Extra Creamy CrockPot Mac and Cheese

 

Spend With Pennies
Serves 6

2 cups uncooked elbow macaroni
10 ½ ounces condensed cream of chicken soup
3 cups cheddar cheese shredded
cup Gruyere cheese shredded
½ cup mayonnaise (or cream cheese0
½ cup sour cream regular or light
1 teaspoon onion powder
½ teaspoon dry mustard powder
½ teaspoon pepper

Boil macaroni noodles according to directions to make them very al dente. (I cook them for at least 1-2 minutes less than directed on the bag. Mine boiled for 5 minutes). Drain and rinse under cold water.

Combine all ingredients in a 4qt slow cooker and cook on high for 2 hours or low for 3 hours, stirring once or twice.

Optional- you can mix everything and then put in a oiled casserole dish
 350 degrees for 30 min

One time I made pasta the night before and then made sauce separately and then next day combined and warmed them up together

Best Baked Potato

Gimme some oven 

  • 1 medium-to-large Russet potato, scrubbed clean of any dirt
  • 12 teaspoons melted butter (or olive oil)
  • pinch of coarse Kosher salt
  • pinch of freshly-cracked black pepper
  1. Heat the oven. Heat oven to 450°F.  Line a large baking sheet with foil (or parchment*), and if you happen to own a wire cooling rack, place it on top of the baking sheet.
  2. Prep the potato. Using a dinner fork or a small paring knife, poke the potato at least 10 times on all sides.  Place the potato on the prepared baking sheet.
  3. Bake (round one). Bake for 25 minutes.  Remove baking sheet from the oven.
  4. Brush with butter (or oil).  Using a pastry brush, brush the outside of the potato with melted butter or olive oil until it is completely coated on all sides.  Sprinkle the potato with a generous pinch of Kosher salt, and place the potato back on the baking sheet reverse-side-up, so that it can cook evenly on both sides.
  5. Bake (round two). Bake for an additional 20 minutes.  Using an oven mitt, carefully squeeze the potato to check for doneness.  If the insides are soft and give under pressure, remove the potato from the oven.  Otherwise, continue cooking in 5-minute increments until the potato is soft.
  6. Cut the potato.  Using a small paring knife, slice halfway through the potato lengthwise.  Then give it a gentle squeeze to open.
  7. Serve.  Serve immediately, with your desired toppings.

3 Cauliflower Soup Recipes

Cindy Dixon made this recipe for a ward potluck and I WAS SOOOOO Surprised how delicious cauliflower can be!!!

#1 Cauliflower Soup

1 medium potato- peeled, diced (2-3c diced)
1 large cauliflower, cut or broken into florets (put aside 2 cups)
1 medium carrot, peeled, chopped
3 cloves of garlic
1 and 1/2 c chopped onion
1 and 1/2t salt
4 c water
2 c packed grated cheese (plus extra for garnishing)
3/4 c milk
1 t dill
1/2t caraway seeds
black pepper to taste


Place potato, cauliflower (except 2c), carrot, garlic, onion, salt and water in large sauce pan. Bring to boil, simmer until all veggies are very tender. Puree in a blender- transfer to large pot.
Steam the reserved cauliflower pieces until tender. Add to puree with all remaining ingredients. Heat gently- serve


#2 Creamy Roasted Cauliflower Soup

1 large head cauliflower (about 2 pounds), cut into bite-size florets
3 tablespoons extra-virgin olive oil, divided
Fine sea salt
1 medium red onion, chopped
2 cloves garlic, pressed or minced
4 cups (32 ounces) vegetable broth
2 tablespoons unsalted butter
1 tablespoon fresh lemon juice, or more if needed
Scant ¼ teaspoon ground nutmeg
For garnish: 2 tablespoons finely chopped fresh flat-leaf parsley, chives and/or green onions

