Sourdough Sandwich Bread

SERVINGS: 


  • 1/2 cup buttersoftened or coconut oil
  • 2 tablespoons honey or sugarIf using sugar, note that it will be 24 g
  • 1 tablespoon salt
  • 1 cup starteractive and bubbly
  • 2 1/2 cups water
  • 8 cups all purpose flour*

Instructions 

  • 1- In a bowl mix by hand, add all of the ingredients. I like to add the flour last, so I can add a bit less or more depending on my starter's hydration.
  • 2- Knead until dough is stretchy and smooth. You want it to pull away from the sides of the mixing bowl and be smooth and elastic – about 10 minutes. It should pass the windowpane test.
  • 3- Allow to bulk rise for 10-12 hours in a warm place like on top of a stove or refrigerator.
  • 4- Divide in two equal parts.
  • 6- Shape by rolling the dough flat into a rectangle and rolling it up.
  • 7- Add to parchment lined or buttered loaf pans.
  • 8- Second rise for 2-4 hours at room temperature, or until doubled.
  • 9- Bake at 375 for 45 minutes, or until golden on top. You can add an optional egg wash for more browning.
  • Allow to cool completely before slicing.

Take sourdough mix out of  fridge let sit for 30 min to warm up to room temperature
4/5pm            Add flour and water, to the starter-      mix and let sit for 30min-4 hours
8/9pm         To make the Sandwich bread- Add and mix All the ingredients above ( butter, honey, salt, starter, water, flour)
9pm               1st rise- let sit overnight or all day on the counter (10-12 hours)                

The next day
7am                2nd rise- separate into two loves. put into buttered bread pans, let rise for 2-4hours
12pm               Cook the dough

Sugar free No bake cookies

 12 tomatoes

  • 3 cups quick-cooking oats
  • 3/4 cup honey
  • 2/3 cup natural peanut butter, optional
  • 1/2 cup coconut oil
  • 1/3 cup unsweetened cocoa powder
  • 1 1/2 teaspoon vanilla extract
  • 1/4 teaspoon salt
PREPARATION
  1. Line 2 baking sheets with parchment paper.
  2. In a medium saucepan over medium-high heat, combine honey, peanut butter and coconut oil, stirring until everything blends together smoothly.
  3. Stir in oats, cocoa powder, vanilla and salt and mix until everything is fully incorporated and coated.
  4. Use a spoon or small ice cream scoop to drop cookies down onto parchment-lined baking sheets, then place in freezer for at least 15 minutes to set.
  5. Store in an airtight container either in the fridge or freezer (depending on how you like them) and enjoy!

Alli Amazing Blueberry Muffins

Muffins
Makes 12-24 muffins
Preheat oven 400, cook for 20 min

4c            1 3/4- 2c flour
1c    1c sugar
1t             1/2t salt
4t             2 t baking powder
2/3c         1/3c vegetable oil(one time I used applesauce)
2eggs      1 egg
2/3c         1/3c milk (can use buttermilk and one time I used egg nog)
1/2c         1/4 c cubed butter (put pureed bananas in place of butter)
3t             1 1/2t cinnamon
2c            1 c fresh blueberries (I used frozen)
I did add some protein powder


Topping- sprinkle over muffins before you cook
2/3c         1/3c flour
1/2c         1/2c sugar(I didnt double the sugar)
1/4c         1/4c cubed butter (I didnt double the butter, one time I used coconut oil- worked great)
1t             1/2t cinnamon

Mix the dry ingredients first, then stir the liquid ingredients in a well in the middle of the dry ingredients. Mix it all together. Fold the blueberries in. Put the paper muffin cups in the muffin pan. Plop the muffin mixture in the muffin pan.

Mix the topping ingredients in a bowl. Pour on  top of the muffins.

8/1/20 so delish, double the recipe next time
11/21/20 I used egg nog in place of milk and applesauce in place of oil.

