- 1 tablespoon olive oil
- 1 small yellow onion , chopped
- 4 garlic cloves , minced
- 1 cup whole cashews (not roasted or salted)
- 1 cup water
- 1 tablespoon fresh lemon juice
- 1 teaspoon apple cider vinegar
- 1 ½ teaspoons fine sea salt (I use Real Salt brand)
- ½ teaspoon ground black pepper
- Add 2 T nurtitional yeast (from Vegan 8)
- Heat the olive oil in a skillet over medium-high heat and saute the onion until it's soft and translucent. This should take 5 to 8 minutes. Add in the garlic and stir until fragrant, about 1 more minute. Remove from the heat.
- In a high-speed blender, combine the cashews, water, lemon juice, vinegar, salt, and pepper. Add the sauteed onions and garlic, then blend until very smooth. The sauce should look creamy, without any visible chunks of cashews.
- Serve this alfredo sauce over your favorite cooked pasta, then adjust any seasoning to taste. The noodles will dilute the flavor of the sauce, so you may need to add more salt and pepper, as needed. (This recipe makes enough to coat one pound of pasta.) Leftover sauce can be stored in an airtight container in the fridge for up to 5 days.

Romaine lettuce, washed and chopped
Blueberries
Granny Smith apple- chopped
Feta Cheese crumbled
Cinnamon almonds
Maple Dressing-
-1/4t dry mustard
-2T White vinegar
-1/4c pure maple syrup
-1T lemon juice
-1/2t salt
-pepper
-1/2c oil
You can add a squeeze or two of fake maple syrup if you want stronger flavor)
-Omit the apple and use a variety of berries, strawberries, blueberries, blackberries, raspberries/
-Use bleu cheese or gorgonzola crumbles instead of feta

Denise’s peach pie.

I’ve got a really easy recipe We all (sisters)have the same recipe and we all use it.
.(for 1 pie)
3/4 C Sugar
4TB cornstarch
1 Pinch of salt
1C cold water
1 T Lemon juice to taste
10 drops of lemon essential oil
1/8 c butter
Cook to pie shell first and let it cool in freezer or fridge.
Stir together the sugar, cornstarch and salt.
Add 1c water slowly while stirring.. and keep stirring.
It will become really thick stir and cook for one minute. remove from the heat and add your lemon juice to taste and the butter.
Add the peaches to the sauce stir. carefully Add to prepare pie shells and enjoy it.
Refrigerate for a couple of hours but if not, it’s OK. It taste good either way. I hope this works for you. We do love it with whipping cream by the way or ice cream.. … I told Lily that if the peaches ripen on any of the trees while we are gone, but you are welcome to take some peaches. Thank you for letting her do all this. She’s a great help.

Blueberry Ice cream
Ice Cream base-
2 cups of cream
1 can of sweetened condensed milk
This method is its own recipe. Simply whip 2 cups of cream, by hand or with an electric mixer, until stiff peaks form. Slowly drizzle in a chilled can of sweetened condensed milk. Add your desired flavorings or mix-ins. Remove to an airtight container and freeze. It’s that simple!!
Blueberry swirl
2 cups fresh blueberries (lily added 1/4c frozen cherries)
3 tablespoons sugar
2 tablespoons lemon juice
cooked in a small saucepan over medium-high heat until burst. Chill before swirling into ice cream.

Pico De Gallo and Refried Beans

Pico De Gallo
9 roma Tomatoes diced
1/2 yellow onion chopped
1 bunch cilantro chopped
olive oil

salt & pepper

Refried beans
Soaked overnight, then rinsed and cooked in water for 16 min in the instapot, they were still tough (she had to cook for 16 more min to soften) or you can cook for in the slow cooker for 8 hours.
Then take out half of the water and start smashing the beans, add salt, pepper, and some broth

Lemon Blueberry Bread
1 loaf (16 slices)
1/3 cup butter, melted1 cup sugar
3 tablespoons lemon juice
2 large eggs, room temperature
1-1/2 cups all-purpose flour
1 teaspoon baking powder
1/2 teaspoon salt
1/2 cup 2% milk
1 cup fresh or frozen blueberries
1/2 cup chopped nuts
2 tablespoons grated lemon zest
glaze:
2 tablespoons lemon juice
1/4 cup sugar
Directions
- In a large bowl, beat the butter, sugar, lemon juice and eggs. Combine the flour, baking powder and salt; stir into egg mixture alternately with milk, beating well after each addition. Fold in the blueberries, nuts and lemon zest.
- Transfer to a greased 8x4-in. loaf pan. Bake at 350° for 60-70 minutes or until a toothpick inserted in the center comes out clean. Cool for 10 minutes before removing from pan to a wire rack.
- Combine glaze ingredients; drizzle over warm bread. Cool completely.