INSTRUCTIONS
- Preheat the oven to 425 degrees Fahrenheit. If desired, line a large, rimmed baking sheet with parchment paper for easy cleanup.
- On the baking sheet, toss the cauliflower with 2 tablespoons of the olive oil until lightly and evenly coated in oil. Arrange the cauliflower in a single layer and sprinkle lightly with salt. Bake until the cauliflower is tender and caramelized on the edges, 25 to 35 minutes, tossing halfway.
- Once the cauliflower is almost done, in a Dutch oven or soup pot, warm the remaining 1 tablespoon olive oil over medium heat until shimmering. Add the onion and ¼ teaspoon salt. Cook, stirring occasionally, until the onion is softened and turning translucent, 5 to 7 minutes.
- Add the garlic and cook, stirring constantly, until fragrant, about 30 seconds, then add the broth.
- Reserve 4 of the prettiest roasted cauliflower florets for garnish. Then transfer the remaining cauliflower to the pot. Increase the heat to medium-high and bring the mixture to a simmer, then reduce the heat as necessary to maintain a gentle simmer. Cook, stirring occasionally, for 20 minutes, to give the flavors time to meld.
- Once the soup is done cooking, remove the pot from the heat and let it cool for a few minutes. Then, carefully transfer the hot soup to a blender, working in batches if necessary. (Do not fill past the maximum fill line or the soup could overflow!)
- Add the butter and blend until smooth. Add the lemon juice and nutmeg and blend again. Add additional salt, to taste (I usually add another ¼ to ¾ teaspoon, depending on the broth). This soup tastes amazing once it’s properly salted! You can also a little more lemon juice, if it needs more zing. Blend again.
- Top individual bowls of soup with 1 roasted cauliflower floret and a sprinkle of chopped parsley, green onion and/or chives. This soup keeps well in the refrigerator, covered, for about four days, or for several months in the freezer.

#3 Amy's creation Cauliflower Soup

Based on both recipes above I created my own-

green cauliflower- 1 head of chopped
4 garlic cloves
1 lb of mushrooms
1 sliced onion
1 medium potato- peeled, diced
1 medium carrot, peeled, chopped
can add lemon juice or the caraway seeds
4 cups (32 ounces) vegetable broth

Roast cauliflower, garlic, mushrooms, onion, potato, carrot at 435 for 35 min
Add broth and the roasted vegetables to a pot and cook for 20 min.
carefully transfer the hot soup to a blender, working in batches if necessary.

A weekend with Rochelle Lunt

WILD RICE SOUP WITH CHICKEN 
3 c. cooked rice
1 c. chopped celery
1/2 c. chopped green pepper
1 c. minced carrot
1/2 c. chopped onion
Dash of garlic powder
Salt and pepper
1/4 c. butter
1 (8 oz.) can mushrooms
2 cans cream of chicken soup
2 cans cream of mushroom soup
1 1/4 c. chicken broth
4 c. chicken, cooked and cubed
1 (4 oz.) pkg. slivered almonds
Milk - for desired consistency

Prepare wild rice using "Basic Oven Method" (below) with water and bouillon. Meanwhile, stir together soups and add at least 1 cup chicken broth. Set aside.

Melt butter and saute celery, mushrooms and carrot; cook 1 minute more. Combine sauteed vegetables, soup mixture, chicken and wild rice. Add milk to reach desired consistency. Simmer 30 minutes. Do not boil! Garnish with slivered almonds. Serves 8 to 10.

WILD RICE BASIC OVEN METHOD:

1 c. raw wild rice
3 c. boiling water
2 tsp. butter
Dash pepper
3 tsp. chicken bouillon
1 tsp. salt, if not using bouillon

Rinse wild rice with cold water 3 times, discarding what floats. (I suggest soaking overnight before baking.) Put rice, water, bouillon or salt in a 2 quart covered baking dish. Cover and bake at 350 degrees for 1 1/2 hours. Check after 1 hour and if quite dry, add more water and fluff with a fork. Place reserve rice in a plastic bag and seal and freeze. A double recipe saves prep time and it freezes well.



        1 onion chopped and sauteed
         3-4 minced garlic cloves or 1\2t garlic powder
  • 24 ounces frozen shredded potatoes
  • salt and pepper
  • 12 eggs
  • 2 cups half and half
  • 1 teaspoon season salt
  • 1 1/2 cup cheddar cheese grated
  • 1 1/2 cup pepper jack cheese grated
  • 2 cup chopped ham (Or your preferred meat, sausage, bacon would also be great)
  • (lily said to add green chilies when we make it)


Instructions
 

  • Grease a 9x13 inch pan. Add the frozen shredded potatoes to the bottom of the pan. Sprinkle with salt and pepper.
  • In a large bowl, whisk the eggs together. Then add half and half, season salt, cheddar cheese, pepper jack, and chopped ham.
  • Pour over the top of the frozen potatoes. Cover with foil and refrigerate for 2 hours or overnight.
  • Bake uncovered at 350 degrees for 90 minutes. Let rest for 10 minutes before serving.      
12\30\21 One Time I cooked the hash browns in the oven at 470 for 40 minutes with salt,  pepper, oil pepper and oil. Then Added to the 9 x13 pan, Then cooked in the oven
I put the cooked hashbrowns on the bottom of the 9x13 pan with the egg, cheese, and meat mixture on top of it. Cooked at 460 degrees for 30 min. Turned out delicious


1 (18.25 ounce) package spice cake mix
1 (15 ounce) can solid pack pumpkin
1 egg 

-Preheat oven to 350 degrees F (175 degrees C). Grease cookie sheets.
-In a large bowl, stir together the cake mix and pumpkin until well blended. Drop by rounded spoonfuls onto the prepared cookie sheet.
-Bake for 11-13 minutes in the preheated oven. Allow cookies to cool on baking sheet for 5 minutes before removing to a wire rack to cool completely.

