From one of my favorite cook books- Better Homes and Gardens from 2002 (12th edition)
3 1/2lb chicken
2 T butter/oil
1 chopped onion (sauteed on stove top)
2 cloves of garlic
1 t basil
1/2t salt
1/2t ground sage
1/2t thyme (didn't have)
1/4t lemon pepper or pepper (didnt have)
1/2 t paprika
I oiled the inside of the crockpot. Added chicken and poured the seasonings on top of the chicken. Added 1/2c water, poured inside of the chicken.
Katie helped by washing & cutting the cauliflower, then put all the herb seasonings on top of the chicken in the crockpot and helped clean up the counters and floor.
Put on high for 3 hours
or you can roast in oven 375 for 1 & 1/4 and 1 &1/2 hours. Let sit 10 min b4 cutting.
Served with Roasted Cauliflower and a Green Salad
I served with Potato Wedges
9/22/19 Made this again. Turned out amazing. I put the seasonings on both sides of chicken, put chicken in a oven bag. Oven at 300 degrees and left for church at 10am and roasted it in oven till 12:30. It was perfect.

To make a cake mix into a cookie
I have a Western Family fudge cake mix, recipe for making cookies from a cake box
1 chocolate cake mix
1/2c butter, softened
2 large eggs
2 T oil
1 t vanilla
1 1/2c chocolate chips
Preheat oven to 350.
In large bowl combine cake mix, butter, eggs, oil, and vanilla, mix. Fold in choco chips.
Drop spoonfulls of batter on to ungreased cookie sheet.
Bake 8-10min.

Waffles and Blueberry sauce
- 4 large eggs
- 3 cups milk (I have used everything from skim milk to thick buttermilk…so whatever you have on hand should work)
- 1/2 cup oil (I used melted butter or coconut oil)
- 1 teaspoon ground cinnamon
- 1/2 teaspoon baking soda
- 1 Tablespoon baking powder
- 2 cups whole-wheat flour
- 1/4 c wheat bran, wheat germ, flax
- 1/2 teaspoon salt
- Serve with Blueberry sauce
- Preheat your waffle iron.
- In a large mixing bowl whisk together the eggs, milk, oil, honey, cinnamon, and baking soda until well combined.
- Add in the flour, baking powder and soda, and salt and whisk together just until the large lumps disappear.
- When the waffle iron is hot, dab it with a little butter and then ladle some batter onto the center of the iron. Follow the instructions that came with your waffle maker to know how long it should be cooked (mine takes about 3 - 4 minutes each).
- Keep waffles warm until you finish cooking all of them. Top with pure maple syrup and fruit. Enjoy!
these are very filling waffles.
Blueberry sauce (raspberry or blackberries)
- 2 cups frozen blueberries
- 1/2 cup honey
- 2 tablespoons fresh lemon juice
- 2 tablespoons cornstarch, mixed with 2 tablespoons cold water
- 1/2 teaspoon vanilla extract
- Zest of 1 lemon (about 1 tablespoon), optional
- In a medium saucepan over medium heat, combine the blueberries, honey and lemon juice. Stir frequently, and bring to a low boil.
- In a small bowl, whisk the cornstarch with 2 tablespoons of cold water.
- Slowly stir the cornstarch into the blueberries, taking care not to crush the blueberries. Simmer until the homemade blueberry sauce is thick enough to coat the back of a metal spoon, about 5 minutes.
- Remove from heat and gently stir in vanilla and lemon zest.
4/2/21 made this one several times, its so delicious.

