Sourdough Pancakes

DBL     (Original recipe)
4 c     2 cups all-purpose flour
4t       2 teaspoons baking powder
2t       1 teaspoon baking soda
4T      2 tablespoons granulated sugar
2t       1 teaspoon salt
2c      1 cup sourdough discard (discard is runnier and works best in this recipe)
3c      1 1/2 cups milk (or more to thin the batter)
2        1 large egg beaten
4T      2 tablespoons vegetable oil

Instructions
 

  • In a large bowl, whisk together the flour, baking powder and soda, sugar and salt.
  • Add the sourdough starter, milk, egg and oil. Mix well just until combined.
  • Spray a pancake griddle with cooking spray or grease well with butter. Heat to about 300-350 degrees.
  • Pour ¼ cup pancake batter on the hot griddle. Cook until the pancake starts bubbling on top, then flip the pancake.
  • Cook for an additional 1-2 minutes or until the pancake is cooked through.
  • Serve warm with butter and syrup.

Lily chocolate Muffins

  • 1 1/2 cups (180 gr) all-purpose flour
  • 1/2 cup (50 gr) cocoa powder (dutch processed preferred but natural cocoa powder can be used)
  • 2/3 cup (130 gr) granulated sugar
  • 1 TBSP (14 gr) baking powder
  • 1/4 tsp salt
  • 1 large egg, room temperature
  • 1 cup (235 ml) whole milk
  • 1 tsp vanilla extract
  • 1/2 cup (120 ml) vegetable oil or canola oil
  • 1 cup (170 gr) chocolate chips + more for topping if desired

INSTRUCTIONS

  1. Prep: Preheat the oven to 425 F (220 C). Line a muffin tin with muffin liners or spray with nonstick spray.
  2. Mix Dry Ingredients: In a large mixing bowl, whisk together the all-purpose flour, cocoa powder, granulated sugar, baking powder, and salt.
  3. Mix the Wet Ingredients: In a separate bowl, whisk together the egg, milk, vanilla, and oil until well combined.
  4. Combine Wet & Dry Ingredients: Pour the wet ingredients into the dry ingredients and stir with a spoon or rubber spatula until just combined. This process will go quickly, and should only take about 10 stirs to complete. Fold in the chocolate chips at this point. Do not over-mix your batter or your muffins will be dense and dry.
  5. Divide the batter between the muffin cups filling them almost all the way up. Top with more chocolate chips if desired.
  6. Bake at 425 F for about 10 minutes and then turn the oven heat down to 350 F (175 C) for about 5 more minutes or until a toothpick inserted in the center comes out with moist crumbs.

Sugar Cookies and royal icing

 Cream Cheese Sugar Cookies

3/4 cup unsalted butter, room temperature (170 grams) - 1 1/2 sticks
1/2 cup full fat cream cheese, room temperature (113 grams) - 4 oz.
1 1/2 cups granulated sugar (300 grams)
1 large egg, room temperature (56 grams)
2 tsp vanilla bean paste or vanilla extract (6 grams)
1 tsp almond extract (3 grams)
3 cups all-purpose flour (390 grams)
1 Tbsp cornstarch (8 grams)
1/2 tsp baking powder (2 grams)
1/2 tsp salt (3 grams)


