Crockpot Taco Dip




Ingredients
1 lb Ground Beef Browned & drained
1 16oz can Refried Beans
2 cups Shredded Mexican Cheese Blend divided
1 cup mild or medium salsa
1 8 oz package cream cheese softened
1 cup sour cream plus additional for serving
1 package taco seasoning
Tortilla Chips for serving
Taco Toppings for serving sliced olives, jalapenos, tomatoes, guacamole, etc

Instructions
In your crockpot stir together browned ground beef, refried beans, salsa, 1 cup cheese, cream cheese, sour cream and taco seasoning. Once blended well spread out evenly with a spatula.
Top with remaining shredded cheese, cover and cook for 2 hours on high.
When done remove lid and top with additional sour cream, sliced olives, sliced jalapenos, or whatever taco toppings you like.  
  • Enjoy with some tortilla chips.

Sweet & Savory Almond Cream Cheese

  • 1/2 cup blanched almonds(soaked overnight; see step 1)
  • 2 teaspoons lemon juice
  • 3 tablespoons water (I used the water from the soaked almonds)
  • 1/4 teaspoon salt
  • 1 t sugar (omit if you want a more savory cheese)
  • 1/2t cornstarch (I wanted to mixture to be a little thicker)


  1. Soak the blanched almonds in water overnight. ( I actually did soak them overnite, but didn't have time the next day to make the cream cheese. So I put the bowl of soaked almonds in the fridge for 3-4 days b/c I couldn't make it. I finally made it and it turned out so delicious. It was fine to soak it for multiple days.
  2. Place all the ingredients in a food processor and pulse until creamy. I used a blender and would blend it for 1 min the scrape down sides and repeated for 5-7 minutes.
  3. Transfer the cream cheese to a bowl and let the cheese chill in the fridge for at least 1 hour before using it to allow it to thicken a bit. Then smear it on your bagel or bread slices! :) 


I did make two different batches from the recipe above. One was sweet to put on top of my baked oatmeal or a fruit dip and the other was savory for a veggie dip or salad dressing. Both are the same recipe except the savory one leave out the sugar.

I added 1/8-1/4c of almond cheese to Ranch Dressing
It turned out great!

The Best Hot Artichoke Dip

We tried this recipe at Anna Cash's house. It was delicious!!


Ingredients

  • 1 8 oz block cream cheese (reg)
  • 1 Cup Hellmann's Mayonnaise (reg)
  • 1 Cup Grated Parmesan Cheese
  • 4 oz can Mild Diced Green Chiles
  • 12 oz Jar (or 2 - 7.5 oz jars) of Marinated Artichoke Hearts         
Directions
Preheat oven to 350 degrees F. Drain artichoke hearts, leaving a tiny bit of marinade behind. Mix all of the ingredients in a bowl. Pour into baking dish and bake on middle rack for approximately 30 minutes, until bubbling and starting to turn golden brown. Remove and serve with tortilla chips, baguette, crackers, whatever you like!

Can put it in a oiled crockpot and let it warm for 2-3 hours

1/2 block cream cheese
1/4c mayo
1/4c parmesan cheese
1/4c sour cream
1/2c  green chile enchilada sauce (or green chilies)
12oz chopped artichokes
14oz canned spinach (or fresh)
salt and pepper
Garlic powder

Put all ingredients on the stove top and heat up on the lowest setting, ready after 1/2 hour. Delicious!!!

Spinach Dip

1 T oil
1 small onion chopped
2 garlic cloves
2-3 cups chopped spinach
1/2c milk
6 oz cream cheese
1/2c mozzarella
2 dashes Worcestershire
salt and pepper

preheat oven 425 degrees
Saute onion till soft add garlic for a minute. Add cream cheese and let it slowly melt, add Worcestershire, milk stir with a whisk. When the cream cheese is melted and every thing is mixed well add: spinach, mozzarella and salt and pepper to taste.
Could be heated up in a crockpot over 3-4 hours.

Bake in oven for 20-25 minutes. serve with olive oil glazed toasted french bread

Best Spinach Artichoke Dip

Pioneer Woman


3 Tablespoons Butter
4 Tablespoons Garlic, Minced
1 bag Spinach
Salt And Pepper, to taste
2 cans Artichoke Hearts, Rinsed And Drained
3 Tablespoons Butter (additional)
3 Tablespoons Flour
1-1/2 cup Whole Milk (more If Needed)
1 package (8 Ounce) Softened Cream Cheese
1/2 cup Crumbled Feta
1/2 cup Grated Parmesan
3/4 cups Grated Pepper Jack Cheese
1/4 teaspoon Cayenne
Extra Grated Pepper Jack
Pita Wedges, Tortilla Chips, Crackers, french bread

INSTRUCTIONS
Melt 3 tablespoons butter in a skillet over medium heat. Add the minced garlic and cook for a couple of minutes. Crank up the heat a bit and throw in the spinach. Stir around and cook for a couple of minutes until the spinach wilts. Remove the spinach from the skillet and put it in a small strainer. Squeeze the excess juice back into the skillet. Set the spinach aside. 

Throw in the artichokes and cook over medium high heat for several minutes, until liquid is cooked off and artichokes start to get a little color. Remove the artichokes.   In the same skillet or a different pot, melt 3 additional tablespoons of butter and whisk in 3 tablespoons of flour until it makes a paste. Cook over medium-low heat for a minute or two, then pour in milk. Stir and cook until slightly thickened; splash in more milk if needed. 

Add cream cheese, feta, Parmesan, pepper jack, and cayenne and stir until cheese are melted and sauce is smooth. Chop artichokes and spinach and add to the sauce. Stir to combine. 
Pour into buttered baking dish. Top with extra grated pepper jack and bake at 375 for 15 minutes, or until cheese is melted and bubbly. 
Serve with pita wedges, chips, or crackers!

Amy said- I have substituted some plain yogurt, sour cream, and mayo in the place of some cream cheese

Cowboy Caviar


1 can drained black beans
1 can drained great northern or black eyed peas
I can drained corn
2 Garlic cloves or garlic powder
1 tomato, chopped (could use canned if needed)
avocado
little oil and little vinegar (all I had was apple cider vinegar but others work too)
1/4 of a red onion, chopped (or any onion really)

salt and pepper
 


I had a seasoning mixture called SPIKE (like seasoned salt but a little healthier)
Easy and fast dip!
Serve with chips, or on a baked potato, or on a salad, or in a quesadilla! Tell me what else it goes on!
I also put it on a breakfast burrito! ohhhh so yummy
