Green bean and veggie soup


Cooking LSL

  • 2 tbsp olive oil
  •  1 small chopped onion
  •  2 cloves garlic chopped
  •  2 medium potatoes diced
  •  1 medium chopped carrot
  •  2 cups diced tomatoes — (fresh or canned)
  •  3 cups green beans — (fresh or frozen, thawed) cut into pieces
  •  5 cups chicken — (or vegetable) stock (can use hot water and chicken base)
  •  1/2 tsp black pepper
  •  1 tsp salt - or more depending on taste
  •  1/4 tsp dry basil
  • avocado

  1. In a large sauce pan, over medium heat saute onions and carrots in olive oil for 3 minutes.
  2. Add chicken stock, potatoes, tomatoes and garlic and bring to a boil. Add salt, pepper and basil.
  3. Reduce heat and simmer for 15 minutes. Add green beans and simmer for 15 more minutes, until tender. (I do not like over cooked green beans, that's why I add them 15 minutes after all the other vegetables.).
  4. Cook soup until all vegetables appear cooked through, it usually takes me 30-35 minutes. Cooking time depends on the king of pot used, stove, vegetables amounts of stock used.
  5. Serve hot. You can garnish with chopped parsley or dill.
  6. After cooked, I served the soup with avocado on top. It made everything come together, Delicious
When I was sick I made this and it was quick and easy and perfect for my sore throat

Braised Coconut Spinach & Chickpeas with Lemon

Jen coon made this for my family after baby luke arrived. it was very tasty and I want to make it again.


  • teaspoons oil or ghee
  • small yellow onion
  • 1/2 cup sun-dried tomatoes, chopped
  • large cloves garlic, peeled and minced
  • 1 t ginger powder or 1 tablespoon peeled and grated fresh ginger
  • Finely grated zest of 1 large lemon
  • dried hot red pepper, or pinch red pepper flakes (optional)
  • (15-ounce) can chickpeas, drained and rinsed or lentils
  • pound baby spinach
  • (13 to 14-ounce) can coconut milk
  • tablespoons freshly squeezed lemon juice, plus more as needed
  • teaspoon salt, plus more as needed

Heat the oil or ghee in a large, deep Dutch oven or heavy pot over medium-high heat. Add the onion and cook until the onion is beginning to brown, about 5 minutes. Add the sun-dried tomatoes, garlic, fresh ginger, lemon zest, and red pepper, if using. Cook for 3 minutes, stirring frequently.

Add the chickpeas and cook over high heat for a few minutes, or until the chickpeas are beginning to turn golden and are coated with the onion and garlic mixture.

Toss in the spinach, one handful at a time. This will take about 5 minutes; stir in a handful or two and wait for it to wilt down and make room in the pot before adding the next handful. When all the spinach has been added, add the coconut milk, lemon juice, ground ginger, and salt. Bring to a simmer, then turn down the heat and cook until the chickpeas are warmed through, about 10 minutes. Taste and season with more salt and lemon juice if needed. Serve hot over roasted sweet potatoes, with cilantro leaves and toasted unsweetened coconut to garnish.

Recipe Notes

Serving: This is thick enough to eat on its own with a fork, but it's also saucy enough to serve over pasta, rice, quinoa, or another grain.
Storage: Leftovers can be stored in an airtight container in the refrigerator for up to 5 days. Freeze in individual portions for up to 3 months. Allow it to thaw overnight in the fridge and then reheat gently over low heat on the stove.