Cream Cheese Sugar Cookies
  1. Mix together 3/4 cup butter and 1/2 cup cream cheese at a medium speed with a whisk attachment or hand mixer until smooth.
  2. Next, mix in 1 1/2 cups granulated sugar at a medium-high speed for a couple minutes, until the mixture becomes lighter in color.
  3. Add in 1 egg, 2 tsp vanilla bean paste or vanilla extract and 1 tsp almond extract. Mix on a low speed until incorporated.
  4. In a separate bowl, sift together 3 cups flour, 1 Tbsp cornstarch, 1/2 tsp baking powder and 1/2 tsp salt.
  5. Gradually mix the flour mixture into the butter mixture on a low speed, until it is JUST incorporated. I like to do this in a couple additions and scrape the sides of the bowl between additions.
  6. At this point the dough will still be pretty sticky. Divide the dough in half and wrap each piece of dough in a piece of plastic wrap.
  7. Chill in the fridge for about 2 hours or the freezer for 30 minutes.
  8. Preheat your oven to 350 degrees F at this point in the process about 30 minutes before you plan to roll out the dough.
  9. Generously dust the surface you plan to roll the cookies out on with additional flour.
  10. Take one ball of dough out of the fridge or freezer, leaving the other to continue to chill.
  11. Sprinkle some more flour on top of your dough ball and on your rolling pin. Roll the chilled dough to be 1/3 inch thick and cut out your shapes with a flour dusted cookie cutter.
  12. Use a kitchen brush to gently brush off any excess flour and place onto a parchment lined baking sheet or silicone mat.
  13. Chill the cut out cookies one more time in the fridge for 15 minutes or the freezer for 10 minutes to help them keep their shape better.
  14. Bake for 9-11 minutes on the top wrack of your oven (time varies based on the size and shape of the cookies). Keep a close eye on these and be sure to pull them out before the edges start to brown.
  15. Let the baked cookies cool on the pan for about 10 minutes, then transfer to a wire rack to finish cooling.
  16. While the first batch bakes and cools, knead together the cookie dough scraps, and rewrap them in plastic wrap. Pop them back in the fridge to chill.
  17. Pull out your 2nd chilled ball of dough, and repeat steps 9-15. Then repeat with the chilled dough scraps.
Royal icing

4 cups powdered sugar (500 grams)
1/4 cup meringue powder (36 grams)
1/3 cup water, room temp (80 grams)
2 tsp. vanilla or almond extract (8 grams)
additional water to bring to flooding consistency (I used 4 Tbsp but this can vary!)

  1. Whisk together 4 cups of powdered sugar and 1/4 cup meringue powder in the large bowl or the bowl of a stand mixer.
  2. Add in 1/3 cup water and 2 tsp vanilla extract. Mix on a medium speed until stiff peaks form (takes about 5 minutes).
  3. Next, add in water 1 Tbsp at a time until flooding consistency is reached. I used about 4 Tbsp of water, but it can vary batch to batch.
  4. To test the consistency, use the Figure 8 test! Lift up your spoon or spatula, and create a figure 8 with the runoff frosting. If the figure 8 disappears in exactly 8 seconds, the icing is ready to use as a cookie glaze. If it melts away faster, thicken by adding a spoonful of powdered sugar. Or if it takes longer than 8 seconds to disappear, thin by adding a few drops of cream.
  5. Repeat this test, making adjustments as you go, until the frosting passes the figure 8 test.
  6. To prevent crusting, place saran wrap directly on top of the royal icing. If you leave the frosting exposed to air for too long, it will crust and form a chunky top layer! Be sure keep frosting covered until right before you plan to use it.
  7. Once you're ready to decorate the cooled cookies, color 1/2 cup of the royal icing a color of your choice with gel food coloring and place into a small piping bag.
  8. Color another 1/2 of frosting a complimentary color and place in a separate piping bag.
  9. Cut the tips of both piping bags to create a small opening (1/4 of an inch).

  1. Flavors: I love flavoring this cookie dough with 1/2 teaspoon almond extract as listed in the ingredients above. For lighter flavor, use 1/4 teaspoon. Instead of the almond extract, try using 1 teaspoon of maple extract, coconut extract, lemon extract, or peppermint extract. Or add 1 teaspoon pumpkin pie spice or ground cinnamon. Along with lemon extract, you can also add 1 Tablespoon lemon zest.
  2. Freezing Instructions: Plain or decorated sugar cookies freeze well up to 3 months. Wait for the icing to set completely before layering between sheets of parchment paper in a freezer-friendly container. To thaw, thaw in the refrigerator or at room temperature. You can also freeze the cookie dough for up to 3 months before rolling it out. Prepare the dough through step 3, divide in half, flatten both halves into a disk as we do with pie crust, wrap each in plastic wrap, then freeze. To thaw, thaw the disks in the refrigerator, then bring to room temperature for about 1 hour. Roll out the dough as directed in step 4, then chill rolled out dough in the refrigerator for 45 minutes – 1 hour before cutting into shapes and baking.