Chocolate Peanut Butter patties

- 2 cups blanched almond flour (not almond meal)
- ¼ teaspoon celtic sea salt
- ½ teaspoon baking soda
- 2 tablespoons palm shortening
- 2 tablespoons honey
- 1 tablespoon vanilla extract
- ½ cup sunbutter
- 1 cup chocolate chips
Instructions
- In a food processor, combine almond flour, salt and baking soda
- Pulse in shortening, honey and vanilla until combined
- Roll out dough between 2 pieces of parchment paper to 1/4-inch thick
- Chill dough in freezer for 20 minutes
- Using a 2-inch cookie cutter, cut out dough
- Press your thumb in center of each circle to make indentation
- Bake at 350° for 4-6 minutes
- Cool cookies for 1 hour
- Place one teaspoon of sunbutter on top of each cookie
- Freeze for 10 minutes
- Melt chocolate over very low heat
- Dip cookies in chocolate
- Place on a parchment lined baking sheet
- Freeze for 30 minutes
- Serve

Lasagna
Makes 2 (9x13) baking dishes of lasagna. Bake one and freeze one
Recipe from Western Family brand Lasagna noodles package.
16 oz lasagna noodles

Red Sauce---------------------------------------------------------------------------------------------------------------1 lb ground sausage
1 lb ground beef
2 chopped onions
2 T minced garlic
1 T dried basil
2 t dried oregano
3 Tablespoons Dried Parsley
3 jars of Hunts spaghetti sauce (24 oz each) (I did add some refried beans b/c I wanted some more fiber and 1 can of stewed tomatoes)
2 lbs shredded mozzarella cheese or just slice it (I used only one pound and I sliced it b/c it was previously frozen cheese (which falls apart) and cutting it is easier)
On stove top- Saute onions till brown, put in crockpot. On stove cook sausage and beef, put in crockpot. Add to the crockpot: Spaghetti sauce, garlic, basil, and oregano. Put the crockpot on high for 4 hours, to let all the flavors combine.
On stove top boil noodles.
In a bowl- Mix eggs, parsley, parmesan, and cottage cheese.
Preheat oven at 375
Spray one 9x13 pan with oil, the other pan line with aluminum foil (to make the lasagna easier to pull out of the pan when frozen) and spray with oil too. Layer the bottom of pans with sauce., layer 1/3 of the lasagna noodles, spread 1/3 of ricotta mixture, top with 1/3 of mozzarella. Repeat two additional layers. Bake with foil for 20 min, then remove foil for 20 min till cheese is melted.
Prepare this 2-3 days before you need it and let it sit in the fridge.
I made the SAUCE in the morning and put in the crockpot. Then I mixed the cottage, eggs, parsley and parmesan in a bowl and set in the fridge. Shredded or slice the cheese.
The girls will assemble the ingredients in a 9x13pan.

after putting 2 lasagna layers down I began to run out of the ricotta cheese mixture. So there was about 1/2-1 c left. I melted a block of cream cheese and added one more egg with salt and pepper, parsley and parmesan and finished one more layer of noodle, red sauce, ricotta/cream cheese, and topped with mozzarella. Turned out great.

Made this and it was so ridiculously yummy. I used one jar of hunts, one jar of canned whole tomatoes and lastly one jar of prego, let it book for 1-2 hours.
This time I didnt boil the noodles, it just put them in hard. I added 1/2c water toward the lasagna edges and bubbled up aluminum foil on top (so the cheese doesnt stick to the foil). I also put a good amount of aluminum foil under the pan b/c the liquid can boil out into the oven which can make more mess to clean up. I did cook for 1 and 1/2 hour. So delicious

Caesar Salad & Dressing
Food Network
6 cloves garlic, mashed and minced
1 tablespoon mustard
1 tablespoon lemon juice
Kosher salt and freshly ground black pepper
2 tablespoons mayonnaise, half plain yogurt
1/2 cup olive oil
1/4-1/2 cup freshly grated Parmigiano
Minced anchovy fillets, optional
Romaine lettuce
Croutons
shredded parmesean
Combine the garlic, mustard, lemon juice and two pinches of salt in a blender and mix thoroughly. Add the mayonnaise and blend together to form a thick base. In a slow stream add the olive oil through the hole in lid. Scrape the dressing with spatula into a bowl and season to taste with salt, pepper. If desired, add some anchovy to the dressing to create a deeper, saltier taste.
Chop up romaine lettuce. Then right before you serve toss together croutons, parmesan, lettuce, and add dressing. The lettuce will start to wilt quickly. So serve immediately.

