Spinach pancakes

3/4 cup oatmeal,
1/4 cup tofu,
cottage cheese, or yogurt (I think yogurt tastes the best),
4 egg whites,
1 tsp vanilla, 1/4 tsp cinnamon and nutmeg, and
1/2-1 cup spinach.

Blend all together and cook

(freeze extra for quick breakfast)
