Christi Zulim Chocolate Cake

Chocolate Cake

  • 2¼ cups flour
  • 1⅔ cups sugar
  •  cup cocoa powder
  •  tsp baking soda
  • ¼ tsp baking powder
  • 1 tsp salt
  • 1 tsp vanilla
  • 2 large eggs
  • ¾ cup butter
  •  cups water

Instructions

  • Preheat the oven to 350°. Butter and flour 3 round 8-inch pans, 2 round 9-inch pans, or 9×13 pan.
  • Add all the ingredients to a large bowl. Mix on low for 30 seconds then scrap the bowl with a spatula to make sure all the ingredients are combined. Then beat on medium high speed for 3 minutes.
  • Bake for 30 minutes for 8 inch pans, 30-35 for 9 inch, and 40-45 minutes for 9×13. When a toothpick inserted in the center comes out clean, remove from the oven and let cool for 10 minutes. Transfer to a wire rack and cool completely for 1 hour.
  • Frost and serve!



Frosting

  •  cups buttersoftened
  • 1 cup unsweetened cocoa powder
  • 5 cups confectioner’s sugar
  • ½ cup milk
  • 2 teaspoons vanilla extract
  • Add cocoa powder to a large bowl or bowl of stand mixer. Whisk through to remove any lumps.
  • Cream together butter and cocoa powder until well-combined.
  • Add sugar and milk to cocoa mixture by adding 1 cup of sugar followed by about a tablespoon of milk. After each addition has been combined, turn mixer onto a high speed for about a minute. Repeat until all sugar and milk have been added.
  • Add vanilla extract  and combine well.
  • If frosting appears too dry, add more milk, a tablespoon at a time until it reaches the right consistency. If it appears to wet and does not hold its form, add more confectioner’s sugar, a tablespoon at a time until it reaches the right consistency.

fresh grated parmesan cheese
crumbled blue chips
Trader Joes- Romano Caesar Dressing
avocado

Leave the chips, dressing and avocado out till right before you serve it.

Toppings for Pizza-
shredded chicken
spinach
basil
black olives
mozzareall cheese
sometimes- sweet potatoes, zucchini
sausage
pepperoni
salami
meatballs
ham and pinneapple
White sauce
Red sauce
or a mixture of the white and red sauce together
Olive oil garlic, salt and pepper sauce

Cilantro Lime Salad Dressing

From Christi Zulim

avocado
1 c loosley packed cilantro, stems removed (I put I bunch of cilantro)
1/2c plain yogurt and or mayo
2 cloves garlic
juice of 1 lime (about 1T) or vinegar
pinch of salt and pepper
1/4c olive oil
jalapeno or cayene


Put everything in the blender and puree. Can put in fridge for a week, could freeze thereafter.

Serve with -
freshly cooked tortilla
sliced lettuce
salsa
shredded chicken (Christi boiled her chicken b/c it shreds nicely)
shredded cheese
avocado chunks
black beans from the can no extra seasonings
sour cream/plain yogurt
A few leaves of cilantro
Crushed tortilla chips

Also serve with Costa Vida Chicken and Costa Vida Salad and Chicken Taquitos

Chocolate Peanut Butter patties

Paleo peanut butter patties

Christi made this and said they were delicious!!!

Instructions
  1. In a food processor, combine almond flour, salt and baking soda
  2. Pulse in shortening, honey and vanilla until combined
  3. Roll out dough between 2 pieces of parchment paper to 1/4-inch thick
  4. Chill dough in freezer for 20 minutes
  5. Using a 2-inch cookie cutter, cut out dough
  6. Press your thumb in center of each circle to make indentation
  7. Bake at 350° for 4-6 minutes
  8. Cool cookies for 1 hour
  9. Place one teaspoon of sunbutter on top of each cookie
  10. Freeze for 10 minutes
  11. Melt chocolate over very low heat
  12. Dip cookies in chocolate
  13. Place on a parchment lined baking sheet
  14. Freeze for 30 minutes
  15. Serve
