- 1 tablespoon olive oil
- 1 small yellow onion , chopped
- 4 garlic cloves , minced
- 1 cup whole cashews (not roasted or salted)
- 1 cup water
- 1 tablespoon fresh lemon juice
- 1 teaspoon apple cider vinegar
- 1 ½ teaspoons fine sea salt (I use Real Salt brand)
- ½ teaspoon ground black pepper
- Add 2 T nurtitional yeast (from Vegan 8)
- Heat the olive oil in a skillet over medium-high heat and saute the onion until it's soft and translucent. This should take 5 to 8 minutes. Add in the garlic and stir until fragrant, about 1 more minute. Remove from the heat.
- In a high-speed blender, combine the cashews, water, lemon juice, vinegar, salt, and pepper. Add the sauteed onions and garlic, then blend until very smooth. The sauce should look creamy, without any visible chunks of cashews.
- Serve this alfredo sauce over your favorite cooked pasta, then adjust any seasoning to taste. The noodles will dilute the flavor of the sauce, so you may need to add more salt and pepper, as needed. (This recipe makes enough to coat one pound of pasta.) Leftover sauce can be stored in an airtight container in the fridge for up to 5 days.

Roasted tomatoes, onions, garlic
Lily wanted chili for dinner today and I wanted to make it extra special b/c Lily and chloe took care of mr intense Luke while I laid in bed for 4 straight days feeling supremely horrible sick.
I Roasted at 455 degrees for one hour-
In a rectangular pan put aluminum foil in it
2 cans of drained chopped tomatoes *(drain the liquid into the big cooking pot where all the beans will go)
6 cloves of garlic- not minced
1 onion chopped
olive oil
pepper, smoked salt
basil and oregano
I will add this roasted tomato concoction to beans.

chicken & cabbage
Healthy and Super quick dinner-
Ingredients-
1- Shredded Salad- this mixture stayed in a ziplock bag for a week and didnt deteriorate at all.
-Shredded Cabbage, Shredded carrots, Shredded broccoli, cauliflower and snap peas
2- Chopped onion
3- Chicken- smoked paprika, garlic. salt and pepper
4- Quinoa
5-Aioli
To cook-
Saute onions, cabbage, carrots, broccoli with olive oil, garlic. salt and pepper
Cook chicken, dice. retuen cabbage mixture to pan, add quinoa and chicken.
Can Add Spicy Aoili or any type of dressing (italian, ranch)
Add Avocado

- 5 medium cloves garlic, pressed or minced (or garlic powder)
- 2 teaspoons lemon juice, to taste (or lime)
- Sprinkle of salt and pepper
- ½ cup good quality mayonnaise

Serves 8
- 6 tablespoons butter, softened (or peanut or nut butter)
- 1/2 cup brown sugar, packed
- 1 teaspoon vanilla extract
- 2 egg yolks
- (1c) or 3 packets Kodiak Maple & Brown Sugar PEAK Oatmeal
- 1/3 cup white chocolate chips (optional)
- Place the butter and brown sugar in a bowl and beat for 2 minutes, until light and fluffy. Beat in the vanilla and egg yolks.
- Add the oatmeal and white chocolate chips (if you so choose) to the mixture and mix in until combined. Let sit for 5 minutes.
- Place scoops of cookie dough on the parchment-lined baking sheet, two inches apart. There should be enough batter to make eight cookies. Press each scoop down slightly with the palm of your hand.
- Bake for 10-12 minutes in the preheated oven, or until lightly golden brown on top.
- Remove and let cool slightly. Move to a wire rack and cool completely. Store in an airtight container.
- (1c) or 3 packets Kodiak Maple & Brown Sugar Oatmeal Packets
- 1 banana, mashed (about one medium banana)
- 1 large egg
- 1/4 cup almond or cashew butter
- 3 tablespoons whole milk
- 2 tablespoons pumpkin seeds (shells removed)
- 1 tablespoon chia seeds
- 2 tablespoons cashews, chopped
- 1 tablespoon flax seeds
- 2 tablespoons hemp hearts
- Place the oatmeal, banana, nut butter, egg, and milk in a small bowl, and mix with a spoon until well combined. Banana should be fully mashed.
- Add the pumpkin seeds, chia seeds, cashews, flax seeds, and hemp hearts and stir until well combined.
- Let the mixture sit for 10 minutes so that the liquid can absorb.
- Place scoops of cookie dough on the parchment-lined baking sheet, 2 inches apart. There should be enough batter to make eight cookies. Press the cookies down slightly to make a nice, thick round shape.
- Bake for 10-12 minutes in the preheated oven, or until lightly golden brown on top.
- Remove and let cool. Store in an airtight container.

Maple Romaine Salad
Main Ingredients---------------------------------------------------------------------
Romaine lettuce- chopped and washed
Blueberries
Granny smith apple- chopped (can omit this and use strawberries, blackberries, raspeberries)
Feta Cheese- crumbled (can use bleu or gorgonzola cheese isntead)
cinnamon almonds
Maple Dressing---------------------------------------------------------------
1/4t dry mustard
2 T vinegar
1/4 c maple syrup
1 T freshly squeezed lemon Juice (i also love some lemon zest in there)
1/2t salt
pepper
1/2 c oil
optional- you can add a squeeze or two of fake maple syrup or mapeline flavoring, for more flavor.
Cinnamon Almonds--------------------------------------------------------------
1 c sugar
2 t cinnamon
1 and 1/2t vanilla
1/4c water
Combine sugar and cinnamon. Mix Almonds in skillet with cinnamon mixture. Add vanilla and water to pan. Cook on medium high heat, stirring constantly until nuts are coated and no liquid is left. usually about 7-10 minutes.