Lauren's Spinach and Bacon Quiche

1 onion sauteed
6 large eggs, beaten
1 1/2 cups heavy cream (or plain yogurt)
Salt and pepper
2 cups chopped fresh baby spinach, packed
1 pound bacon, cooked and crumbled
1 1/2 cups shredded Swiss cheese (all I had was cheddar)
1 (9-inch) refrigerated pie crust, fitted to a 9-inch glass pie plate
Directions
Preheat the oven to 375 degrees F.
Combine the eggs, cream, salt, and pepper in a food processor or blender. Layer the spinach, bacon, and cheese in the bottom of the pie crust, then pour the egg mixture on top. Bake for 35 to 45 minutes until the egg mixture is set. Cut into 8 wedges.
Lauren and I made this and it was delicious
We doubled it to make two pie pans, but probably only needed 1lb of bacon. We had it for a sunday dinner.

Next time when I get a phone enable voice over or siri

I cracked my phone screen. Half the numbers on the passcode are disabled . I could replace the screen for $200 or get a new phone. I'm a customer at cricket.
My screen is cracked so it wont respond to touch, I need to unlock it to backup my pictures and notes i've taken and recorded-
1.Use External keyboard- connect the keyboard with blue tooth decipher tools
2. If you are an iTunes user- you can unlock the screen from the computer, looks like all data will be erased, you need to backup data before you unlock it with iTunes
3. AnyLock App- need to backup data before unlock phone, all data will be erased after unlocking
4. Find My iPhone App- this program will be wiping off all the data on your phone, your iPhone must get Find My iPhone enabled on it. If you did not turn this option on before the screen got broken, you cannot use this method. imobie
5. RustyDIY- youtube video explaining he used a wireless mouse and plugged in to his phone (USB C to USB). Need wireless mouse, a Wireless usb adapter, a separate adapter to connect the usb mouse to the phone. and could back up all his information

My problem was that I wasn't able to answer or call any phone numbers wether I was calling through my cellular line or google voice number. As I would call out I would get message saying "Conditional call forwarding active."
1. (This is the step that made it work) I ended up calling my cell phone company, consumer cellular and, she did have me go into the keypad area as if I was going to make a phone call. Then press the bottom left menu button, which brought up "Call settings" then she had me select "call forwarding" she thought the section "always forward" was incorrect, but it was already disabled. Then she told me to just turn the phone off and turn it back on and THAT SOLVED THE PROBLEM!!!!! Ahhhhh I'm so grateful.
2. So I called my cell phone company and they said enter "#21#" into the keypad and call, it didn't do anything.
Here is some research I did-
Conditional Call forwarding active (CCF) AT&T and Product Forums
this is what worked and enabled me to call out
2. . call **004*1xxxxxxxxxx# (the X's are your own phone number)
When I put in my cellular line it said the same thing "call forwarding connection problem or invalid mmi unconditionally for all basic services"
Then when I put in my google voice number it said, "call forwarding conditionally registration was successful"
3. I tried this and it didn't work, but it did show me where the "call settings" were located

Peanut Butter Oatmeal Cookies
- Amys Healthy
- 1 cup (100g) oats
- ¾ cup (90g) whole wheat
- 1 ½ tsp baking powder
- ¼ tsp salt
- 1 large egg
- 1 tsp vanilla extract
- ¼ cup (64g) peanut butter
- ½ cup (120mL) honey
- 1/4-1/2c soaked raisins
Whisk together the oats, flour, baking powder, and salt in a medium bowl. In a separate small cereal bowl, I microwaved for 20 sec honey and peanut butter mix in the until smooth. Stir in the egg and vanilla. Add in the flour mixture, stirring just until incorporated.
Drop the cookie dough into 12-15 rounded scoops onto the prepared sheet, and flatten to the desired thickness and width. Bake at 325°F for 11-14 minutes. Cool on the pan for 10 minutes before turning out onto a wire rack.
Makes about 12 cookies
Possible Next time add cinnamon.