Breakfast burritos

Makes 8 burritos

Once Upon A Chef

FOR THE AVOCADO-TOMATO SALSA-


  • large avocado, peeled, pitted, and diced
  • 1/2 cup diced seeded tomatoes, from 1 to 2 tomatoes
  • small shallot, minced (about 2 tablespoons)
  • 1 clove garlic, minced
  • 1 jalapeño pepper, seeded and minced
  • 1 tablespoon fresh lime juice, from 1 lime
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground cumin
  • 1/4 cup fresh chopped cilantro

Egg Burrito- 

1 onion chopped and sauteed
8 eggs
30oz hashbrowns
1/2 teaspoon smoked paprika
  • 1/2 teaspoon salt
  • 1/2 lb spicy sausage (such as chorizo, Italian, or anything you like), removed from casings
  • 1-2c (6 oz) shredded Monterey Jack cheese
  • 4 (10-in) burrito-size flour tortillas
  • Vegetable oil

 Cook hashbrowns in oven 400, spray pan with oil, put frozen browns on top, drizzle oil and salt and pepper on top.  cook 40-50 min

Cook sausage on stove top.
In bowl combine- eggs, paprika, salt. 
On stove top, Cook  the egg mixture. In the middle of the flour tortilla layer sausage, hashbrowns, cooked egg mixture and salsa , top with cheese. Roll up 3 sides of the tortilla.

  1. Lightly coat the pan with oil and set over medium heat. When the pan is hot, add the burritos, seam side down. Cook, covered, until the bottom of the burritos are golden brown, about 3 minutes. Flip the burritos over and continue cooking, covered, until golden, a few minutes more. Serve warm.

made 15 burritos- 15 eggs
Can freeze tortillas without the salsa. Fill the tortillas and roll up and wrap  individually with saran wrap. To reheat put in oven 350 for 15-20 min

Cheesy Potato Bacon Soup

INGREDIENTS

  • 6 large potatoes, peeled & diced
  • 1 medium onion, chopped
  • 1 ¾ qts chicken broth (that equals
  • 7 cups chicken broth)
  • 1 cup flour
  • 2 cups cheddar cheese, shredded
  • 1 qt heavy cream (I use milk) (or could use cream cheese and little mayo)
  • ½ lb bacon, cooked & cut up

DIRECTIONS

Mix first 5 ingredients in crockpot. Cook on low 6-8 hours or on high for 3-5 hours.
A half hour before end of cooking time add last three ingredients.

NOTES

Don't add bacon until ready to eat.

Broccoli Salad with Bacon

  • I received this recipe from a friend at a summer party, it was so crazy delicious and so simple.
8 cups chopped broccoli florets
6 ounces sharp cheddar, cut into small cubes
¼ cup diced red onion
¼ cup thinly sliced almonds
8 slices bacon, fried and crumbled
½ cup mayo
¼ cup sour cream
2 tablespoons ranch seasoning mix
1 teaspoon white distilled vinegar

DIRECTIONS

Add the broccoli, cheddar, onion, almonds, and bacon to a large mixing bowl and stir to combine.
Add the mayo, sour cream, ranch seasoning, and vinegar to a small mixing bowl and stir well.
Pour the dressing over the broccoli salad and stir well to coat.
Serve immediately.

Crockpot Taco Dip




Ingredients
1 lb Ground Beef Browned & drained
1 16oz can Refried Beans
2 cups Shredded Mexican Cheese Blend divided
1 cup mild or medium salsa
1 8 oz package cream cheese softened
1 cup sour cream plus additional for serving
1 package taco seasoning
Tortilla Chips for serving
Taco Toppings for serving sliced olives, jalapenos, tomatoes, guacamole, etc

Instructions
In your crockpot stir together browned ground beef, refried beans, salsa, 1 cup cheese, cream cheese, sour cream and taco seasoning. Once blended well spread out evenly with a spatula.
Top with remaining shredded cheese, cover and cook for 2 hours on high.
When done remove lid and top with additional sour cream, sliced olives, sliced jalapenos, or whatever taco toppings you like.  
  • Enjoy with some tortilla chips.

