I went to a Airbnb in logan and lisa made these fantastic pumpkin muffins and then added the granola to the top of the muffins. The crunch of the granola was just amazing and perfect on the soft delicious muffin.
8 c oats
1 1/2 c brown sugar
1 1/2 c wheat germ
6 c coconut
2 c almonds
2 c cashews
1/2 c sunflower seeds
1/2 c pumpkin seeds
2 c pecans
2 c hazelnuts, filberts or peanuts
Mix well in large bowl
Bring to boil-
1/2 c water
1/2c oil
1/2 c honey
1/2 c peanut butter
2 t vanilla
Add wet ingredients to dry, mix well. Spread on 2 large cookie sheets
Bake 275 for 2 hours, Mixing well every 30 min

Chia Breakfast Pudding/Snack
Unconventional Kitchen
Makes 1 serving, double or triple for more
1 C almond, coconut or rice milk
1 C plain Greek yogurt
2 Tbsp pure maple syrup, or honey
1 tsp vanilla
⅛ tsp salt
¼ C chia seeds
ground flax
Fruit, fresh or frozen (I love berries, bananas, pineapple or mango in it)
Almonds or granola for topping
Preparation
Mix milk, yogurt, sweetener, vanilla and salt until just blended.
Whisk in the chia seeds.
Let stand for 30 minutes. Stir to distribute the seeds. Cover and refrigerate overnight.
In the morning top with fruit, almonds, etc. and serve. You can even drizzle more honey or maple syrup on individual servings if you want it a little sweeter.

Grape Crepes
Original recipe Makes 12-15 crepes, next time double it for family of 5 to have extras or freeze the crepes.

6 3 eggs
2 1 cup whole-wheat flour
2 1 cup milk
1 1/4c ¾ cup water
1/2 ¼ teaspoon salt
2 1 tablespoon butter, melted + extra for cooking

2 1 scoop of protein powder (optional, if you add it- add a little more milk)
- put all ingredients in blender or bowl and mix well. Let stand about 15 minutes.
- Melt and swirl around a small pat of butter in an 8 or 10-inch frying pan over medium heat.
- Angle pan and pour enough batter on one side to thinly and evenly cover the pan. Very quickly swirl the batter around to cover the pan in one thin layer.
- Immediately use your cooking spatula to push down the thin edges of the crepe around the perimeter.
- After about 1 minute (and once it is golden brown on the bottom) carefully flip it over without tearing the crepe.
- Fry for 1 more minute on the other side (until it is golden brown as well) and then roll up each crepe.
Serve with 100% pure maple syrup or plain yogurt, granola, grape sauce and sometimes chloe likes to put peanut butter on them.
Grape OJ sauce-
Double Original
4T 2T Butter
6T 3T Frozen condensed OJ
6T 3T Any type of fruit juice
2c 1c halved grapes
cinnamon and/or allspice
melt 2 T butter in pan
Whisk and Add 2-3T condensed OJ
Add 2-3T water of any type of juice
Add 1c sliced grapes and let warm up 5min
Can add cinnamon or allspice
I like to zest some of the outside of 1 orange, and dice up the orange into the sauce

Blueberry sauce or use blackberries instead of blue berries

German Pancakes

12 6 eggs
2 1 cup 2% milk
2 1 cup all-purpose flour (we used whole wheat flour, just made the pancake not as fluffy)

4 2 tablespoons butter, melted or coconut oil

In a bowl, combine the eggs, milk, flour and salt; cover and mix until smooth. I used solidified coconut oil and spread it on 13-in. x 9-in. baking dish; add the batter. Bake, uncovered, at 400° for 20 minutes.
We like fresh cut bananas, thinly sliced apples, peaches, pears, granola, plain yogurt, honey/syrup.
Goes well with Chopped Apples

Coconut Granola

Serves very well with Homemade Yogurt
In a large bowl, combine the oats, cashews, almonds, sunflower seeds, pumpkin seeds, shredded coconut, flax/chia, salt and cinnamon and set aside.
In a medium saucepan, melt the oil or butter, agave and brown sugar until the sugar has completely dissolved. Remove the mixture from the heat and stir in the vanilla extract.
Pour the butter mixture over the oat mixture and stir to combine until everything is well coated.
Spread the granola mixture onto a parchment-lined baking sheet, leaving a few large clumps.
Bake the granola for 15 minutes. Remove from the oven and break up the pieces to ensure even baking. Place the baking sheet back into the oven for another 15 minutes. Bake till brown
Remove the sheet pan from the oven and give it one more toss to break up some of the pieces and place back into the oven for the last 10 minutes.
Remove the baking sheet from the oven and let it cool completely. Once cooled, add the chocolate chips and the dried cranberries/raisins. Give it a quick toss with a spoon and then package into mason jars or brown paper bags to store.
This can be made days or weeks before you need it and freeze it until you want to use it.

- ¾ cups Almond, Roughly Chopped

- ½ cups Dark Chocolate Chips ( I have left them out)
- ½ cups Dried Cranberries or raisins ( I have left them out)

Applesauce Mix (set aside)
4 eggs
3/4c applesauce
1/4c oil
1c sugar/agave/honey/maple syrup
350 degree 20-25min (small tins) or 35 min (large tins).

Mix in a HUGE bowl
1 quart buttermilk
4-5c wheat flour
1 c chopped walnuts/almonds
3-4 ripe smashed bananas
Add the apple sauce mixture and the baking soda mixture
4 c All bran cereal (or whole/multigrain grain cereal)
2 c bran flakes
Optional- I add: 1/4 c chia seeds, 1/2c pureed flax, sunflower seeds, and pumpkin seeds (pureed in blender)
Optional- add right before you cook raisins or choco chips
Cover and refrigerate overnight. This mixture gets thicker in the fridge overnight.

I like to pour the mixture in a pitcher, that way the bowl doesn't take up a whole shelf and it is easy to pour in the muffin tins. Spray tins or use cupcake baking cups.

made it again and so delicious.
This time, for 10 hours I had regular milk and half and half sit on the counter with lemon juice and apple cider vinegar to create buttermilk.
Honestly I started mixing everything at 8 am in the morning, but I COULDN'T actually cook them till 2pm b/c I had a full day of stuff to do. So the mixture sat on the counter obediently till I was ready.
One fun challenge-
I didn't have bran cereal or bran flakes so I did-
2 c dry oats (pureed to powder in the blender)
1 c cornmeal
4 c white flour
1 c protein powder pancake mix
1c frosted shredded wheat cereal (pureed to powder in the blender)
1/2 c of random whatever cereal crumbs in the pantry that the kids didnt want to finish