Naturally Sweetened Gluten-free Chocolate Cake


Simply Divine Eating

½ c. coconut oil, ghee, pasture-raised butter, or pasture-raised lard
18 medjool dates, pitted and soaked in hot water 15 min.
2 Tbl real maple syrup
2 eggs
½ c. cocoa
2 c. oat flour
1 c. sour milk (or add 1 tsp lemon juice or vinegar to regular milk or coconut milk)
2 tsp baking soda
1 c. warm water
2 tsp vanilla

Instructions:
Preheat oven to 375’.
Measure lard, butter, ghee or coconut oil into large bowl, set aside.
Drain dates and squeeze water from them. Combine dates, syrup and eggs in blender and blend till very smooth.
Add date mixture to lard or butter and mix well.
In separate bowl measure flour and cocoa and set aside.
Measure sour milk and set aside.
Alternately add the flour mixture and the milk to the date mixture. Add ¼ c.- ⅓ c. of the flour to dates and mix well, then add ¼ c. to ⅓ c. of milk to date mixture and mix well. Keep alternating until both milk and flour are incorporated.
Measure baking soda into 1 c. warm water and stir well. Add soda water to cake and beat to combine. Add vanilla to batter and beat.
Grease and flour a 9 x 13 pan and pour batter into pan. Bake at 375’ for 30 min or until toothpick inserted in the middle comes out clean. This makes a yummy dense cake that disappeared even without being frosted.

6 T coconut oil, butter, or ghee (I use coconut oil)
1/2 cup cocoa
1/4 cup raw honey
1/4 cup nut butter, sunflower seed butter, or tahini
Pinch pink salt
2 t vanilla
½ cup winter squash puree (butternut, pumpkin, etc.)
Instructions:
On the stovetop on low heat, melt together the coconut oil, cocoa, honey, and nut butter.  Remove from heat and stir in the salt, vanilla, and squash puree. Or be lazy (scratch that…efficient) like me and just throw all the raw ingredients together in the food processor.  This recipe makes a fudgy frosting that will set up fairly solid, so I spread it immediately and then let it set.

CHOCOLATE CHIP COOKIE PIE


3 tablespoons coconut oil, melted (or other oil of choice, plus additional oil to grease the pan)
4 cups  
cannellini beans/chickpeas/pinto, drained and rinsed (can also use two-15 ounce cans )
1 cup quick oats (gluten-free oats if necessary)
2 teaspoons vanilla extract
½ teaspoon baking soda
2 teaspoons baking powder
½ teaspoon salt
1½ cups brown sugar
1 cup dark chocolate chips
¼ cup applesauce (unsweetened)
OPTIONAL: 1 tablespoon flax meal


METHOD
Preheat oven to 350 degrees and oil a 13 x 9 pan. I first pureed the beans by themselves for 2-5 minutes to make sure they were really smooth. Combine all ingredients except chocolate chips in a food processor and process very well until you achieve a batter consistency (this took about a 60-90 seconds in my Kitchenaid food processor). Fold in chocolate chips. Spread batter in the pan and bake for a total  of  40 minutes. After 10 minutes of cooking I sprinkle a handful of chocolate chips on top. Cool 10 minutes and remove from the pan.


I don't like them right after they are cooked I think they taste too beany and mushy. I put them in the fridge overnight and let them sit. They are definitely soft and moist.