Pressure Cooker Mac N Cheese

Ingredient List
  • I box (16 ounce of elbow macaroni)
  • 1 cup of heavy whipping cream ( 1 can of evaporated milk(12 ounce) would work or even whole milk)I think I added a little more till I got the consistency I was looking for- (Tablespoon at a time)
  • 3 Tb of butter
  • 2 tsp salt
  • 2 cups of shredded Sharp cheddar cheese
  • 4 cups of water
Bring water, salt, and butter to boil first, then Add macaroni and lock lid on. When it is steaming/venting then start time for 6 minutes for white pasta and 7-8 minutes for whole wheat pasta (take about 5 min to build pressure).
Then put the cooker with the lid on, in the sink run cold water over it to make it cool down fast.
Put pot back on stove, pour in whipping cream, cheese and stir till it melts. and Enjoy!!!

4/16/18 I used whole wheat noodles the first time and I think it needed to cook 7-8 minutes. So remember than for next time.

Sour Creamy Enchiladas


1lb chicken breast, diced (Or leftover chicken)
medium onion, minced
1 garlic clove
tablespoon vegetable oil
(8 inch) flour tortillas, softened
12cups grated monterey jack cheeseor 1 12 cups Mexican blend cheese, divided
1⁄4  cup butter
1⁄4  cup flour
1   (15 ounce) can chicken broth
1   cup sour cream or cream cheese
1  (4 ounce) canchopped green chilies or 2 fresh chili peppers, minced


  1. In a frying pan, cook chicken, garlic and onion together in oil over medium-high heat until chicken is just done.
  2. Divide cooked chicken evenly between 8 tortillas; add 1 1/2 tablespoons cheese to each tortilla.
  3. Roll enchiladas and place seam-side down in a 9x13" baking dish that has been lightly sprayed with no-stick cooking spray.
  4. Melt butter in a medium saucepan; stir in flour to make a roux, stir and cook until bubbly, and gradually whisk in chicken broth then bring to boiling, stirring frequently.
  5. Remove from heat; stir in sour cream and green chilies.
  6. Pour sauce evenly over enchiladas.
  7. Top with remaining 3/4 cup cheese (a baking dish may be double-wrapped and frozen at this point) and bake at 400° F for 20 minutes until cheese is melted and sauce near edges of baking dish is bubbly.

Sausage-Hash Brown Breakfast Casserole

12/20/17 It was okay, I'm not much of a casserole for any meal.

My Recipes

1 pound mild ground pork sausage
1 onion
1 chopped red pepper sauteed
1 (30-ounce) package frozen hash browns
1 1/2 teaspoons salt, divided
1/2 teaspoon pepper
1 cup shredded Cheddar cheese
6 large eggs
2 cups milk

Can assemble and prepare a couple days before hand. Cover with plastic wrap and let sit in the fridge. Then cook the day you want to eat it.
Cook sausage in a large skillet over medium-high heat, stirring until sausage crumbles and is no longer pink. Remove sausage and Saute onion in sausage oil for 5 plus min, then add red pepper for a few minutes.
Prepare hash browns according to package directions, using 1-1/2 teaspoon salt and pepper. I put hashbrowns in oven at 400 on a oiled cookie sheet. Place the cookie sheet with hash brows in the preheated oven and cook for 15-30 minutes. After 15-30 minutes, remove from the oven, and give them a toss. Place back in the oven and cook another 15 minutes, or until crispy.
Stir together hash browns, sausage, and cheese. Pour into a lightly greased 13- x 9-inch baking dish.
Whisk together eggs, milk, and remaining 1 teaspoon salt. Pour evenly over potato mixture.
Bake at 350° for 35 to 40 minutes.

optional- Top with sliced avocados, pico de gallo, and a dollop of sour cream and sprinkle with green onions.

Crockpot Hawaiian Haystacks

1 c sour cream
1c plain yogurt
1 can cream of chicken soup
1/3 of the can fill with water
chopped onion
Frozen Chicken Breasts
Garlic powder and Italian seasoning
rice

Put everything in crockpot 2-3 hours on low. Then take out all the chicken and shred it, then put it back in to cook for 1-2 hours.
After it has thoroughly cooked add 1 c of sour cream and 1 c plain yogurt

Top with sliced olives,
chopped tomatoes
chopped celery
sliced pineapple
crunchy lo mein noodles
shredded cheese
green onions
red, orange, yellow peppers
