Best Bites Tandoori Chicken

Tandoori, Turmeric rice and Flatbread

IT's from Lauren Hedin's our best bites cook book.

2 c plain/greek yogurt
3 T lemon juice (or a juice from 1 lemon)
1t garlic powder
1 chopped onion
1/2c oil
3 t salt
1/2t black pepper
2T paprika
1T cumin and ginger
1T turmeric
1t red pepper or splash of cayenne
Chicken drumsticks and/or thighs

This can be assembled a few days b4 and let the raw chicken sit in the liquid mixture to marinade.
I did make extra of the sauce and froze it so I could have it for dinner a couple weeks down the road.

Can grill the chicken or bake in oven 350 for 20 min, then slather more marinade on, bake 10 more min slather more marinade, 10 more min bake and spray with oil, increase oven to 450 bake 10 more min until you get some nice charred spots.

Serve with Turmeric Rice

Ingredients
2 teaspoons olive oil
1/4 cup diced onion
1 teaspoon ground turmeric
1/2 teaspoon curry powder
2 cups chicken broth
1 cup Jasmine rice
kosher salt

Heat medium-sized pot with lid on stove top.  Add oil and onion and cook until onion is tender, about 3 minutes.  Add turmeric and curry powder and stir to heat and distribute for 15-30 seconds.  Add broth and bring to a boil, add rice.  Reduce heat to a simmer.  Cover pot and cook for 20 minutes, covered the entire time.  Remove from heat, fluff with a fork and add salt to taste before serving.

Oven Roasted Green Beans

Food Network

1 1/2 pounds green beans
2 tablespoons extra-virgin olive oil
1 teaspoon kosher salt
1/2 teaspoon freshly ground black pepper


Directions
Preheat the oven to 425 degrees F.
Trim the ends of the green beans and add to a large bowl.
Toss with the extra-virgin olive oil, salt and pepper and spread out evenly on a parchment lined baking sheet.
Roast, stirring once halfway through, until lightly caramelized and crisp tender, 12 to 15 minutes. Serve alongside the Foil Wrapped Side of Salmon with Lemon and Rosemary.

Oven BBQ Chicken Drumsticks

Preheat oven to 400 degrees F (200 degrees C). Place drumsticks in a baking dish.

Whisk water, ketchup, vinegar, brown sugar, butter, salt, Worcestershire sauce, mustard, and chili powder together in a bowl; pour mixture over drumsticks. Cover with aluminum foil.

Bake in preheated oven until no longer pink at the bone and the juices run clear, about 1 hour, turning chicken about halfway through. An instant-read thermometer inserted near the bone should read 165 degrees F (74 degrees C).

Serve with Green Beans

Learning

1. Asking questions and not finding the answer, "They are an invitation for you to grow spiritually."
2. These questions, "propel us to engage in a spiritual wrestle so that the Lord can lead us along."
3. As you cultivate these spiritual habits by wrestling with the Lord, there are two questions that will help open the heavens. 
First, ask the Lord to teach you what it feels and sounds like for you when He is speaking to you via the Holy Ghost, and then watch how He tutors you. 
And, second, if you've never asked the Lord how He feels about you, that is a great question to ask. In time, He will tell you, and as He does, you'll learn more about speaking His language.

Allie's Rules
  1. Surround yourself with people who build you up, not people who tear you down.
  2. Treat your kisses like you have a limited supply.
  3. Guard your heart. Seriously… your heart is precious.
  4. Stay vertical/no buttons and zippers (or Velcro). In other words, set your boundaries and stick to them.
  5. Have an accountability partner and be willing to tell HER everything.
  6. Be so so so so so so so SO SO SO SO careful who you date.
  7. If you’re wondering if you should break up with him, break up with him.
  8. If your girl gets broken up with, go buy her a stuffed animal, a blanket, candy, and lots and lots of ice cream. (Other gifts are acceptable.)
  9. Pray, PRAY, PRAY! Don’t ever forget how much you need God.
  10. Have a quiet time. It may seem like a hassle, but it will help you stay close to God.
  11. Be nice to your parents. They love you and want the best for you, so if you disagree with them, just realize that they are a lot smarter than you…sorry about it.
  12. If you find yourself lying to your parents/other adults in your life, backtrack and get out of that situation IMMEDIATELY. You are somewhere you do not want to be.
  13. Never be afraid to say no. It’s better to be a wimp than dead.
  14. When you fall on your face, get back up and keep moving (literally and figuratively).
  15. Journal so you can look back and see what God has done in your life.
  16. Even when you don’t want to, GO TO CHURCH!
  17. If it’s not classy, don’t do it.
  18. Don’t judge. Even when people are doing things you don’t agree with, show them love.
  19. Pause before you speak… this will prevent a lot of problems.
  20. Selfies are for faces.

Fiber And Protein Breakfast

Two slightly different seed breakfast porridge/cereal

1. Soaked Breakfast Seed cereal
Soak in a container in the fridge the nite before:
sunflower seeds
Pumpkin seeds
chia
ground flax
sesame seeds

Season with cinnamon and/or nutmeg, allspice. In morning add some milk- honey, agave, or another sweetener, raisins.

2. Toasted Breakfast cereal
On stove top with coconut oil toast:
coconut shreds
oats
any or all of the seeds above

After they've been slightly toasted, add them to a bowl with your choice of milk, add raisins or craisins, chopped dates.

