatoes to the bottom of the pan. Sprinkle with salt and pepper.
  • In a large bowl, whisk the eggs together. Then add half and half, season salt, cheddar cheese, pepper jack, and chopped ham.
  • Pour over the top of the frozen potatoes. Cover with foil and refrigerate for 2 hours or overnight.
  • Bake uncovered at 350 degrees for 90 minutes. Let rest for 10 minutes before serving.      
12\30\21 One Time I cooked the hash browns in the oven at 470 for 40 minutes with salt,  pepper, oil pepper and oil. Then Added to the 9 x13 pan, Then cooked in the oven
I put the cooked hashbrowns on the bottom of the 9x13 pan with the egg, cheese, and meat mixture on top of it. Cooked at 460 degrees for 30 min. Turned out delicious


1 (18.25 ounce) package spice cake mix
1 (15 ounce) can solid pack pumpkin
1 egg 

-Preheat oven to 350 degrees F (175 degrees C). Grease cookie sheets.
-In a large bowl, stir together the cake mix and pumpkin until well blended. Drop by rounded spoonfuls onto the prepared cookie sheet.
-Bake for 11-13 minutes in the preheated oven. Allow cookies to cool on baking sheet for 5 minutes before removing to a wire rack to cool completely.

Pumpkin gingersnap Cake

10/2021   I was so surprised what a delicious cake this was. I think i've forgotten with the easyness of boxed cake, what a difference in taste homemade cake is.

 34 cupcakes

THE CAKE

  • 1 1/2 cups (300 g) granulated sugar
  • 3/4 cup  (165 g) light brown sugar packed
  • 5 large eggs room temperature
  • 1 cup (218 g) vegetable oil
  • 1 1/2 teaspoons (6.3 g) vanilla
  • 2 cups (450 g) pumpkin purée 
  • 3 cups (360 g) all-purpose flour
  • 1 1/2 tablespoons (21 g) baking powder
  • 1T ground cinnamon
  • 1 1/2 teaspoons (3.9 g) ground ginger
  • 1 teaspoon (2.64 g) nutmeg
  • 1 teaspoon (5.6 g)salt

FOR THE CRUMBLE

  • 1/2 cup (45 g) quick cooking oats
  • 1/4 cup roughly chopped gingersnap cookies about 2 cookies
  • 1/2 cup finely ground gingersnap cookies about 8 cookies
  • 3 tablespoons (65.6 g) molasses
  • 1/4 cup (55 g) brown sugar packed
  • 3 tablespoons (42.3 g) unsalted butter melted
  • 1/2 teaspoon (1.32 g) ground cinnamon
  • 1/4 teaspoon (1.4 g) salt

FOR THE BUTTERCREAM

  • 7 cups (875 g) powdered sugar measured and then sifted
  • 6 ounces cream cheese room temperature
  • 1 1/2 cup 3 sticks (339 g) unsalted butter slightly cold
  • 2 teaspoons (8.4 g) pure vanilla extract
  • *This buttercream recipe makes enough to fill and cover your cake. If you want to add additional piping, you’ll want to make an extra 1/2 batch.

FOR THE GANACHE

  • 1 cup (150 g) cinnamon chips
  • 1/3 cup (77 g) heavy cream

Instructions

FOR THE CAKE

  1. Preheat 350 degrees F. Spray three 8-inch or four 6-inch round cake pans with cooking spray and line the bottoms with parchment paper rounds. Spray again and set aside. 

  2. 9/15/21 I made 34 cupcakes and cooked for a surprisingly small amount of time 15 minutes

  3. In the bowl of an electric mixer fitted with the paddle attachment, beat the sugar and eggs together on medium-high speed until light and fluffy, about 5 minutes. Add the oil and vanilla and beat on medium until combined, about 30 seconds. Add the pumpkin filling and mix until combined, about another 30 seconds. 
  4. In a medium bowl, whisk together the flour, baking powder, cinnamon, ground ginger, nutmeg, and salt, and with the mixer on the lowest speed, gradually add to the pumpkin/egg mixture.
  5. Evenly distribute batter into the prepared pans, smooth with a small offset palette knife and place in the center of the middle rack of the oven, about 2 inches apart. Bake until a knife or toothpick inserted into the center comes out clean, about 25 minutes. (Mine took 23).
  6. Let pans cool on a wire rack 10 minutes, and then invert cakes onto rack and cool them completely.

