Eleanor Chicken Alfredo

 1/4 c butter

1/4c olive oil

1/4c diced onion

4-5 c cooked diced chicken breasts

3 c whipping cream

2 packages of alfredo seasoning- McCormick brand (she buys is at amazon)

1 can diced tomatoes

4 T basil

1 t salt and pepper

16 oz fettucine noodles

saute onion and butter in olive oil. 

In separate bowl Add alfredo seasoning to whipping cream, add chicken, and canned tomatoes.

Add salt and pepper, and basil

cook fettucine noodles. Add noodle to big pot

ENJOY!!!

4 Ingredient Waffles

Creme De La Crumb



1. In a large bowl, combine flour (3 c white and 1 c wheat flour) and salt. In a small bowl, beat egg yolks on low speed. Gradually pour in cream and beat for 1 minute. Add wet ingredients to flour mixture and mix until smooth.
2. In another bowl (make sure your beaters are clean) beat egg whites on high until stiff peaks form. Gently fold into batter.
3. Bake in a preheated waffle iron according to manufacturer's directions. Serve warm with desired toppings.

Notes

*I love to add 1 teaspoon vanilla and 1/2 teaspoon ground cinnamon to the waffle batter for a fun flavor variation. Try it!

1/13/22 Im happy with how they turned out. 
It was time intensive to separate egg yolks, then mix on high the eggs whites(5min) and then to fold into the whipping cream. I had whipped the whipping cream a few days before for a different dessert and didn't use it all, so it was ready. These waffles are very filling and they better be with 12 eggs in them.  My kids all just had 2 triangles (waffles have 4 triangles) each, they were super filling.
I frozen them in a gallon ziplock with parchment or freezer paper between each waffle.

Beef Carnitas

 Lisa Morby's taco salad with Beef Carnitas

23 lbs beef chuck roast
2 tsp chili powder
1 tsp salt
1/2 tsp black pepper
1/2 tsp cumin
1/2 tsp smoked paprika
1/4 tsp garlic powder
1/4 tsp onion powder
1 onion, sliced (I like sweet onions)
1 green pepper, sliced
1 red pepper, sliced
1 (4oz) can diced green chiles (don’t drain)

FOR SERVING:
corn tortillas*
your favorite taco toppings: shredded lettuce, salsa, guacamole, cheese, sour cream, cilantro, etc.

INSTRUCTIONS
If desired, brown your beef roast in a pan or Dutch oven. Heat a small drizzle of oil over medium heat, add the beef roast and cook 5-7 minutes per side, or until it’s very browned and crisped.
Place roast in the slow cooker. In a small bowl, whisk together chili powder, salt, pepper, cumin, smoked paprika, garlic powder, and onion powder. Sprinkle spice mixture over the roast. Add onion, bell peppers, and green chiles over the roast as well.

Cook on HIGH 3-4 hours or LOW 7-8 hours, or until beef is pull-apart tender. (You should be able to easily shred it with a fork or a pair of tongs).

On facebook pull up the video you want to save

On the far right side of the screen there are 3 dots, to indicate commands to accomplish

Click on the 3 dots 

Click on "Copy link"

Paste that link into a new internet tab and press enter (it will pull up the video)

When you paste it, it will be  (https://fb.watch/) press enter and it will change to something that starts with https://www.facebook.com/watch/.

In the web address where it says http:/www.facebook......  replace the www with "mbasic"

That allows the video to be in the process to be saved

Right-click the video, and select Open link in new tab. In this new third tab, all you'll see is the video, and you can right-click again and select Save video as to put it on your PC.

Friendship Bingo

 Get to know you or friendship bingo.  I went to a retreat that Brooke Prothero was helping organize and they played this Bingo activity to help people get to know each other. I was surprised, it actually was really fun




Health Challenge

 Jan Ririe shared this Health Challenge with me that she used for coaching her girls soccer teams. She said it went so successful.


Players Challenge


We are going to be starting a Health Challenge. This will last for 4 weeks. The starting date is  Sunday, January 6th,

with the sleep point starting the night before so on January 5th.  Challenge will end on Monday, March 4th. You will

get 1 point for doing the following things each day: 


1 pt. For eating Breakfast
1 pt. For eating Lunch 
1 pt. For eating Dinner 
1 pt. For eating 2 servings veggies 
1 pt. For eating 2 servings of fruits 
1 pt. For getting 8 hours of sleep 
1 pt. For drinking 8 cups of water 
1 pt. For no sugary drinks, desserts, candy….
 1 pt. For Complimenting someone or doing a secret service
1 pt. For doing 20 push ups and 1 min plank
Search for a golden nugget in the scriptures


There are going to be 3 winners, 1st place $15 gift card, 2nd place $10 gift card, and 3rd place $10 gift card.  Highest points wins.  Winners can choose what kind of gift card they’d like.