Vegan Cream Cheese frosting

Detoxinista

  • 1 large Hannah sweet potato (white flesh)
  • 1/2 cup maple syrup (at room temperature)
  • 6 tablespoons coconut oil (melted)
  • 2-4 tablespoons water
  • 1 teaspoon fresh lemon juice
  • 1 teaspoon apple cider vinegar
  • 1/8 teaspoon salt
Instructions
  1. To prepare the sweet potato, peel and cut it into 1-inch chunks. In a pot fitted with a steamer basket, bring 1-inch of water to a boil and steam the potato chunks until fork-tender, about 10-15 minutes. 
  2. Transfer the steamed potato chunks into a 1-cup measuring cup and mash them with a fork to tightly pack the cup all the way to the top. (Reserve any remaining sweet potato for a future smoothie or salad topper.)
  3. Transfer the mashed sweet potato to a blender, and add in the maple syrup, coconut oil, 2 tablespoons of water, lemon juice, apple cider vinegar, and salt. Blend until silky smooth.
  4. If the mixture isn't blending well, add more water 1-2 tablespoons at a time until very smooth. Be careful not to add too much water or the frosting will be too runny. Once smooth, transfer the frosting to an airtight container to store in the fridge. 
  5. This frosting will thicken overnight and can be spread over your favorite cakes, bars, or cookies. Be sure to keep the frosting refrigerated for best texture, though it can sit out at room temperature for several hours for serving. It should last up to a week when stored in the fridge.

LENTILS WITH SPINACH OVER RICE

INGREDIENTS

2 cups brown rice, cooked according to packaging (I actually prefer it on a sweet potato, not rice)
1 tablespoon coconut oil (substitute olive oil)
onion, diced
2 cloves garlic
½ tomato, diced (large)
1 teaspoon curry powder
½ teaspoon ground turmeric
¼ teaspoon chili powder (less for baby food option) (I didn't add)
1 cup lentils (red), rinsed with cold water (I only had brown)
2 cups baby spinach, coarsely chopped (finer chop for baby food) (I didn't add)
⅔ cup culinary coconut milk (not coconut milk beverage) (I didn't add, but I did add water)
½ teaspoon salt
dash black pepper
chicken 1/4-1/2t boullion
sweet potato

METHOD

I sauteed onions, then added lentils, tomatoes, turmeric, curry, 1/2c water, boullion, salt and pepper cooked for 10 mintutes.  I ate the lentil mixture on top of a sweet potato, it was so delicious!!!
Cook rice while preparing lentils. Heat oil in a medium saucepan. Cook onions until soft, about 3-4 minutes, add garlic and cook another 1-2 minutes. Add tomato and cook until soft, about 2 minutes. Add curry powder, turmeric and chili powder and mix. Add lentils and enough water to cover lentils by ½ inch. Cook for 5-8 minutes until lentils are soft. Add spinach and coconut milk and simmer another 1-2 minutes until spinach is wilted. Season with salt and pepper and add more to taste. Serve over brown rice.
BABYFOOD OPTION:
When I was a child, I spent many summers in my parents' native country of Sri Lanka, an island nation in the Indian Ocean. I have watched my cousins and family friends feeding babies and noticed that people generally do not buy baby food in Sri Lanka. Instead, babies are offered an array foods like nutritious meat and vegetable curries, spiced mildly, with rice (which is usually started at about one year of life). One common early finger food is rice mixed with lentils or other meats and vegetables and shaped into small sticky balls. These little rice balls can be easily fed to babies by hand or given to babies to feed themselves. (see picture and recipe below for “Rice Balls with Lentils”). Take about a cup of cooked brown rice. Add a teaspoon of the lentil spinach mixture and mix with your hand. Add more lentils by the teaspoon and keep mashing until you can form the mixture into ¾ inch balls. This can make a great school lunch for slightly older kids, too!

VEGAN CHEESECAKE


Minimalist Baker

CRUST

  • 1 cup packed pitted dates*
  • 1 cup raw walnuts ( I used almonds)
  • 1/2t salt
  • 2 T coconut oil (maybe omit next time, see how it turns out)

FILLING

  • 1 1/2 cups raw cashews (quick-soaked*)
  • 1 large lemon (juiced or 1/4 cup or 50 ml) plus 1/2t
  • 1/3 cup coconut oil (melted)
  • 2/3 scant cup full-fat coconut milk (see instructions for note)
  • 1/2 cup agave nectar or maple syrup (or honey if not vegan) ( I did 1/4c sugar and 1/4c honey)
  • 1/4t salt
  • 1 t vanilla

FLAVOR ADD-INS optional

  • 2 Tbsp salted natural peanut butter
  • 1/4 cup wild blueberries (fresh or frozen)
  • 3 Tbsp bourbon caramel sauce

