Simple Noodle Stirfry and Tacos

2 Sauted onions
1 sliced zucchini
1 sliced summer squash
Any other types of veggies- peppers, snap peas, carrots, spinach, cabbage
leftover spaghetti noodles
Spices- garlic, mrs dash or spike, salt and pepper

Saute onions 15 min, till brown.
During that time in a bowl add spices to the veggies and let marinade with a little oil for 15min.
Add to the skillet- zucchini and squash till browned prob 15min, next add noodles. Then it is ready.
Top with avocado and chopped nuts.

Optional- Could add peppers, snap peas, thinly sliced/grated carrots, chopped spinach or sliced cabbage during the last minute of cooking.

I actually like to use these sauted veggies on oven tacos too.  I saute the veggies first then add on top of nachoes and cook in oven 10min.

Veggie Sloppy joes

Adapted from The Kitchen McCabe

2 Onions (saute)
8 oz. Cremini or baby bella mushrooms, diced
1½ c. Lentils, cooked
1½ c. Wheat Berries, cooked
14.5 oz can Diced Tomatoes
8 oz. can Tomato Sauce
½ C. Ketchup(look for corn syrup free)
½ T. Worchestershire sauce
½ T. Soy Sauce
¾ t. Dijon Mustard
½ T. Apple Cider Vinegar
¼ C. Coconut Palm Sugar(or brown sugar)
¼ t. Chili Powder
¼ t. Paprika
½ T. Coarse Salt
⅛ t. White Pepper
1 Avocado, sliced

Saute onions for 10 min, then add mushrooms and saute.
Then add every thing else. I put in crockpot all day

Could make alot and freeze some seperately.

Guacamole

2 Avocados
splash of lemon juice or lime juice
1 tomato chopped
1 garlic clove or 1/2t garlic powder
salt and pepper

Mash up the avocados first with the lemon juice, then add everything else.

Breakfast Burritos and Enchiladas

Make additional burritos or enchiladas and put in freezer

Breakfast burritos

Saute onion
Add 4 eggs
Add leftover rice
Add chopped peppers
Add black beans

Add everything to a corn or flour tortilla then roll up and freeze half.  Then the burritos you are going to be eating- lightly saute the outside of tortilla. Love to have guacamole or avocados on top



Enchiladas

1 Can of enchilada sauce (or green chilies pureed)
Refried beans
Leftover rice
Add chopped peppers
Leftover turkey meat
cheese
Flour or corn tortilla

Lightly brown the tortilla in oil to give a crunch to them.  Then add everything to the toritilla and cook on stove top or in oven 350 20 minutes.  Love to have guacamole or avocados on top

Veggie Spaghetti Sauce

2 chopped onions
All The tops of one celery bunch (chopped)
1lb chopped Mushrooms
1 Green Pepper
cooked ground beef (optional)
5- 14oz cans of diced tomatoes
bay leaves
garlic
oregano

I saute the veggies till brown, then puree in the blender to hide them from my kids.
Then add everything to a pot and cook for a few hours.  Can serve on pasta noodles or spaghetti sauce.

Yummy
Can freeze for future dinners.