Dad chocolate chip cookies

350 degrees

2 eggs
1 1/2t vanilla
1/2 cube softened butter
1 c brown sugar
1/2c white sugar
Cream and whip with whisk for 2-5 minutes

Then add-
1/8 t salt
1 t baking powder and baking soda
2 1/4 c white flour

Now Just stir with wooden or plastic spoon, dont whip.
1/2 bag of chocolate chips

350 cook on oiled/greased cookie sheet, cook 10-11min
Dont check too earlier b/c it flattens the cookies

Gluten Free Zucchini Bread & muffins


Column on left is for one loaf pan.  Column on right is a doubled recipe for 1 loaf pan and 16 muffins

Dry Ingredients
Original            Double
1 ¾ c                3 ½ c GF flour (half blanched almond flour and gluten free all purpose blend)
2 t                    4 t baking powder
½ t                   1 t baking soda
½ t                    1t salt
2t                      4t cinnamon
¼ t                   ½ t nutmeg (or pumpkin spice)

Wet Ingredients
¼ c                    ½c brown sugar
½ c                    1c sugar (decrease next time to 1/2c)
2                        4 eggs
1 c                     2 c zucchini
1/3 c                  2/3 c coconut oil or any oil
¼ c                    ½ c almond milk
1t                       2t lemon juice
2t                       4t vanilla
2-3T                  ¼ c flax


Preheat the oven to 350F. Grease 1 loaf pan with cooking spray or coconut oil and put cupcake liners in cupcake pan.

  1. In a medium bowl, combine the dry ingredients. Whisk to evenly distribute.
  2. On stove heat eggs, coconut oil, almond milk, lemon juice, and vanilla and whisked constantly for 1 min. In a separate bowl- whisk the brown sugar, white sugar and the egg mixture. Add the zucchini and mix for 30 seconds to combine. Add the walnuts or chocolate chips and stir to combine.
  3. Pour the batter into the prepared loaf pans. Bake for 45-50 minutes loaf pan and 22-25 minutes for muffins, until set in the middle. Let sit in the pan for 10 minutes to cool, then turn out onto a wire rack to continue cooling. Store leftovers wrapped tightly in plastic wrap at room temperature. Enjoy!

11/5/18  i love the light fluffyness of these muffins. Next time do 1/2c of white sugar and include applesauce

baked pumpkin oatmeal

I  put in a greased 9x13 pan

For the dry ingredients:

4 cups rolled oats (sometimes called old-fashioned). – Use gluten free as needed!
1 tsp baking powder
1/2 tsp salt
1 tsp cinnamon, 1/4 tsp nutmeg, 1/4 tsp cardamom
Or 1&1/2t pumpkin pie spice
2 cup toasted pecans or almonds
protein powder optional

For the wet ingredients:

3 cups milk (I use unsweetened almond milk)
2 cups pumpkin or 15oz can
1/2 cup pure maple syrup or brown sugar (plus more, for drizzling)
3 eggs or 2 Tbsp chia seeds + 3 Tbsp water (or 1 egg, if not vegan)
2 tsp vanilla
Preheat the oven to 350 degrees F.

Can serve caramel chips or choco chips

  • 1/3 cup brown sugar, packed
  • 1/2 tsp ground cinnamon
  • 4 tbsp unsalted butter, melted
  • 2/3 cup plus 1 tbsp all-purpose flour

In a large bowl, whisk together the oats, baking powder, salt, cinnamon, nutmeg, and cardamom. Add 1/2-3/4 cup of the pecans (and save the rest for sprinkling on top).

In a medium bow, whisk together the wet ingredients–milk, pumpkin, syrup, chia egg/egg, and vanilla. Whisk until well combined.

Stir the wet ingredients into the dry oatmeal mixture. Stir to combine well. Pour into a greased 8×8 (or 2 quart) baking dish. Sprinkle with additional pecans if you like.

Bake at 350 degrees 25-30 minutes, or until the liquid has soaked in, the center is just set, and the edges are starting to turn golden.

Serve with a drizzle of milk and a little syrup if you like.

Oatmeal will keep 5-7 days in the refrigerator. To reheat, simply add a little extra milk and warm in the oven or microwave.

Can serve with whipped up coconut milk on top.

Navajo Tacos

Fry Bread
4 cups all-purpose flour
1/4 c of each: flax, wheat germ, wheat bran
2  tablespoon baking powder
2  teaspoon salt
2 cup milk
4 cups oil for frying, or as needed

I mix the flax, wheat germ and wheat bran with milk for 10min.  Mix in separate bowl- flour, baking powder, salt. Mix everything together.  Let sit for 1/2hr, then fry
