Peanut butter Oatmeal Brownie

 From Pioneer Woman
  • 1 box (18.5 Ounce) Chocolate Cake Mix 
  • 1/3 cup Evaporated Milk
  • 1/2c butter (next time use pureed can of black beans)

350 degrees, grease pan, Cook in 9x13 for 30 min

Only optional, not necessary, In a bowl, I stirred Peanut Butter Oatmeal cookies and a little of the evaporate milk. (next time I'll omit)

Then press the mixture on top of the brownie, cook 10 min

Mix peanut butter (warm it up)  and caramel ice cream sauce together. Pour over the oatmeal cookie,

Then right after it comes out of oven sprinkle with chocolate chips or melt chips in micro with a little oil and drizzle on.

Flourless Peanut Butter Oatmeal Cookies

  • 2/3 cup (58g) old-fashioned rolled oats*
  • 1/2 teaspoon ground cinnamon
  • 1 teaspoon baking soda
  • 1 large egg or 2 small
  • 1 cup (250g) peanut butter at room temperature or cold(see notes)
  • 1 T stevia and 2 T xylitol
  • 2-3 T ground flax
  • 1 t vanilla
  • 1/2 cup (90g) semi-sweet or dark chocolate chips

In one bowl Add dry ingredients and mix- oats, cinnamon, soda
In seperate bowl add egg(s), flax- let sit for 10 min, then add stevia and xylitol, vanilla, then peanut butter.
Combine ingredients together.
You want the cookie dough to be cold b/c if it is warm- when you cook them they will spread and be flat.
I put in freezer for 15min
350F degrees, Bake for 9 to 10 minutes. The cookies will look very soft and underbaked, but that's ok. For crispy cookies, bake for up to 12 minutes. 
optional- Scoop the dough, about 1.5 Tablespoons each, onto prepared baking sheet. Bake two batches - 7 cookies on each baking sheet. Gently press down on the dough mounds with the back of a spoon to slightly flatten

Creamy Lime-Cilantro Ranch Dressing

1 pack (1oz) Hidden Valley Ranch Dressing Mix (ignore directions on the packet)
1/2 C buttermilk (or milk works, too)
1 lime
2 cloves garlic, roughly chopped
1/2 C roughly chopped cilantro
1/4 C I only had regular salsa
1 avocado

Put in blender and EAT!

Serves well with Baked creamy taquitos

If you have extra you can freeze it

Baked Creamy Taquitos

From Our Best Bites

6 oz Cream cheese
1/2c salsa
1 tablespoon fresh lime juice
1/2 teaspoon cumin
1 teaspoon chili powder
1/2 teaspoon onion powder
1/4 teaspoon granulated garlic, or garlic powder
3 Tablespoon chopped cilantro
2 Tablespoon sliced green onions
2 C shredded cooked leftover chicken (can use shredded pork or beef)
can add a can of black beans
Corn or flour tortillas


I like to cook chicken with seasonings (season salt and Mrs Dash) on broil in oven or on BBQer, makes it tender.
Mix everything, then chop or shred chicken and add to everything.
Roll up mixture into tortillas.

Heat oven to 425. Line a baking sheet with foil and lightly coat with cooking spray. Roll up tortillas and place seam down on a baking sheet, not touching one another.  Spray lightly with cooking spray, or lightly brush with olive oil and sprinkle lightly with salt. Bake 15-20 min

I have cooked the rolled up tortillas on the stove top b/c I didn't want to use the oven, pour in a little oil to saute.

I like to freeze them after they are cooked. But, you Can freeze b4 you cook them.

Serves well with Lime cilantro dressing

Can use leftover rice and put in tortilla or on the side as a Spanish rice


GLUTEN FREE Taquitos
corn tortillas
1 c shredded chicken or turkey
2 T butter
1/4 c almond flour or alternative
garlic powder
paprika
Salt and pepper

Heat up chicken/turkey, butter, flour, garlic powder, paprika, salt and pepper on the stove. Taste it to see if it needs more seasonings. Warm tortillas in a damp napkin in microwave Put 1-2T on a corn tortilla and roll up. Put oil and salt on outside or rolled tortilla. Put on baking sheet baked 15min, turn tortilla around 7min

Broccoli and Cheese Muffins

3/17/15 It was ok, I made them for st patricks but no one really liked them.  It has broccoli in them, I'll eat em for sure.

