2 T basil, 1 T oregano, 2 bay leaves, parsley(didn't have), salt and pepper

Serve with Pizza

A variety of Pizzas

1.  On a hoagie bun

2. On a french bread

3. English Muffin pizzas-  Once Upon a Chef or Serious Eats

4. Individual Frozen rolls dough for pizza Rhodes

5. Calzones with frozen roll dough- defrost of counter for 2 hours or overnite in fridge, then roll out an individual roll, fill it pretty full with ingredients (otherwise they flatten out after cooking). Put ingredients on one side of the roll, then pull the other side over the top of the ingredients.  Use a beaten egg to seal the two sides of the roll dough together. Push down with a fork on the edge of the dough to seal more. Serve with marinara sauce after it is cooked. Cook  350, 20-25min

Multigrain Pizza

Double
1/2c             1/4c cornmeal
1c                1/2c oatmeal
2c                1 c whole wheat flour
1t                 1/2t baking powder
1/2c             1/4c seed pureed mixture of flax, pumpkin seed, and sunflower seed
1/2t              1/4t salt
2-3T            1-2T oil
2c                1 c water

I thoroughly mix all the dry ingredients, then add water and oil

After I roll out the dough I bake it in the oven by itself with no toppings.
350 degrees 20 min

Then add the light garlic sauce which is- olive oil, minced garlic, salt and pepper to the top of the pizza.

Continue with the toppings- (I previously sauteed with salt and pepper) 1. peppers, 2. onions, 3. mushrooms,

Follow with cheese ( I actually left it off and still surprisingly enjoyed it), If desired add pepperoni or salami.

Next cook in oven 10-15min.

Sounds silly but, Ive also enjoyed adding my fresh salad  and avocados to the top of my pizza.

Cauliflower Pizza Crust

4 cups raw cauliflower rice (about one medium head)
  • 1 egg, beaten
  • ⅓ cup soft goat cheese (chevre)
  • 1 teaspoon dried oregano
  • pinch of salt

  • Instructions
    1. Preheat your oven to 400F.
    2. To make the cauliflower rice, pulse batches of raw cauliflower florets in a food processor, until a rice-like texture is achieved.
    3. Fill a large pot with about an inch of water, and bring it to a boil. Add the "rice" and cover; let it cook for about 4-5 minutes. Drain into a fine-mesh strainer.
    4. THIS IS THE SECRET: Once you've strained the rice, transfer it to a clean, thin dishtowel. Wrap up the steamed rice in the dishtowel, twist it up, then SQUEEZE all the excess moisture out! It's amazing how much extra liquid will be released, which will leave you with a nice and dry pizza crust.
    5. In a large bowl, mix up your strained rice, beaten egg, goat cheese, and spices. (Don't be afraid to use your hands! You want it very well mixed.) It won't be like any pizza dough you've ever worked with, but don't worry-- it'll hold together!
    6. Press the dough out onto a baking sheet lined with parchment paper. (It's important that it's lined with parchment paper, or it will stick.) Keep the dough about ⅓" thick, and make the edges a little higher for a "crust" effect, if you like.
    7. Bake for 35-40 minutes at 400F. The crust should be firm, and golden brown when finished.
    8. Now's the time to add all your favorites-- sauce, cheese, and any other toppings you like. Return the pizza to the 400F oven, and bake an additional 5-10 minutes, just until the cheese is hot and bubbly.
    9. Slice and serve immediately!
    Notes
Time-Saving Tip: I recommend making a double-batch of cauliflower pizza crusts--> make one for now, and save one for later. After baking the crusts, wrap up the extra pizza crust in foil, and FREEZE it for a quick "frozen pizza" to enjoy another night! All you need to do is add toppings and bake at 400F, until the cheese is hot and bubbly.

    Nelson Pizza

    Nelson Pizza

Thanks to Katie Montgomery Nelson and Christi Zulim for sharing this pizza recipe. What I most loved and haven't had before was NO RED SAUCE on the pizza. Instead it was olive oil, salt, pepper, 3 garlic cloves! When I made it i doubled it and it made 2 cookie sheet size pizzas (can't have enough pizza!) This is the original recipe.

    Dough- 1c warm water, 1 1/2t yeast, 2t sugar
Let sit 5min and get foamy....
Then add 2t oil, 1t salt, mix
Then add and mix 1c wheat flour and 1 1/2c white flour.
    Let sit 5 min.

450 degrees on oven. I actually cooked the dough separate by itself w/o any ingredients on it. This makes it more crunchy, we like that. Cook 8 min.
Then add on top of hot pizza- olive oil, salt, pepper, 3 garlic cloves (or more :))
Mix it around so garlic gets spread around. Then I added spinach, fresh chopped basil, olives, and ofcourse cheese. Cook till cheese melts. I like to put chopped tomatoes on after it comes out of oven, right b4 we eat it.

12/16/13 This time I doubled it- 2c white, 2c wheat, 1/3c amaranth flour, 1/3c finely blended mixture of flax, pumpkin seed, sunflower and other stuff doubled. Turned out yummy