Instructions

  1. Add dates to a food processor and blend until small bits remain and it forms into a ball. Remove and set aside.
  2. Next add nuts and process into a meal. Then add dates back in and blend until a loose dough forms - it should stick together when you squeeze a bit between your fingers. If it's too dry, add a few more dates through the spout while processing. If too wet, add more almond or walnut meal. Optional: add a pinch of salt to taste. I must've added too much dates b/c mine was a wet, goopy delicious mess. I still used it
  3. Lightly grease a standard, 12 slot muffin tin (or put in paper cupcake holders). To make removing the cheesecakes easier, cut strips of parchment paper and lay them in the slots. This creates little tabs that makes removing them easier to pop out once frozen.
  4. Next scoop in heaping 1 Tbsp amounts of crust and press with fingers. To pack it down, use a small glass or the back of a spoon to compact it and really press it down. I found the bottom of a glass works well. If it sticks, separate the crust and the glass with a small piece of parchment. Set in freezer to firm up.
  5. Add all filling ingredients to a blender and mix until very smooth. For the coconut milk, I like to scoop the "cream" off the top because it provides a richer texture. But if yours is already all mixed together, just add it in as is.
  6. You don't need a Vitamix for this recipe, just a quality blender. I mixed mine for 1 minute, then "liquified" or "pureed" it until silky smooth. If it won't come together, add a touch more lemon juice or agave or a splash more coconut milk liquid as the liquid should help it blend better.
  7. Taste and adjust seasonings as needed. If adding peanut butter, add to the blender and mix until thoroughly combined. If flavoring with blueberry or caramel, wait and swirl on top of plain cheesecakes (optional).
  8. Divide filling evenly among the muffin tins. Tap a few times to release any air bubbles, then cover with plastic wrap and freeze until hard - about 4-6 hours.
  9. Once set, remove by tugging on the tabs or loosening them with a butter knife. They should pop right out. Our favorite way to devour these was with a little more caramel and a touch of coconut whipped cream. But they're perfect as is! Keep in the freezer for up to 1-2 weeks.
  10. Optional: You can set them out for 10 minutes before serving to soften, but I liked them frozen as well.

Notes

*If your dates are not sticky and moist, you can soak them in warm water for 10 minutes then drain. But be sure to drain thoroughly and pat dry to prevent the crust from getting soggy.
*To quick-soak cashews, pour boiling hot water over the cashews, soak for 1 hour uncovered, then drain and use as instructed. ( I did This)

11/24/18 I absolutely loved the final product. Next time leave out the coconut oil in the crust. I think that made it become like nut butter, still delicious but definitely not crust like.

Gluten Free Zucchini Bread & muffins


Column on left is for one loaf pan.  Column on right is a doubled recipe for 1 loaf pan and 16 muffins

Dry Ingredients
Original            Double
1 ¾ c                3 ½ c GF flour (half blanched almond flour and gluten free all purpose blend)
2 t                    4 t baking powder
½ t                   1 t baking soda
½ t                    1t salt
2t                      4t cinnamon
¼ t                   ½ t nutmeg (or pumpkin spice)

Wet Ingredients
¼ c                    ½c brown sugar
½ c                    1c sugar (decrease next time to 1/2c)
2                        4 eggs
1 c                     2 c zucchini
1/3 c                  2/3 c coconut oil or any oil
¼ c                    ½ c almond milk
1t                       2t lemon juice
2t                       4t vanilla
2-3T                  ¼ c flax


Preheat the oven to 350F. Grease 1 loaf pan with cooking spray or coconut oil and put cupcake liners in cupcake pan.

