Classic Deviled Eggs

Lily made these delicious deviled eggs for a neighborhood party at the Zwygarts

NY Times Cooking

  • 6 large eggs
  • 1 teaspoon mustard
  • 1 to 2 dashes Tabasco sauce, to taste
  •  Salt, to taste
  • ¼ teaspoon freshly ground black pepper
  • garlic powder to taste
  • 1 tablespoon snipped fresh chives
  • 3 tablespoons mayonnaise
  •  Paprika, for garnish
  •  Whole fresh chives, for garnish
  1. Rinse eggs with warm water, and place in a small saucepan. Cover with cold water, place the pan over medium-high heat and bring to a boil. Turn off heat, cover and let sit for 10-12 minutes. Drain, rinse under cold water and peel. Cool in the refrigerator, loosely covered, for 15 minutes.
  2. Halve eggs lengthwise, and carefully scoop out yolks. Place yolks in a bowl, and mash with a fork. Add mustard, Tabasco, salt, pepper and snipped chives. Stir in mayonnaise.
  3. Fill each egg white with about 1 1/2 teaspoons of the egg-yolk mixture and dust the top with paprika. Arrange in a spoke design on a platter; garnish with whole chives.

Shannon Pointer 40 year old recommendations

I texted my friend who does lots of alternative remedies. I hadn't been sleeping well, so she sent me a list of supplements that have worked for her.

Insomnia natural cure-

1. omega 3 oil Barleans brand

2. Vitex, Natures Way Brand. 2-3x's a day. Nourish the pituitary which will balance hormones

3. womens formula, Female Ease- vickie sorensens Nature works

4. Cannabis- dont discount this. It is not mariguana. My naturopath has grown his own and he's added some herbs to make a sleep cannabis formula. Order from him. NSchu75856@aol.com

5. Magnesium glycinate or threonate for sleep

Around 12/2021

At the same time I took Jennifer finlayson-Fife's Art of Desire class, I went to the Dr to get my hormone levels checked and my levels were off.

Went to Hormone Dr- Jennifer Landberg- I felt a good impact from these supplements, it was her doctor appointments that were so expensive and the blood work too.

$80 Testosterone- pharmacy

$100 Progesterone- pharmacy

Vit D

$14 Thyroid Dr Christophers

$30 Indole -3-Carbinol-  suppose to help metabolize fibrotic cysts (ellie told me about these)

$40 Hair and Nails at walmart online or $4 more on amazon, I definitely feel an impact from these supplements

$35 Cod liver Oil Supplements on amazon

$20 Lutein for eyes (recommended from Danielle Checketts)

$25 Resolve Wild Yam cream- helps stabilize estrogen and build/restore progesterone (ellie told me about these)

$56 Thyroid At Ancestral online (It seemed like it was making my neck ache constantly, No Longer use 2022)

Sushi

  • 6 sheets sushi seaweed aka nori
  • 1 batch prepared sushi rice
  • 3 cans of tuna or or crab meat or 1/2 lb sushi-grade raw salmon or desired raw fish of choice
  • 4 oz cream cheese sliced into strips
  • 1 avocado sliced
  • Slivered  veggies- carrots, bell pepper, asparagus, sweet potato, cabbage, green beans, greens, sprouts, 1 cucumber
  • soy sauce for serving
  • Crispy friend onions
  • Aoli- mayo and Sriracha, salt, pepper, lime or lemon

Instructions

  • 2 cups Japanese short-grain rice (“sushi rice”)
  • 2 cups water
  • 4-inch square of kombu (optional)
  • 1/4 cup unseasoned rice vinegar
  • 4 teaspoons sugar (or honey)
  • 1 teaspoon fine sea salt

  • Rinse the rice. Rinse the rice with cold water in a large fine mesh strainer for 1-2 minutes, or until the water runs very clear.  Drain well.
  • Cook the rice. See details in the notes below for how to cook the rice either on the stovetop, in a rice cooker, or in the Instant Pot.
  • Make the sushi vinegar. While the rice is cooking, heat the rice vinegar, sugar and sea salt together in a small saucepan over medium-high heat until the mixture nearly reaches a simmer.  Remove from heat and whisk until the sugar has dissolved.  (Alternately, you can just heat the mixture in the microwave if you prefer.)
  • Season the rice. Once the rice is cooked, transfer the rice immediately to a large mixing bowl and drizzle it evenly with the sushi vinegar. Use a spatula to very gently fold the rice — more of a slicing and lifting motion, rather than stirring and smooshing — until the vinegar is evenly mixed into the rice.
  • Cool. Cover the mixing bowl with a damp towel so that it is touching the surface of the rice, which will help prevent the rice from drying out. Let it cool on the counter (or in the refrigerator) until it reaches room temperature.
  • Serve. Use the rice immediately in a recipe, or transfer to an airtight food storage container and refrigerate for up to 3 days.

Best Baked Potato

Gimme some oven

  • 1 medium-to-large Russet potato, scrubbed clean of any dirt
  • 12 teaspoons melted butter (or olive oil)
  • pinch of coarse Kosher salt
  • pinch of freshly-cracked black pepper
  1. Heat the oven. Heat oven to 450°F.  Line a large baking sheet with foil (or parchment*), and if you happen to own a wire cooling rack, place it on top of the baking sheet.
  2. Prep the potato. Using a dinner fork or a small paring knife, poke the potato at least 10 times on all sides.  Place the potato on the prepared baking sheet.
  3. Bake (round one). Bake for 25 minutes.  Remove baking sheet from the oven.
  4. Brush with butter (or oil).  Using a pastry brush, brush the outside of the potato with melted butter or olive oil until it is completely coated on all sides.  Sprinkle the potato with a generous pinch of Kosher salt, and place the potato back on the baking sheet reverse-side-up, so that it can cook evenly on both sides.
  5. Bake (round two). Bake for an additional 20 minutes.  Using an oven mitt, carefully squeeze the potato to check for doneness.  If the insides are soft and give under pressure, remove the potato from the oven.  Otherwise, continue cooking in 5-minute increments until the potato is soft.
  6. Cut the potato.  Using a small paring knife, slice halfway through the potato lengthwise.  Then give it a gentle squeeze to open.
  7. Serve.  Serve immediately, with your desired toppings.
sour cream
cheddar cheese
feta cheese
steamed broccoli
chives/green onions
sauteed mushrooms
crumbled bacon
cherry tomatoes
avocado
chili

Moab Activities and Hikes

 Places to stay-

1. Red Cliffs Lodge- we stayed here when Logan went to a English Teachers Retreat, it was beautiful by the Colorado river and surrounded with tall red rocks, it was so quiet and enjoyable. Its located 25 minutes north east of Moab, worth the beautiful drive

2. Expedition Lodge- it had bunk beds for kids, pool and hot tub. We went in February b/c we knew it'd be less busy and cheaper hotel rates.

Hike

Mill Creek Trail- hiking in water and red rocks, Mel and Drew Chambers did this and shared pictures