Peach Oatmeal
Serves 6
- Oatmeal
- 3 cup (276 g) old-fashioned oats
- 6 cup (1440 g) milk
- 6 tablespoon (81 g) unsalted butter
- 1/2-1 t salt
- 1/4-1/2c sugar
- In a medium saucepan on the stove, bring milk or water to a boil over medium to lower heat. (If you heat it on high the milk burns, so gotta do slow and steady)
- Once boiling, reduce the heat down to medium-low and add in the old-fashioned oats. Stirring occasionally, cook until the oats have soaked up most of the liquid, about 10-15 minutes.
- While the oatmeal is cooking, slice the peach into very thin slices and set aside.
- Peach Sauce
- 2lbs frozen peaches
- 1/4 cup lemon juice
- 3/4-1 cup granulated sugar
- 2 tablespoon cornstarch
- 1/4 teaspoon vanilla extract and almond extract

Healthy Chicken, cucumber, avocado salad
Ingredients
- 12–14 oz. boneless skinless chicken tenders (or chicken breast sliced ½ inch thick)
- 1–1 ½ tablespoon olive oil to grease the pan
For Marinade/Dressing:
- 2 ½ tablespoons olive oil
- 1 ½ tablespoons water
- 4 tablespoons fresh lemon juice (2 small lemons)
- 1 tablespoon balsamic vinegar
- ½ teaspoon garlic powder
- 2 teaspoons dried parsley
- 2 teaspoons dried basil
- 1 teaspoon sea salt
- 1/8–1/4 teaspoon black pepper
For salad:
- 1 large avocado-diced
- 1 cucumber -diced
- about 1 ½–2 cups cherry tomatoes-halved
- 1 small-medium red onion- sliced
- 2 tablespoons crumbled feta cheese- to sprinkle on top if desired
Instructions
- First, in a medium bowl combine all ingredients for marinade/dressing and stir well.
- Reserve half of the mixture for later use as salad dressing (cover and store in the fridge).
- Now, place chicken tenders in remaining mixture and flip the chicken to coat well, then, cover the bowl and place in the fridge to marinate for at least 15-20 minutes.
- Grease grilling pan with olive oil, heat over medium high heat and grill the chicken a few minutes on each side until golden brown and cooked completely. Cool for a few minutes, then chop the chicken in bite size pieces.
- In a large bowl combine diced avocado, cucumber, sliced cherry tomatoes, red onion and chopped chicken, pour reserved dressing over the salad ingredients, stir well and serve.

Lemon Blueberry Cake
CAKE:
- 1 cup (2 sticks, 8 ounces) butter, softened to room temperature
- 1 3/4 cups (13 ounces) granulated sugar
- 1 tablespoon fresh lemon zest
- 4 large eggs (7 ounces), room temperature
- 2 teaspoons vanilla extract
- 2 1/2 cups (12.5 ounces) all-purpose flour
- 2 teaspoons baking powder
- 1/4 teaspoon baking soda
- 1/2 teaspoon salt
- 1 cup buttermilk (storebought or homemade)
- 1/2 cup fresh lemon juice (from about 3 lemons)
- 2 cups (12 ounces) fresh or frozen blueberries (do not thaw if frozen)
- 2 tablespoons all-purpose flour
WHIPPED LEMON CREAM CHEESE FROSTING:
- 12 ounces cream cheese, softened to room temperature
- 1/2 cup (1 stick, 4 ounces) butter, softened to room temperature
- 4 1/2 cups (18 ounces) powdered sugar
- 1 to 2 teaspoons fresh lemon zest
- 1 tablespoon fresh lemon juice
- 2 tablespoons heavy cream
GARNISH:
- Fresh lemon slices
- Fresh blueberries
INSTRUCTIONS
- Preheat the oven to 350 degrees. Line the bottom of two 9-inch round cake pans with at least 2-inch sides with parchment paper and coat with nonstick cooking spray (see note above for pan variations). Set aside.
- In a large bowl with an electric mixer (or in the bowl of an electric mixer fitted with the paddle attachment), cream together the butter, sugar and lemon zest until light and fluffy, 4-5 minutes (don't cut down the time on this step).
- Add the eggs and vanilla until well-combined, 1-2 minutes, scraping down the sides of the bowl as needed.
- In a separate bowl, whisk together the flour, baking powder, soda and salt. Stir the dry mixture into the wet ingredients and mix on low speed until just combined and a few dry streaks remain.
- Add the buttermilk and lemon juice to the batter, and stir by hand, folding the batter until just combined.
- In another bowl, toss the blueberries with the 2 tablespoons flour (see note above). Add the blueberries and remnants of flour to the batter and fold in by hand with a spatula or wooden spoon until just-combined. Overmixing may result in a tough, dry cake.
- Spread the batter evenly in the prepared pans and bake for 35-40 minutes until just baked through. The top will spring back lightly to the touch and a toothpick inserted in the center should come out with moist crumbs but not wet batter.
- Let the cakes cool for 5-10 minutes in the pans before turning them out onto a cooling rack to cool completely.
- For the frosting, whip the cream cheese and butter together with a handheld electric mixer or with an electric stand mixer fitted with the paddle attachment until light and fluffy, 2-3 minutes. Add the powdered sugar, lemon zest and lemon juice and mix on low speed (so the powdered sugar doesn't fly everywhere) until combined. Increase the speed to medium and mix until creamy, 1-2 minutes. Add the heavy cream and whip the frosting until very light and fluffy, 2-3 minutes.
- When the cake has cooled completely, place one round on a platter or plate and spread the top evenly with frosting. Place the other cake round upside down on the frosting and press just lightly. Continue frosting with a thin spatula or offset spatula until the top and sides of the cake are evenly frosted. Garnish with blueberries and lemon slices, if desired.
- This cake, once frosted, lasts very well in the refrigerator for several days (I've made it up to two days in advance before serving). Take it out an hour or two before serving or serve chilled, your choice!
NOTES
Lemons: zest the lemon(s) before juicing them (it will cut down on the number of lemons you need to use). Speaking of number of lemons, you'll need about 4-5 lemons for this recipe, plus more if you want to garnish the cake with lemon slices.
Blueberries: as stated in the ingredients list, frozen blueberries work well in this cake. The baked cake is slightly wetter around where the blueberries bake into the cake but it's not too noticeable, in my opinion. Remember not to thaw them first. I've actually noticed that the blueberries don't sink to the bottom of the cake as often with frozen blueberries - I think it's because the flour adheres to the blueberries better, helping them cling to the batter. I've never tried it but I suppose you could try just barely misting fresh blueberries with a bit of water (maybe 1/2 teaspoon max!) before tossing with the flour to help prevent sinkage. To be honest, it doesn't really bother me if the blueberries tend to gravitate toward the bottom of the cake but if you are more particular, there's an idea for you.
Frosting: Also, the frosting makes for thick layers of frosting in between the cake layers and on the top and sides. If you like a little less frosting-to-cake ratio, you could probably cut down the frosting ingredient amounts or just use less and save the rest of the frosting to spread on other goodies.
Pans: I've often spread the batter into 3 8-inch pans (with at least 2-inch sides) but find more often, I simplify and bake it in 2 9-inch layers.