  1. In a medium bowl, combine the dry ingredients. Whisk to evenly distribute.
  2. On stove heat eggs, coconut oil, almond milk, lemon juice, and vanilla and whisked constantly for 1 min. In a separate bowl- whisk the brown sugar, white sugar and the egg mixture. Add the zucchini and mix for 30 seconds to combine. Add the walnuts or chocolate chips and stir to combine.
  3. Pour the batter into the prepared loaf pans. Bake for 45-50 minutes loaf pan and 22-25 minutes for muffins, until set in the middle. Let sit in the pan for 10 minutes to cool, then turn out onto a wire rack to continue cooling. Store leftovers wrapped tightly in plastic wrap at room temperature. Enjoy!

Gluten free Brownies


2/3 cup semi-sweet or dark chocolate chips (I use dairy free chocolate chips)
5 Tbsp coconut oil (can sub butter, avocado oil, vegan butter, ghee)
2/3 cup coconut sugar (can sub white, brown, or maple sugar)
2 eggs
1 tsp vanilla extract
2/3 cup blanched almond flour
2 Tbsp unsweetened cocoa powder
1/2 tsp baking soda (if paleo) or baking powder
1/4 tsp salt
TO MIX IN:
2/3 cup additional chocolate chips or chopped chocolate (can sub nuts)
OPTIONAL: COARSE SEA SALT TO SPRINKLE ON TOP
INSTRUCTIONS
Preheat oven to 350 degrees. Line an 8×8 baking pan with parchment paper or spray with nonstick spray.
In a small saucepan, gently melt chocolate and oil over low heat until smooth and glossy. Remove from heat and set aside to cool slightly.
In a small bowl, whisk together sugar and eggs until slightly lighter in color and until they pass the ribbon test (when you lift the whisk the mixture should stream down evenly in “ribbons”). Set aside.
In a medium bowl, whisk together the dry ingredients–almond flour, cocoa, baking soda, and salt.
Working slowly, whisk the egg/sugar mixture into the saucepan of melted chocolate. Whisk until smooth. Stir in vanilla and mix in.
Stir in the dry ingredients and fold until just mixed.
Fold in the additional chocolate chips.
Pour batter into your prepared pan and smooth the surface.
Bake at 350 degrees 20-24 minutes, or until edges are set and the center is still ever so slightly underdone. (The remaining heat should set the center as it cools)
  • Sprinkle with coarse salt, if using, and allow brownies to cool before slicing.

Peanut Butter Cups

        I only had granulated sugar and it wasnt good when I added it to the chocolate mixture. It actually made the chocolate grainy and not smooth like a peanut butter cup should be.  I warmed up the choco mixture on the stove b/c coconut oil was solid. So I put the chocolate mixture into the high power blender and it made it more smooth, it worked really well. Next time use powdered sugar or honey or maple syrup. But the granulated sugar still was successful
       Mine weren't even layers and smooth, but oh well, definitely still delicious. Its My first try

INGREDIENTS

BOTTOM LAYER (CHOCOLATE)

TOP LAYER (PEANUT BUTTER)

  • 1/3 cup all natural peanut butter, creamy
  • 2 tablespoons coconut oil, melted
  • 1 teaspoon vanilla extract
  • 2 tablespoons maple syrup
  • Himalayan sea salt

INSTRUCTIONS

  1. Line a muffin tin with 12 muffin liners. Spray with coconut oil cooking spray and set aside.
  2. In a medium bowl, stir all ingredients for the bottom layer (chocolate) together until smooth. Set aside.
  3. In another medium bowl, stir all ingredients for the top layer (peanut butter) together until smooth. Set aside.
  4. Scoop a heaping 1/2 tablespoon of the chocolate layer into each muffin cup. Repeat until you’ve filled around 12 cups. Then, pick up the entire muffin tin and shake and tap until the layer is set evenly. You should get around 12 cups.
  5. Repeat the same thing with the peanut butter layer, plopping around 1/2 tablespoon on top of the chocolate layer. Pick up the entire muffin tin one last time and shake and tap until your cups are even.
  6. Finally, sprinkle each cup with some Himalayan sea salt.
  7. Place muffin tin in the freezer for 30 minutes or until firm. Enjoy!
  8. Store healthy peanut butter cups in the freezer to enjoy for later.