Teriyaki Grilled Chicken and Veggie Rice Bowls

Yield: 4 servings
Ingredients
    Teriyaki sauce
  • 1/2 cup low-sodium soy sauce
  • 1/2 cup water
  • 3 Tbsp packed light-brown sugar
  • 3 Tbsp honey
  • 3 cloves garlic, minced (1 Tbsp)
  • 1 Tbsp minced ginger
  • 1 Tbsp rice vinegar
  • 1 1/2 Tbsp cornstarch
  • Chicken, veggies and rice
  • 3 1/2 Tbsp olive oil, divided, plus more for brushing grill
  • 1 1/2 lbs bonless skinless chicken breasts
  • Ground black pepper
  • 1 medium zucchini, diced into half moons and quartered (1 1/2 cups)
  • 1 1/2 cups matchstick carrots
  • 2 1/2 cups small diced broccoli florets
  • 1 1/2 - 2 cups white or brown rice, cooked according to directions on package (I prefer short grain brown rice)
  • Sesame seeds, optional
Directions
  • For the teriyaki sauce:
  • In a small saucepan whisk together low-sodium soy sauce, 1/4 cup + 2 Tbsp of the water, the brown sugar, honey, garlic, ginger and rice vinegar. Bring mixture to a light boil over medium-high heat. Whisk together cornstarch with remaining 2 Tbsp water, then add to sauce mixture in saucepan. Reduce heat slightly and allow to boil 1 minute, stirring constantly. Remove from heat, set aside.
  • For the chicken:
  • Brush both sides of chicken with 1 1/2 Tbsp of the olive oil and season pepper (you won't need salt since the teriyaki sauce is plenty salty). Preheat a grill over medium-high heat (to about 425 - 450 degrees). Brush grill grates lightly with oil then grill chicken until center registers 160 - 165 degrees on an instant read thermometer, about 4 minutes per side. Remove and let rest 5 minutes then dice into cubes.
  • For the veggies:
  • Heat remaining 2 Tbsp olive oil in a saute pan over medium-high heat. Add zucchini, broccoli and carrots and saute 4 - 5 minutes until crisp tender.
  • To assemble bowls:
  • Layer rice into 4 bowls then top each with 1/4 of the chicken and 1/4 of the veggies. Drizzle desired amount of teriyaki sauce over tops (you'll have extra left over - use it for chicken or salmon the next day), sprinkle with sesame seeds. Serve warm.

Cobb Salad

Pioneer Woman

Crisp greens
yummy chicken
hard boiled eggs
bacon
avocado
tomato
shredded cheese
sliced cucumbers
shredded carrots

Salad Dressing
1 cup Mayonnaise
1/4 cup Sour Cream and 1/4c of plain yogurt
1/2 cup Buttermilk or cream cheese
3 dashes Worcestershire Sauce
2 Tablespoons Chopped Chives
4 ounces, weight Blue Cheese Crumbles
1 dash Salt
1/2 teaspoon Black Pepper



Grill or broil Chicken sprinkle them with salt and pepper…
I put dressing ingredients in the blender to puree. Chop everything arrange in a vegetable tray and let everyone assemble their own salad

Mock 'Tuna' sandwich

Basil

1 15-ounce can cannellini beans, drained and rinsed
¼ cup garlic hummus
juice of 1 lemon
2 celery stalks, cleaned and diced
1 teaspoon paprika
1 tablespoon chopped fresh dill
1 tablespoon nutritional yeast
salt and pepper, to taste
1 avocado, sliced
2 whole wheat bagels, sliced and toasted
2 slices tomato
pea shoots
2 slices red onion

  1. In a medium bowl, smash the cannellini beans with a fork until a chunky mash is formed.
  2. Add in the hummus, lemon juice, celery, paprika, dill, nutritional yeast, salt, and pepper. Stir to combine.
  3. Assemble sandwiches by spooning "tuna mixture onto toasted bagel halves. Top with tomato slice, red onion slice, pea shoots, and avocado. Slice and serve immediately.
  4. Reserve leftover "tuna" mixture in fridge for future sandwiches and/or salads!

Cauliflower Tacos

Basil blog coats the cauliflower in a seasoned almond flour then roasts it, avocado cream,  and also has a cabbage slaw I want.

(Two Peas)
For the Tacos:
2 teaspoons chili powder
1 teaspoon ground cumin
1/4 teaspoon garlic powder
1/4 teaspoon onion powder
1 teaspoon sea salt
1 tablespoon fresh lime juice
1 tablespoon olive oil
1 tablespoon water
1 (15 oz.) can of chickpeas, drained and rinsed
1 small head cauliflower, washed and cut into bite-size florets
Corn tortillas
1 cup finely chopped red cabbage
1 jalapeño, sliced, seeds removed
1 large avocado, seed removed and diced
Chopped cilantro



1. Preheat oven to 400 degrees. In a medium bowl, whisk together chili powder, garlic powder, onion powder, cumin, salt, lime juice, olive oil, and water. Stir in chickpeas and cauliflower florets. Place seasoned chickpeas and cauliflower on a greased baking sheet. Roast for 30-35 minutes, stirring occasionally during cooking, until chickpeas are slightly crispy and cauliflower is tender. Remove from oven and set aside.


