Mint Chocolate Chip Ice Cream Cake

Ingredients-

1 pkg Mint Oreo Cookies (14.3 oz.) 14.3 oz
3 Tbsp Butter softened
1 jar Hot Fudge Sauce 13 oz jar
1 container Mint Chocolate Chip Ice Cream 1.5 quart
1 container Cool Whip 8 oz


Place the Oreos in a food processor and gently pulse until they are turned into crumbs.  Remove approximately ½ cup of the mixture in a small bowl and set aside for the topping of the cake.

Place the rest of the Oreo crumbs in a large mixing bowl.  Dice up the butter and stir the butter into the cookie crumbs.

Then press this mixture into the bottom of a Spring form pan.  Press hard down into the bottom of the pan to form the crust of the cookie cake.
Place the pan in the freezer and freeze for 30 minutes.

Remove the ice cream from the refrigerator and let it sit at room temperature for 15 minutes.  Them remove the pan from the freezer, pour the hot fudge sauce on top of the crust and spread it out as evenly as possible.  Then top it with the mint chocolate chip ice cream and spread out the ice cream as well to make an even layer.
Then top with the cool whip.

Cover and place in the freezer for at least 4 hours or overnight.
When you are ready to serve, top the cake with the remaining cookie crumbs.  Then carefully remove the sides from the spring form pan.
Run a knife under hot water, then cut (clean the knife after each cut) and serve the cake!

        Denise’s peach pie.

        • I’ve got a really easy recipe We all (sisters)have the same recipe and we all use it.

          .(for 1 pie)
          3/4 C Sugar
          4TB cornstarch
          1 Pinch of salt
          1C cold water
          1 T Lemon juice to taste 
          10 drops of lemon essential oil
           1/8 c butter

          Cook to pie shell first and let it cool in freezer or fridge.

          Stir together the sugar, cornstarch and salt.
          Add 1c water slowly while stirring.. and keep stirring.
          It will become really thick stir and cook for one minute. remove from the heat and add your lemon juice to taste and the butter.
           Add the peaches to the sauce stir. carefully Add to prepare pie shells and enjoy it.

          Refrigerate for a couple of hours but if not, it’s OK. It taste good either way. I hope this works for you. We do love it with whipping cream by the way or ice cream.. … I told Lily that if the peaches ripen on any of the trees while we are gone, but you are welcome to take some peaches. Thank you for letting her do all this. She’s a great help.

        4. Snow basin outdoor concerts- this year is the first year (2023) they are charging $15 single day pass or summer pass for $79

        5. Little Valley Days- Mantua, UT (2nd week of July)

               2 pm water slide and foam party on saturday & 8-10pm Music and line dancing, fireworks

        6. Ogden farmers market- 8am-1pm, 9am free yoga

        7. Outdoor sunset yoga- Jos child on FB, Wednesdays at 7:45pm, donation based 

        8. Ogden First Friday Art Stroll- especially make sure you go to the Monarch, that place is full of interesting bands and different types of art

        9. Movies and live theatre at Perry Egyptian Theater

        10. Mendon Pioneer Day Celebration
