Smoothie

I usually make enough smoothie for 5 people.  Sometimes we have leftover smoothie, 1. put in fridge lasts till the next day, or 2. I freeze it in sandwich size ziplock bags for individual servings.

The possibilities are endless, but this will get you started.

1. Liquid- one cup of ONE of the following liquids- any type of milk, juice from canned fruit, juice in fridge, water
2. Greens- one or more of the following: kale, spinach, romaine, any other greens
3. Veggies and fruits- whatever you have in your fridge or freezer. Mild veggies: Carrots, cucumber,cut off tops from strawberries, cored apples, any frozen fruits, Stronger Flavors(not my fav):celery, broccoli/cauliflower stems
4. Nutrient boosters- 2T or more of the following: flax, chia seeds, hemp heart, protein shake
5. 1-2 frozen or fresh banana


A smoothie I made today-
1. 1c frozen leftover pineapple juice(slightly defrosted), 2 handfuls of spinach, 2 (one inch cut) carrots, flax and chia seeds, 2 frozen bananas

Noodle salad Runners high and peanut sauce

Noodle salad - salad similar to Aisan Noodle Salad
1 T salt
1 head shredded or diced broccoli
1 pkg (8-10oz) soba noodles or whole wheat noodles or brown rice
1 T toasted sesame oil (or olive or coconut oil)
1 T soy sauce
1 sliced red or yellow bell pepper
1/2c chopped cilantro leaves
4-5 sliced scallions
2 large shredded/sliced carrots
1/2 head of sliced red cabbage
1/2c chopped peanuts or any nut

Bring 1 large pot of water to boil add salt, add broccoli and cabbage for 2 min.  Remove veggies and submerge in ice cold water to stop them cooking. Set aside. Same pot of water cook the noodles. After cooked, Toss noodles with oil and soy sauce.

Arrange all veggies in a separate bowl

Peanut Sauce
1 T coconut oil
1 diced yellow onion
1/2t salt
3 cloves garlic
1 can (13oz) coconut milk
1/2c peanut butter
1 T soy sauce
1T coconut sugar or honey, or sugar
1/2-1 red pepper flakes
1 T lime juice
1/4c chopped peanuts

In saucepan heat oil up, then add onion and salt about 5 min. Add garlic and stir for 1 min
Add coconut milk, peanut butter, soy sauce, sugar and red pepper flakes. Bring to simmer and stir occasionally, keep uncovered. Using an immersion blender or regular blender to blend till smooth.
To serve- fill bowl with noodles, layer with the salad ingredients, then top with peanut sauce.

Healthy Raw Cookie Dough


1 1/2 cups rehydrated white beans (or 1 can, drained and rinsed very well or can use chickpeas) (250g after draining)
1/8 tsp salt
just over 1/8 tsp baking soda
2 tsp pure vanilla extract
1/4 cup nut butter of choice
3 tbsp  flaxmeal
1/2t cinnamon
I didnt use this- up to 1/4 cup milk of choice, only if needed
1/2c honey and 1/4 c brown sugar  could use less sweetner next time(agave, maple syrup or pureed dates)
1/3 cup chocolate chips

Instructions

Add all ingredients (except for chocolate chips) to a good food processor, and process until very smooth. Then mix in the chocolate chips.  If made correctly and blended long enough, this should have the exact texture of real cookie dough!
4/6/17 I put some in the fridge to dip apples in and I put the rest on a small pan to freeze and see how it tastes as a frozen sweet snack. I thought to melt choco chips on top, then it would look like a blondie brownie of sorts.

  • 1/2 cup cocoa powder (Find good-quality cocoa powder here)
  • 1/4 cup coconut oil (or softened butter) (Find my favorite kind here)
  • 1 Tbs pure maple syrup (or raw honey) (Find pure Grade B maple syrup here)
  • 1/4 tsp pure vanilla extract (Find pure organic vanilla here)
  • pinch sea salt (Find real salt here)

DONE 1. Jen Coon Dr walk, no path just grass and a creek to walk along
2. I-15 and 31st exit in ogden- riverdale parkway paved path, bring bikes or roller blades
3. Adventure park in ogden @ 17th st, paved path, bring bikes or roller blades
DONE 4. Pond off of 27th st in ogden, dirt path
DONE 5. Beus Canyon off of 46th in south ogden, dirt path
DONE 6. Burch Creek off of 40th??? dirt path
7. Barker park nature trail in north ogden, dirt path
8. North ogden divide- look out point to hike through bottom of the canyon, dirt path
9. North ogden divide- park at look out point but cross the road going east and trail is above the road on the east, dirt path
10. North odgen divide- at the summit hike south or cross the road and go north, dirt path
11. The paved path around pineview reservoir


Trails I'd like to go on with Adults hiking or biking-
1. Willard peak hike
2. Cold water canyon
3. North ogden divide summit going south- links up with snowbasin or pineview reservoir

Coconut Oil Choco Chip Cookies

My friend Jamie West boasts highly of these cookies and how delicious they are

1/3c butter
1 c coconut oil
1 c sugar
1 c brown sugar
2 eggs
1 t vanilla
3 and 1/2c flour
1 t soda
1 t salt
chocolate chips

Mix warmed oil, butter, sugar, eggs, and vanilla together.  Then add flour, soda, salt and chocolate chips.

350 degrees for 8-10 minutes
