SWEET CHERRY FREEZER JAM WITH LIME

Yield: 5 half-pints
Ingredients
  • 2 c. finely chopped ripe sweet cherries
  • 2 T. fresh lime juice
  • lime zest from 2 large limes
  • 4-1/4 c. sugar
  • 3/4 c. water
  • 1 box (1.75 oz.) SURE-JELL Fruit Pectin
Preparation
Be sure to first read through my freezer jam tips in this post, right before the recipe. Then wash 5 half-pint (1 cup) plastic containers and lids with hot water and dish soap. Rinse and dry thoroughly.
In a very large bowl, combine chopped cherries, lime juice, lime zest, and sugar. Stir to combine. Let stand 10 minutes, stirring every couple of minutes.
In a small saucepan over high heat, stir together water and pectin. Bring to a boil, stirring constantly. Boil and stir for 1 minute. Add pectin mixture to cherry mixture and stir constantly for 3 minutes, or until sugar is dissolved and no longer grainy. If a few sugar crystals remain, that's ok.
Immediately fill containers to within 1/2'' of container tops. With a damp paper towel, wipe off the edges of containers. Immediately cover with lids. Let stand at room temperature for 24 hours. Jam can now be used, stored in the refrigerator for up to 1 month, or frozen for up to 1 year. Thaw in refrigerator before using.

Stuffed french toast

Original recipe serves 5, DBL(double) recipe serves 10

1 loaf of bread (I've used whole wheat, and white and even cinnamon bread)
2 loaves of bread for double batch

Egg Mixture-
DBL       Original-
6            3 eggs
2t          1 t cinnamon
2           1T hemp seeds/powder
2           1 T flax
1/2        1/4c milk
2           1 banana mashed (optional, I just had one going bad so I added it)
Mix everything 


Filling-
2           1 package of cream cheese, softened
1/2c      1/4c any type of jam

This time I had extra thick slices white bread.  I cut each slice of bread, in half and spread the filling in the middle.
Then coated the outside of the bread with the egg mixture. and cooked for a few minutes on each side

Sweet Breaded pork











3 cups panko bread crumbs

The sweet sauce, Heat on the stove-
Leftover red pepper or vinegarette  salad dressing
I added 1/4c of jam
1 t garlic powder
1/4c honey

Begin in morning-
Trim any excess fat from pork and pat dry with a paper towel. Pound down the pork till 1/2inch thick.  Season with salt and pepper. Dust with flour, shaking off any excess. Dip pork into egg mixture cover both sides, then coat with the panko crumbs, then let sit in fridge till ready to cook it.

Heat sweet sauce on stove. I like to let it cook 20 min, so it gets a tiny bit thicker, instead of runny and then let sit in fridge.

Heat oil in a large skillet over medium-high heat. Add 4 breaded pork cutlets and cook until pork is not longer pink inside, and the crust is well-browned, 4 to 5 minutes per side. Transfer to plate lined with paper towels. Sprinkle with salt. Repeat with remaining vegetable oil and pork cutlets.

Serve with the sweet sauce, corn on cob (cook for 3 min in boiling water), roasted potatoes and any type of salad.