From People Love
set oven at 350°F

A couple bunches of broccoli-
cut stems/stalks off the broccoli florets, I did add 1/4c flax and blended
puree stems in blender with 1/4c water or milk

dry ingredients
2 c wheat flour
2 t baking powder
1 t salt
8oz of shredded cheese

liquid ingredients
the pureed broccoli from above (1 c or more)
2 eggs
1/4 cup or 60ml sunflower or canola oil
1/4-1/2 cup or 180ml milk
1 tablespoon Worcestershire sauce 


cut florets into tiny florets and saute (or this time I microwaved)
combine dry ingredients
in seperate bowl combine wet, then combine both.  Put in muffin tins

Bake 20-25 minutes or till tooth pick comes out clean.

Can freeze additional muffins, need to double the recipe next time!!!
'Made 10 muffins b/c I like the muffin tins to be rounded and heaping full

Frozen Banana, Peanut Butter & Chocolate Chip shake/Dairy free- ice cream

Use a food processor or blender,
Makes 1 large shake or 2 small shakes
2 medium FROZEN bananas, peeled and cut into bite-sized chunks
1/4c peanut butter
1/4c  cup skim or 2% milk, or coconut milk, or almond milk
1/4 cup chocolate chips (could use cacao or cocoa powder)
Freeze the bananas in a covered container for at least 4 hours, or overnight.
Put everything except the chocolate chips in the machine. Mix/Chop till smooth, then add choco chips, I like to have a little more chunks, so don't puree long.

Oven Fried Chicken

Amy said- Even my hubby mentioned without knowing where I got the recipe said, this tastes like KFC, but healthier!!!  Next time I think I'd like to dip the chicken in an egg then flour mixture and repeat.  Id like a little thicker breading.  Still successful tho !!

Serves: 3-6 servings, depending on amount of chicken used
INGREDIENTS
  • 3 chicken breasts, cut in strips (I get about 3 strips out of one breast)
  • 4-5 tbsp butter
  • 1 cup flour
  • ½ tsp salt
  • 1 tbsp seasoning salt (I use Lawry's)
  • ½ tsp pepper
  • 2 tsp paprika
INSTRUCTIONS
  1. Preheat oven to 400 degrees F. Place butter on a large baking sheet and place in the oven to melt.
  2. Combine all ingredients besides chicken in a large paper or ziploc bag. Add the chicken and shake to coat.
  3. Take your baking sheet out of the oven once the butter has melted and place your chicken on it, leaving a space between each strip. Bake 10-12 minutes, flip gently with a pair of tongs, and bake another 10-12 minutes.
  4. Be sure to check to make sure your chicken is cooked, as the thickness can greatly affect baking time. You want it to be done but not overdone and dry. Bake another 5-10 minutes if needed.
  5. Remove to a plate lined with paper towel to soak up any excess grease. Serve immediately.

Serve with Mashed potatoes or baked , corn on cob, or roasted broccoli, and salad or caesar salad

Made with 8 chicken thighs and dipped in 2 eggs then in the flour mixture. Dipped each thigh two times in egg and flour.  Cover cookie sheet pan with aluminum foil and spray with non stick spray, and cook for 35 minutes



From the chicken cooked juices....
1. to make a delicious oil and vinegar salad dressing for salad
2. use the juices to make gravy and the bones to make soup.

BANANA NUT PROTEIN COOKIES

Amy said- Definitely not my favorite.  The outside of the cookie was hard. I prefer soft and chewy.  But it can be a good cookie on the go full of protein.  Maybe b/c I used the food processor, instead of mashing up the bananas gently.  Maybe it got too much stirring action and that was why it was hard???

Serves: 12
INGREDIENTS
  • 2 medium overripe bananas, mashed
  • ½ cup vanilla protein powder
  • ½ cup old-fashioned oats
  • ½ cup almond meal (Amy used peanut butter)
  • ½ tsp cinnamon
  • ¼ cup chocolate chips
  • ¼ cup walnuts, chopped
  • INSTRUCTIONS
  1. Preheat oven to 350F. Line a baking sheet with parchment paper or a silipat.
  2. In a medium bowl or food processor, mash bananas with a fork. Add protein powder, oats, almond meal (or peanut butter), and cinnamon, stirring to combine. Fold in chocolate chips and walnuts.
  3. Using wet hands, roll dough into 12 balls. Flatten with hands before placing evenly on the baking sheet.
  4. Bake for about 13 minutes, or until set. Allow cookies to cool for 10 minutes before transferring them to a cooling rack to cool completely.