Swedish Meatballs and Gravy

  • Meatballs-
  • 2 tablespoons olive oil, divided
  • 1 onion, diced
  • 1 stalk chopped celery
  • 2 teaspoons of minced garlic or 1/2t garlic powder
  • 1 pound ground beef
  • didn't have- 1 pound ground pork
  • 1/2 cup Panko (or chopped up leftover bread)
  • 2 large egg yolks
  • 1/4 teaspoon ground allspice
  • didnt have- 1/4 teaspoon ground nutmeg
  • Kosher salt and freshly ground black pepper, to taste

FOR THE GRAVY-

  • 1/4 cup unsalted butter
  • 1/3 cup whole wheat flour
  • 4 cups beef/chicken broth
  • 1/4-1/2 c milk
  • Kosher salt and freshly ground black pepper, to taste
  • 2 tablespoons chopped fresh parsley leaves
  1. Heat 1 tablespoon olive oil in a large skillet over medium heat. Add onion, and cook, stirring frequently, until onions have become translucent, about 7-10 minutes.
  2. In a large bowl, whisk together Panko, egg yolks, allspice, nutmeg and cooked onion; season with salt and pepper, to taste, then combine ground beef, ground pork. Using a wooden spoon or clean hands, stir until well combined. Roll the mixture into 1 1/4-to-1 1/2-inch meatballs, forming about 24 meatballs.
  3. Add remaining 1 tablespoon olive oil to the skillet. Add meatballs, in batches, and cook until all sides are browned, about 4-5 minutes. Transfer to a paper towel-lined plate.
  4. To make the gravy, melt butter in the skillet. Whisk in flour until lightly browned, about 1 minute. Gradually whisk in beef broth and cook, whisking constantly, until slightly thickened, about 1-2 minutes. Stir in sour cream; season with salt and pepper, to taste.
  5. Stir in meatballs and cook, stirring occasionally, until heated through and thickened, about 8-10 minutes.
  6. Serve immediately, garnished with parsley, if desired
Serve with noodles or rice, and a side veggie (we had carrots and cucumbers).
Can make extra and freeze for a future meal.

Zucchini Fries

  • 2-3 small zucchini, sliced into fry shapes
  • 1/4 cup flour (I used chickpea flour to offer a gluten-free option, but I don’t see why regular flour shouldn’t also work.) (24g)
  • 1/4 tsp salt
  • 1/4 tsp garlic powder
  • 1/2 cup milk of choice (120g)
  • 1 cup breadcrumbs (I made my own by toasting Ezekiel bread and processing it in a food processor. If you’re gluten-free, use gf bread.) (40g)
Total Time: 20m
Yield: 40-45 zucchini fries


Instructions

Zucchini fries recipe: Preheat oven to 420F. Lightly grease a cooling rack, place it on a baking tray, and set aside. Set up an assembly line: flour and spices in one bowl, milk in another, and breadcrumbs in a third. Dip each zucchini stick in the flour, then the milk, then the breadcrumbs. Place on the cooling rack. Bake 18-19 minutes, or until desired crispiness is reached. Makes 40-45 fries.

Homemade Peanut Butter

The Kitchn

2 cups (16 ounces) raw, shelled peanuts
1-2 tablespoons peanut oil or other oil (optional, for creamier peanut butter)
1-2 tablespoons honey or other sweetener (optional, for sweeter peanut butter)
can add 1/2t salt (but I forgot)
1/4c flax
Optional Add-Ins: 1-2 tablespoons cocoa powder, 1/2 teaspoon cinnamon or other spice, handful of chocolate chips, a few spoonfuls of nutella

I roasted the peanuts (but you don't have to)  on the stove top on high with oil for 3-5 minutes. Between 1 1/2 minutes scrape the side of the processor.
Then poor the peanuts, oil, honey in the food processor. I processed for 5 min, so it would be super creamy.  Watch out the blade gets really hot.

Tadahhh you have peanut butter. The peanut butter can be used immediately and will keep for several weeks in the fridge.

Ingredients

  • 2 cups raw whole almonds and grind in food processor (Or make your own by grinding slivered almonds in a vitamix, blender, or coffee grinder until very finely ground) (200g)
  • just over 1/4 tsp salt
  • 1/4 tsp baking soda (I accidentally used 1 t instead, but turned out fine)
  • 2 tsp pure vanilla extract
  • 2 tbsp pure maple syrup or honey
  • 1/2 cup peanut butter OR allergy-friendly sub, thinned out with milk of choice until spreadable
  • 1/2 cup carob powder. choco chips work too (80g) melted with 1 tsp oil, OR use healthy chocolate sauce (recipe below)
Total Time: 20m
Yield: 12-16 bars


Instructions

Preheat the oven to 350 F. Line an 8-inch square pan with parchment, and set aside. In a measuring bowl, stir together the almond meal, salt, baking soda, vanilla, and sweetener (and water, if using) to form a dough. Transfer the dough to the prepared pan, and use a second sheet of parchment to smush the dough out evenly, pressing down again and again until it covers the bottom of the pan. Bake 12 minutes on the center rack, then let cool at least 20 minutes before either frosting right in the pan or removing from the pan and then frosting with the peanut butter. Spread the chocolate on top, then chill to set the chocolate layer.

Healthy Chocolate Sauce or Hot Chocolate Butter

  • 4 tablespoons (60g) virgin coconut oil
  • 1/2 cup plus 1 tablespoon (52g) carob/cocoa powder. (For a sauce, decrease to 1/4 cup)
  • 2-4T honey
Melt the coconut oil and honey  in the microwave. My honey was old and granulized, but the micro smoothed it out. Add the cocoa. Stir stir stir! Stir until it gets thick like Artisana Cacao Bliss.

For Magic Shell or Healthy Chocolate Sauce:
Decrease cocoa powder to 1/4 cup and keep all other measurements the same. Also, if you re-heat it for a few seconds, it’ll get thinner. And if you freeze it, you can make incredible chocolate bars… or even chocolate chips! Just break up the chocolate bars into little pieces.
