Extra Creamy CrockPot Mac and Cheese

 

Spend With Pennies
Serves 6

2 cups uncooked elbow macaroni
10 ½ ounces condensed cream of chicken soup
3 cups cheddar cheese shredded
cup Gruyere cheese shredded
½ cup mayonnaise (or cream cheese0
½ cup sour cream regular or light
1 teaspoon onion powder
½ teaspoon dry mustard powder
½ teaspoon pepper

Boil macaroni noodles according to directions to make them very al dente. (I cook them for at least 1-2 minutes less than directed on the bag. Mine boiled for 5 minutes). Drain and rinse under cold water.

Combine all ingredients in a 4qt slow cooker and cook on high for 2 hours or low for 3 hours, stirring once or twice.

Optional- you can mix everything and then put in a oiled casserole dish
 350 degrees for 30 min

One time I made pasta the night before and then made sauce separately and then next day combined and warmed them up together

Breaded Chicken

6-8 chicken breasts (sliced is half and pounded)
3 eggs beaten

1 c flour

1t salt and pepper

2/3c of panko (or 2 sleeves of saltine cracker pureed in blender)

3 t garlic powder

1 t onion powder

1/2 t basil

2 T parsley

cooking spray


  • Preheat oven to 400°F.
  • Pound chicken breasts to ½ inch thick.
  • Beat eggs and set aside. Mix flour, salt and pepper in a shallow dish.
  • In another dish, combine Panko, bread crumbs, and seasonings.
  • Dip chicken in flour and shake off any excess.
  • Dip in the egg mixture and then into the bread crumbs. Gently press the crumbs to adhere.
  • Generously spray the chicken with cooking spray on each side and place on a rimmed baking sheet.
  • Bake for 25-28 min or until the chicken reaches 165°F.

I served with Megumi salad and spaghetti noodles.

Delicious Chicken Legs

 Low Carb life


4 pounds chicken drumsticks
4 tablespoons avocado oil
2 teaspoon SMOKED paprika
2 teaspoon garlic powder
2 teaspoon onion powder
2 teaspoon chopped parsley
1 teaspoon salt
1 teaspoon cracked pepper


  • Preheat oven to 425 degrees. Spray a baking sheet with non-stick spray.
  • Add all of the ingredients to a large zip top bag and seal. Smush the chicken around in the bag to coat in the seasoning.
  • Arrange chicken on the baking sheet and bake for 40-45 minutes or until a thermometer reads 165 degrees.
  • Serve immediately.
  • Serve with a side of dipping sauce or Blue Cheese dressing

I cooked at 440 degrees for about 55 minutes. we all definitely really enjoyed these flavorful drumsticks. I would've liked them to be more crunchy and crispy on the outside. Not quite sure how to achieve that yet.
