Best Baked Potato

Gimme some oven 

  • 1 medium-to-large Russet potato, scrubbed clean of any dirt
  • 12 teaspoons melted butter (or olive oil)
  • pinch of coarse Kosher salt
  • pinch of freshly-cracked black pepper
  1. Heat the oven. Heat oven to 450°F.  Line a large baking sheet with foil (or parchment*), and if you happen to own a wire cooling rack, place it on top of the baking sheet.
  2. Prep the potato. Using a dinner fork or a small paring knife, poke the potato at least 10 times on all sides.  Place the potato on the prepared baking sheet.
  3. Bake (round one). Bake for 25 minutes.  Remove baking sheet from the oven.
  4. Brush with butter (or oil).  Using a pastry brush, brush the outside of the potato with melted butter or olive oil until it is completely coated on all sides.  Sprinkle the potato with a generous pinch of Kosher salt, and place the potato back on the baking sheet reverse-side-up, so that it can cook evenly on both sides.
  5. Bake (round two). Bake for an additional 20 minutes.  Using an oven mitt, carefully squeeze the potato to check for doneness.  If the insides are soft and give under pressure, remove the potato from the oven.  Otherwise, continue cooking in 5-minute increments until the potato is soft.
  6. Cut the potato.  Using a small paring knife, slice halfway through the potato lengthwise.  Then give it a gentle squeeze to open.
  7. Serve.  Serve immediately, with your desired toppings.

Delicious Chicken Legs

 Low Carb life


4 pounds chicken drumsticks
4 tablespoons avocado oil
2 teaspoon SMOKED paprika
2 teaspoon garlic powder
2 teaspoon onion powder
2 teaspoon chopped parsley
1 teaspoon salt
1 teaspoon cracked pepper


  • Preheat oven to 425 degrees. Spray a baking sheet with non-stick spray.
  • Add all of the ingredients to a large zip top bag and seal. Smush the chicken around in the bag to coat in the seasoning.
  • Arrange chicken on the baking sheet and bake for 40-45 minutes or until a thermometer reads 165 degrees.
  • Serve immediately.
  • Serve with a side of dipping sauce or Blue Cheese dressing

I cooked at 440 degrees for about 55 minutes. we all definitely really enjoyed these flavorful drumsticks. I would've liked them to be more crunchy and crispy on the outside. Not quite sure how to achieve that yet.

Moab Activities and Hikes

 Places to stay-

1. Red Cliffs Lodge- we stayed here when Logan went to a English Teachers Retreat, it was beautiful by the Colorado river and surrounded with tall red rocks, it was so quiet and enjoyable. Its located 25 minutes north east of Moab, worth the beautiful drive

2. Expedition Lodge- it had bunk beds for kids, pool and hot tub. We went in February b/c we knew it'd be less busy and cheaper hotel rates.


Hike

Mill Creek Trail- hiking in water and red rocks, Mel and Drew Chambers did this and shared pictures

1. Mill Creek Trail, Red Cliffs Desert Reserve 

2. Dino Cliffs- It was sorta rough to find more than one consistent spot where there was a dino foot print. But I was happy to see it, the kids didn't enjoy this hike as much.



Lemon Blueberry Bread

 Taste of Home

1 loaf (16 slices)

1/3 cup butter, melted
1 cup sugar
3 tablespoons lemon juice
2 large eggs, room temperature
1-1/2 cups all-purpose flour
1 teaspoon baking powder
1/2 teaspoon salt
1/2 cup 2% milk
1 cup fresh or frozen blueberries
1/2 cup chopped nuts
2 tablespoons grated lemon zest

glaze:
2 tablespoons lemon juice
1/4 cup sugar

Directions

  1. In a large bowl, beat the butter, sugar, lemon juice and eggs. Combine the flour, baking powder and salt; stir into egg mixture alternately with milk, beating well after each addition. Fold in the blueberries, nuts and lemon zest.
  2. Transfer to a greased 8x4-in. loaf pan. Bake at 350° for 60-70 minutes or until a toothpick inserted in the center comes out clean. Cool for 10 minutes before removing from pan to a wire rack.
  3. Combine glaze ingredients; drizzle over warm bread. Cool completely.

TIPS-
Breads typically bake from the outside in. If you notice during baking that the edges of your bread are browning quickly, tent the bread with a piece of aluminum foil. You might also want to bake your lemon blueberry bread either in a glass or light-colored metal pan as opposed to a dark metal pan, which absorbs more heat. Read more about baking in dark pans.