FOR THE CRUMBLE

  1. Preheat the oven to 350 degrees F. Line a baking sheet with parchment paper and set aside.
  2. In a medium-sized bowl, combine all the ingredients and mix with a wooden spoon until the mixture resembles clumps of sand. 

  3. Pour the mixture over the parchment paper and spread it out evenly. Bake for 10 minutes, stirring the mixture about halfway through.

  4. Let it cool completely and then crumble the mixture into smaller pieces. The mixture will still be soft when you take it out of the oven. It will harden as it cools.

FOR THE BUTTERCREAM

  1. In a large bowl of a stand mixer fitted with the paddle attachment, beat the cream cheese and butter on medium speed until light and fluffy.
  2. Gradually add in the sugar, 1 cup at a time, beating well after each addition and scraping down the sides of the bowl. Continue to beat until very fluffy, about 4-5 minutes.
  3. Add the vanilla and beat for another 1-2 minutes.
  4. Remove the bowl from the mixer and use a wooden spoon and mix by hand to stir out the air bubbles.

FOR THE GANACHE

  1. Place the cream in a microwave safe bowl. Heat in the microwave for 30 seconds. Alternately, you can heat the cream over the stove.
  2. Pour the warm cream over the cinnamon chips and let sit for 5 minutes. Stir until smooth and silky. Allow to cool, but not set, before using on your cake.

ASSEMBLY

  1. After leveling each cake layer, place the first cake layer, top side up, on a cake board. Apply 1/2 cup of the frosting over the cake layer, followed by 1/4 of the crumble and a drizzle of the cinnamon chip drip.
  2. Repeat these steps for the next two cake layers. Finish by placing the final cake layer, top side down, on top of the last layer of filling. 
  3. Before frosting the entire cake, you will want to apply a thin coat of frosting around the cake and on top of the cake. This layer of frosting doesn't need to look pretty, it's simply functional. We want to lock in any crumbs. Freeze the cake for 10 minutes.
  4. After the crumb coat is set, apply the rest of the frosting and drip.

Airbnb Granola

I went to a Airbnb in logan and lisa made these fantastic pumpkin muffins and then added the granola to the top of the muffins. The crunch of the granola was just amazing and perfect on the soft delicious muffin.

8 c oats
1 1/2 c brown sugar
1 1/2 c wheat germ
6 c coconut
2 c almonds
2 c cashews
1/2 c sunflower seeds
1/2 c pumpkin seeds
 2 c pecans
2 c hazelnuts, filberts or peanuts

Mix well in large bowl

Bring to boil-
1/2 c water
1/2c oil
1/2 c honey
1/2 c peanut butter
2 t vanilla

Add wet ingredients to dry, mix well. Spread on 2 large cookie sheets

Bake 275 for 2 hours, Mixing well every 30 min

Airbnb Pumpkin Muffins or bread

Use Granola to put on top of muffin

I went to a airbnb in logan UT. Lisa made these delicious muffins that I couldn't get enough of.
Makes 2 loaves or about 24 muffins

First mix-
4 eggs
2 c packed pumpkin
1 c oil
I did 2 c (she did 3 c sugar)

Add-
3 1/2 c flour
(I did 3 t) she did 2 t baking soda
1/2 t baking powder
1 1/2 t salt
1 t ground cloves
1 t cinnamon
(I did 1/2 t ginger) I didnt have 1 t nutmeg

Use cupcake liners or spray with oil the bread loaves pan
Cook 350
For bread Bake 65 – 75 minutes
For muffins bake 20-25 min

Mix liquid batter in large bowl. On top of liquid batter I piled the dry ingredients on. After all the dry ingredients were measured out and put on top, then I mixed it all up. 

Put liquid batter in the muffin tins and top each muffin with a handful of homemade granola  and Turbinado sugar- (larger sugar crystals) to sprinkle on top of the liquid muffin batter. I fill up the muffin tin to the top, b/c I like puffy rounded muffins, not flat

Feeding baby

A persons' and babys' skin is the first responder to a new food. The skin will tell you if the food is ok for the babys inside (stomach and intestines). As long as you dont see redness on the babys cheeks and face- from feeding the baby food,that will show that the food is assimilating well into the baby. If the baby has redness, stop feeding the food for the day. Then the next day start a smaller amount and see how the babys' skin does.