(Basil)
For the Cabbage Slaw
  • 2 cups thinly sliced purple cabbage
  • ¼ cup fresh lime juice
  • 1 tablespoon apple cider vinegar
  • ½ tablespoon agave nectar or other liquid sweetener
  • ¼ teaspoon fine grain sea salt
For the Avocado Cream
  • 1 avocado
  • ¼ cup cilantro leaves
  • 2 tablespoons fresh lime juice
  • ¼ teaspoon fine grain sea salt

Potato Rosemary Soup

Potato Rosemary Soup

Ingredients:

  • 2 tsp. olive oil 
  • 1/2 small shallot, minced 
  • 6 cups chicken broth 
  • 1 lb. Yukon Gold or other potatoes, peeled and cut into large pieces 
  • 1 tsp. minced fresh rosemary 
  • 1 bay leaf 
  • 1/4 tsp. freshly ground pepper 
  • Salt, to taste 

Directions:

In a large saucepan over medium heat, warm the olive oil. Add the shallot and cook, stirring, until translucent, 1 to 2 minutes. Pour in the broth and bring to a boil. Add the potatoes, half of the minced rosemary, the bay leaf and pepper. Cover partially, reduce the heat to low and simmer until the potatoes are tender when pierced with a fork, 15 to 20 minutes.

Remove the pan from the heat and discard the bay leaf. Using a fork or potato masher, crush the potatoes into small chunks. Season with salt.

Ladle the soup into warmed bowls. Sprinkle with the remaining minced rosemary, dividing it evenly. Serve immediately. Serves 4 to 6.

Quinoa Veggie Burger

Eating Well

INGREDIENTS


Double      Original
  • 2c                1 cup water
  • 1c                1/2 cup red/white quinoa
  • 2T                1 tablespoon canola oil
  • 2c                1 cup diced onion
  • 4c                2 cups finely chopped cremini or white button mushrooms
  • 2t                1 teaspoon  garlic powder
  • 1and 1/2t      3/4 teaspoon dried marjoram (didn't have, used basil instead)
  • 1/2t              1/4 teaspoon dried oregano
  • 3                  1 large egg
  • 1c                2/3 cup shredded reduced-fat Cheddar cheese
  • 1c               1/2 cup whole pecans, toasted and finely chopped (had only pumpkin seeds) (see Tip)
  • 2/3c            1/3 cup quick-cooking rolled oats
  • 2T               1 tablespoon reduced-sodium soy sauce
  • salt and pepper
  • 8 small whole-wheat burger buns, toasted if desired

PREPARATION


  1. Combine water and quinoa in a medium saucepan. Bring to a boil. Reduce to a simmer, cover and cook for 15 minutes. Remove from heat and let stand, covered, for 10 minutes. Fluff with a fork and set aside to cool.
  2. Preheat oven to 350°F. Lightly grease a baking sheet or line with parchment paper.
  3. Chop mushrooms in food processor. Heat oil in a large saucepan over medium heat. Add onion and cook, stirring frequently, until starting to soften, about 5 minutes. Add mushrooms (i cooked till slightly brown 10min) then add garlic, marjoram and oregano; cook, stirring, until the mushrooms are tender, about 5 minutes. Let cool for about 5 minutes.
  4. Beat egg in a medium bowl. Add the quinoa, mushroom mixture, cheese, pecans, oats and soy sauce; stir to combine. Scoop scant 1/2-cup portions of the mixture onto the baking sheet and shape into 8 patties, about 3 inches wide, leaving about 1 inch of space between each patty. (The mixture will be crumbly; patting it into burgers on the baking sheet makes it easier to work with. The burgers hold together very well once baked.)
  5. Bake the burgers until crispy, 28 to 30 minutes. Serve on buns with your favorite garnishes.

TIPS & NOTES


  • Make Ahead Tip: Individually wrap and freeze cooked burgers for up to 3 months. Defrost overnight in the refrigerator. Reheat in a skillet with a little oil.
  • For the best flavor, toast nuts before adding to recipes. Spread whole nuts on a baking sheet and bake at 350°F, stirring once, until fragrant, 7 to 9 minutes. For chopped nuts, place in a small dry skillet and cook over medium-low heat, stirring constantly, until fragrant and lightly browned, 2 to 4 minutes.