chloe shish kabob
⅓ cup olive oil
1 ½ tablespoons Hidden Valley® Original Ranch® Seasoning, Salad Dressing & Recipe Mix Shaker
2 tablespoons Worcestershire sauce
2 tablespoons lemon juice
1 tablespoon minced fresh rosemary, plus more sprigs for garnish
4 boneless, skinless chicken breasts, cut into 1-inch cubes
8–10 wooden skewers, soaked for at least 20 minutes
STEP 1
In a mixing bowl, stir together the olive oil, seasoning, Worcestershire sauce, lemon juice and rosemary.
STEP 2
Add chicken to the bowl and stir well to coat the pieces evenly. Refrigerate for at least 30 minutes, up to overnight.
STEP 3
Preheat the grill to medium-high heat and grease the grates to prevent sticking. Thread the chicken onto the skewers and discard remaining marinade.
STEP 4
Grill for 10–12 minutes, turning for even browning, until the chicken is cooked through. Garnish with more fresh rosemary if desired and serve hot. Serve with (red, orange)Peppers, mushrooms, onion, pineapple

Vegan Cream Cheese frosting
- 1 large Hannah sweet potato (white flesh)
- 1/2 cup maple syrup (at room temperature)
- 6 tablespoons coconut oil (melted)
- 2-4 tablespoons water
- 1 teaspoon fresh lemon juice
- 1 teaspoon apple cider vinegar
- 1/8 teaspoon salt
- To prepare the sweet potato, peel and cut it into 1-inch chunks. In a pot fitted with a steamer basket, bring 1-inch of water to a boil and steam the potato chunks until fork-tender, about 10-15 minutes.
- Transfer the steamed potato chunks into a 1-cup measuring cup and mash them with a fork to tightly pack the cup all the way to the top. (Reserve any remaining sweet potato for a future smoothie or salad topper.)
- Transfer the mashed sweet potato to a blender, and add in the maple syrup, coconut oil, 2 tablespoons of water, lemon juice, apple cider vinegar, and salt. Blend until silky smooth.
- If the mixture isn't blending well, add more water 1-2 tablespoons at a time until very smooth. Be careful not to add too much water or the frosting will be too runny. Once smooth, transfer the frosting to an airtight container to store in the fridge.
- This frosting will thicken overnight and can be spread over your favorite cakes, bars, or cookies. Be sure to keep the frosting refrigerated for best texture, though it can sit out at room temperature for several hours for serving. It should last up to a week when stored in the fridge.