Breakfast- over easy egg
Lunch- brown rice cereal with any side below
Dinner- brown rice cereal with any side below

1.  Over easy egg                  4-5mo, in the morning one small taste from dipping my finger in the                                                     yolk from my egg. Then at 6-7 mo still over easy egg, but mix in the                                                     white part chop it up. Then around 8 months could make scrambled eggs
2.  Brown rice porridge        6 months, I cooked regular brown rice with water, then pureed it with                                                   breastmilk in blender to make it soupy and thin. Started feeding once a                                                   day, then increased it at 7 mo to twice a day
3. Avocado                           4- 6 months, one small taste once a day starting at 4 mo, then smash up                                                  more and slowly increase the amount
4. Banana                             4- 6 months, one small taste once a day starting at 4 mo, then smash up                                                  more and slowly increase the amount
5. Peanut Butter or almond butter
                                              7 months one small taste once a day, then slowly increase the amount
6. pumpkin and sweet potatoes- roast in oven or boil in water, season with salt and pepper
                                             6-7months one small taste once a day, then slowly increase the amount
7. beans and lentils


     I did try store bought white rice powdered fortified baby cereal, but he was pretty fussy within 2 hours and throughout the next day. I went back to the brown rice porridge and that seem to settle him right down.
    I also make a huge batch of the brown rice porridge. 4 c water, 2 c rice bring to boil, cook for 40 min. Then add rice and extra breastmilk to blender and puree till how thick or thin you want it. I freeze them in small portions in mini and regular sized muffin tins. Then after they freeze hard, then I pop them out and put in a ziplock bag. Then they are in individual portions when its time to feed the baby. I microwave for 30 seconds and its ready.

HOW TO ROAST THE PERFECT PUMPKIN

INGREDIENTS

1 kg / 2  1/4 pounds pumpkin (I love using Jap / kent pumpkin)
2 tablespoons cold pressed olive oil or your choice macadamia nut or coconut oil
1 teaspoon ground cinnamon
1 teaspoon sea salt

METHOD

1. Preheat your oven to 180 C / 356 F.
2. Cut pumpkin into chunks (with or without skin)
3. Drizzle with olive oil.
4. Add cinnamon and sea salt.
5. Massage well with your fingers, coating all the pumpkin.
6. Spread in a single layer onto 1 or 2 prepared baking trays.
7. Roast for 40 – 45 minutes or until the pumpkin is soft and caramelised.
8. Enjoy and use as required.

NOTES AND INSPIRATION

It’s a great idea to double the recipe and use for yummy portable salads and winter warming soups.

Pumpkin marries perfectly with other aromatics such as ginger, coriander, sage, orange, nutmeg, vanilla, cloves, cinnamon.

Butternut Chili




  





INGREDIENTS    Doctor Yum
1 tablespoon coconut oil (or other cooking fat)
2 onions, chopped
3 carrots, chopped
4 cloves garlic, minced
½ pint mushrooms, diced
32 ounces broth (chicken or vegetable)
1 15 ounce can diced tomatoes
1¼ pound butternut squash, peeled and cubed (I'm going to try an actual pumpkin)
2 tablespoon paprika
1 teaspoon chili powder
½ teaspoon ground turmeric
2 teaspoon ground cumin
1 teaspoon flax meal
1 teaspoon salt
1 pound turkey, lean ground (can sub other ground meat or 16 ounces grated tempeh)
2- 15 ounce cans beans (favorite kind)
2 cups spinach, chopped

METHOD

Heat 1 tablespoon olive oil in a large soup pot, and cook onions until soft about 1-2 minutes, add carrots, then garlic and mushrooms and cook until veggies are softened. Add chicken broth and diced tomato with juices. Cut largest butternut squash pieces smaller, making it faster to cook through. Add butternut squash, spices, flax meal, and salt. Bring to a boil. Cover and simmer about 30 minutes. While chili is simmering, heat 1 tablespoon olive oil in skillet on medium. Cook turkey until almost brown and cooked though. Turn off heat and set aside. When butternut squash is softened use the back of a spoon in the chili to mash the cubes until broken apart. At this point squash should be dissolved and incorporated into the broth. Add turkey and simmer 5 minutes. Add beans and spinach and cook until beans heated through, about 3-5 minutes.

12/8/18 I'm going to roast a pumpkin instead of a squash. Cut open the pumpkin, cut off the skin and scoop out the seeds. Chop the pumpkin into 1 inch chunks, then coat with olive oil, garlic powder, salt and pepper. Roast 20-30min
